We have a huge addiction for zucchinis and eat them at least 3 times a week, so why not make a zucchini cake?! i love the combination with lemon curd, poppyseeds and zucchini but even if you eat the baked dough only by itself it already tastes delicious. we might even make many more different recipes with this dough. I can totally imagine it during summertime with berries or cherries or actually also with figs. so many possibilities. so give it a try guys, i’m pretty sure you will like this cake as well. and have a look at the freunden von freunden homepage if you want to see some more pics. happy sunday!

ingredients for a 18cm-ø-cakecake base:
4 eggs
100g sugar
80g rice flour
50g cornstarch
1 tsp (tartar) baking powder
100g poppyseed
150g zucchini (grated)
1 dash of salt
lemon curd:
120ml lemon juice (4-5 lemons)
zests of 3 organic lemons
60g butter
200g sugar
3 eggs
outer cream:
300ml heavy cream
100g mascarpone
4 tbsp sugar
1/2 vanilla pod
100ml milk
1 pck agar-agar (you can also use another gelling agent)
quick candied lemon slices:
2 lemons
5 tbsp sugar

cake base:
preheat oven to 175degrees fan function (or 180degrees top/bottom heat). line the bottom of the springform pan with parchment paper and grease and flour the sides.

grate the zucchini roughly and set aside.

separate eggs. first whisk the egg whites with half of the sugar until stiff (add the sugar, when the egg whites are half stiff). then whisk the remaining sugar with the eggyolks for 1-2min, gently fold the beaten egg whites in the eggyolks. mix the flour, baking powder, salt and cornstarch in a separate bowl and sieve in 3 portions to the egg-mix – stir in between and use a large spoon (or similar) –  not a mixer! fold in the poppyseeds and then the grated zucchini.

fill the dough into the springform pan and bake for 35min at 175 degrees fan function. then switch off the oven, leave the cake base inside for a while, so it can cool down slowly. take it out and leave it rest for 10min before you take off the springform pan and the parchment paper. let it cool down completely on a cooling rack.

divide the base by using a long (bread)knife and make a few marks at the sides, where you want to cut it. then cut slowly along your marks.

lemon curd:
put the lemon juice, lemon zests, butter and sugar into a metal bowl and bring water to boil in a pot – it should simmer lightly. place the metal bowl on the pot just above the simmering water. stir the ingredients until the butter has melted. whisk the eggs in a separate bowl and fill slowly into the metal bowl while stirring with a whisk. let cook for 10-15min and stir constantly until you get a nice creamy consitence. let cool down and stir once a while, then fill into canning jars or start to fill your cake.
spread half lemon curd on the cake bottom, put the second layer of cake and spread the rest of the lemon curd on it, place the last base-piece on it and leave the cake in the fridge for 1hour.

outer cream:
beat the heavy cream semi-stiff, then add the sugar and beat until stiff. srape the vanilla pod of its seeds and stir in the mascarpone. mix the milk with the agar-agar in a small saucepan, bring to boil for one minute, let cool for 2-3minutes in a medium-sized bowl, then stir in the vanilla-mascarpone. fold in gently the whipped cream – do it in 4-5 portions.

spread a first layer of cream at the sides and top of the cake (the best is, if you have an angled spatula) and leave the cake in the fridge for 30min, then do the finishing layer.

candied lemon slices:
cut the lemons into thin slices – between 2-5mm thick. boil them in 750ml water for 5min, then dry them with kitchen paper. leave 250ml of the lemon water in the saucepan, add 5 tbsp sugar and bring to boil. when the syrup becomes a nices smooth consistence, dip every slice in it for a short while and dry a bit again with a kitchen paper, then place the slices on a baking sheet covered with baking parchment. bake the lemon slices at 190degrees for 5-10min until they turn brown. leave them cool and decorate finally your cake with them. add some lemon zests, if you like.

Heute zeigen wir euch das zweite rezept, dass wir für freunde von freunden’ s neue serie fvf cooks entwickelt haben. wir lieben gemüse in kuchen ja sehr, wie z.B. in unserem rote beete kuchen oder bei unserem karotten kuchen. diesmal wollten wir etwas neues ausprobieren und haben sofort an zucchini gedacht. wir sind totale zucchini-suchtis und essen bestimmt mindestens 3 mal die woche zucchini, warum also nicht einen zucchini-kuchen backen?! ich liebe die kombination von lemon curd, mohn und zucchini, wobei der gebackene teig allein schon ohne alles köstlich schmeckt! probiert es aus ihr lieben, ich könnte schwören es schmeckt euch genauso gut. und wenn ihr lust habt klickt euch noch rüber zu freunden von freunden, da gibt’s noch ein paar mehr bilder zu sehen. habt noch einen schönen sonntag!

