As the marzipan paste is already very sweet, both of us prefer the ones with coconut sugar. But both versions are super delicious, so go for what ever you like more.
the trays, that you can see on the pictures are the new trays from design letters. the soft round corners are inspired by oldschool televisions, that’s why they are called ‘television tray’.

we are so in love with them!! they come in three different colors: mint, light pink, and blue. even if i normally don´t like pink-colored so much, this is my personal favorite one. maybe because of summer time? anyways, which one is your favorite? if you are in love as well, you can get them here and here.

ingredients:
ingredients (for ca. 9-10 pieces):
200g marzipan paste (also delicious with: marzipan with honey)
100g ground almonds
100g coconut sugar (or powdered sugar)
1 dash salt
2 egg whites (size m/l)
50-70g sliced almonds
200g white chocolate couverture (you can leave it out, if you don´t like it too sweet)

optional jam – e.g. maracuya, apricot (as a thin coating)preheat oven to 180degrees celsius top/bottom heat. line a baking sheet with baking parchment. cut the marzipan paste into small cubes and knead together with the coconut sugar, ground almonds and salt for 2-3 minutes. then knead in portion by portion one egg white (in 3 portions). flour a working top and roll the pastry to a roll. cut the roll into 9-10 pieces (if you want to work precise – you can weight each piece – ours have been 45g each). now roll each piece on the working top to 12-15cm long rolls, place them with a bit distance on the baking paper, shape them to “horns”and flatten a bit with our fingers.

whisk the remaining egg white and cover the horns with it. then spread the sliced almonds on top and press them on the pastry. bake the almond horns for 15min on middle height. (optional you can cover them afterwards with water diluted jam, when they are just out off the oven). leave cool down almond horns (still on the baking parchment) completely on a cooling rack, then it´s easier to take them off the baking parchment. heat the white chocolate couverture and dip the almond horn ends in the couverture and let dry on the cooling rack. bon appétit!

Seit wir neulich ein bild auf instagram und facebook von einem glutenfreien mandelhörnchen gepostet haben, wollten einige von euch unbedingt das rezept. hier ist es endlich, wir sind uns sicher, dass es euch fantastisch schmecken wird! ein paar von den hörnchen haben wir mit kokosblütenzucker gebacken, ein paar mit puderzucker. da die marzipan-rohmasse schon sehr süß ist (gibt´s im biomarkt übrigens auch mit honig anstelle zucker) schmeckt uns die variante mit kokosblütenzucker fast ein kleines bisschen besser. aber beide versionen sind superlecker, also entscheidet einfach selbst, was euch lieber ist.

die tabletts, die ihr auf den fotos seht, sind die neuen tabletts von design letters. die weichen runden ecken sind von alten fernsehern inspiriert, deshalb heißen die tabletts auch ‘television trays’.

wir sind jedenfalls total begeistert!! auch wenn mir normalerweise rosa nicht so zusagt, gefällt mir in diesem fall das rosane am besten. vielleicht weil es gerade so schön sommerlich ist?! wie auch immer, welches mögt ihr am liebsten? falls ihr auch so begeistert seid, könnt ihr die schönen teile hier oder hierbekommen.

Iced Coffee

zutaten (für ca. 9-10stück):
200g marzipanrohmasse (auch lecker: marzipan mit honig)
100g gemahlene mandeln
100g kokosblütenzucker (oder puderzucker)
1 prise salz
2 eiweiss (größe m/l)
50-70g mandelblättchen

200g weisse kuvertüre (wer´s nicht so süß mag, lässt sie einfach weg)optional marmelade – z.b. maracuja, aprikose (als dünner überzug)backofen auf 180grad ober-/unterhitze erwärmen. ein backblech mit backpapier auskleiden. marzipan in kleine würfel schneiden und mit dem kokosblütenzucker, gemahlenen mandeln und salz 2-3min per hand verkneten. ein eiweiss nach und nach (in 3 portionen) unterkneten. eine arbeitsfläche mit mehl bestäuben und die masse zu einer rolle formen. rolle in 9-10 stücke schneiden (wer´s genauer mag, kann auch mit einer waage arbeiten – unsere teigstücke waren 45g schwer). teigstücke auf der arbeitsfläche zu 12-15cm langen rollen formen, mit etwas abstand auf´s backpapier legen und zu hörnchen krümmen – teig etwas flach drücken. das zweite eiweiss verquirlen und hörnchen damit bestreichen. dann noch mandelblättchen darüber verteilen und etwas andrücken. mandelhörchen für 15min im backofen auf mittlerer schiene fertigbacken. (optional marmelade mit etwas wasser verdünnen und hörnchen, wenn sie noch warm sind, damit bestreichen.) mandelhörchen auf einem kuchengitter (auf dem backpapier) komplett abkühlen lassen, dann lassen sie sich einfacher vom backpapier lösen. kuvertüre erwärmen und enden darin eintunken und auf einem kuchengitter trocknen lassen. bon appétit!