zucchini-mohn-torte mit lemon curd & kandierten zitronenscheiben
zutaten für eine 18cm-ø-torte

kuchenteig:
4 eier
100g zucker
80g reismehl
50g speisestärke
1 tl weinsteinbackpulver
100g mohn
150g zucchini (geraspelt)
1 prise salz
lemon curd:
120ml zitronensaft (4-5 zitronen)
zitronenzesten von 3 biozitronen
60g butter
200g zucker
3 eier
aussenschicht:
300ml schlagsahne
100g mascarpone
4 el zucker
1/2 vanilleschote
100ml milch
1 pck agar-agar
kandierte zitronenscheiben (schnelle variante):
2 zitronen
5 el zucker

kuchenteig:
backofen auf 175grad umluft (der 180grad ober-/unterhitze) vorheizen.den boden einer springform mit backpapier auslegen und die seiten buttern und mehlen. die zucchini grob raspeln und kurz beiseite stellen. eier trennen. zuerst das eiweiss halbsteif schlagen und langsam die hälfte des zucker einrieseln lassen und fertig steif schlagen. das eigelb mit dem restlichen zucker für 1-2min aufschlagen und anschliessend vorsichtig unter den eischnee heben. reismehl, weinsteinbackpulver, salz und speisestärke in einer schüssel vermischen und in 3 teilen zum ei-gemisch sieben und unterrühren (aber nur mit einem grossen löffel, nicht mit dem mixer. nun den mohn unterheben und dann die geraspelte zucchini. teig in die springform füllen und für 35min bei 175grad umluft backen. ofen ausschalten, den kuchenteig noch für ein paar minuten im ofen lassen, dann kühlt er langsamer ab und der fluffige teig kann nicht so leicht in sich zusammenfallen. dann den kuchenteig auf einem kuchengitter für 10min abkühlen lassen bevor man die springform und das backpapier entfernt. auf dem kuchengitter komplett abkühlen lassen.kuchenteig horizontal in in 3 böden zerteilen – am besten mit einem langen brotmesser – und davor einfach ein paar seitliche markierungen mit dem messer machen, als orientierung, wo man entlang schneiden kann.

lemon curd:
zitronensaft, zitronenzesten, butter und zucker in eine metallschale geben und in einem topf wasser zum kochen bringen – wasser sollte nur leicht köcheln. die metallschüssel in den topf stellen knapp über dem köchelnden wasser. die zutaten rühren bis die butter geschmolzen ist.die eier in einer separaten schüssel verrühren und langsam in die metallschüssel giessen – dabei ständig mit dem rührbesen rühren. die masse für 10-15min “kochen” und dabei ständig rühren bis sie eine schöne cremige konsistenz bekommt. abkühlen lassen und dabei ab und zu rühren, dann in weckgläser abfüllen bzw. den kuchen damit füllen.die hälfte des lemon-curds auf dem ersten boden verteilen, dann einen zweiten teigboden darauf setzen und den rest lemon-curd darauf verstreichen. den dritten teigboden darauf setzen und torte für 1stunde in den kühlschrank stellen damit die creme fester wird.

aussenschicht:
schlagsahne halbsteif schlagen, dann zucker einrieseln lassen und steif schlagen. vanilleschote auskratzen und unter die mascarpone rühren. die milch mit dem agar-agar in einem kleinen topf verrühren und zum kochen bringen – 1min köcheln lassen – währenddessen ständig rühren. masse 2-3 in einer mittelgrossen schüssel abkühlen lassen, dann die vanille-mascarpone einrühren. anschliessend die schlagsahne in 4-5 portionen vorsichtig unterheben. eine erste schicht creme an den seiten und auf der torte verstreichen (am besten mit einer winkelpalette). die torte für 30min in den kühlschrank stellen, dann nochmals eine dickere schicht vertreichen und zum kühlen in den kühlschrank stellen.

kandierte zitronenscheiben:
etwa 2-5mm dicke zitronenscheiben schneiden. die scheiben für ca. 5min in 750ml wasser kochen, dann mit küchenpapier etwas trocken tupfen. 250ml zitronenwasser im topf lassen, den zucker unterrühren  und aufkochen. wenn der sirup etwas andickt, die zitronenscheiben kurz darin wenden und mit küchenpapier etwas abtupfen und auf eine backblech mit backpapier legen. die scheiben bei 190grad (ober-/unterhitze) 5-10min backen bis sie anfangen braun zu werden. abkühlen lassen und auf der torte dekorieren. für die deko auch ein paar frische zitronenzesten hinzufügen.
