Time was flying in between, like always! This vacation we enjoyed in Sweden was the most magical one. I already loved Sweden from former visits, but this time I could almost feel my heart skipped a beat from so much beauty and wonderful vibes. Lupines where in full bloom on every corner, the light was stunning, no matter, if the sun was shining or if it rained and the surrounding nature was just breathtaking. With a view over the lake in front of us and the magical woods behind us we definitely had the best location! On our second day Frida (the owner and talented photographer, which now feels like a friend to us) showed us and our dear friend Marieke around in the woods and I couldn’t even capture the mood and beauty of it! It was so powerful and full of life in it’s calming aura, we were all impressed and energized. It felt like in a fairytale with all the little waterfalls that you could hear and see. It was like a walk that you experience with all your senses.

And after long walks of course you get hungry. So next to all these pictures from the woods we want to share a favorite recipe of ours with you and show you pictures from Frida’s gorgeous dining room, where we enjoyed a lot of our meals. We already told you about her stunning house in this post and shared some breakfast pictures and pictures from the kitchen of the house with you. But the dining room deserves it own post as it’s so special! As Frida’s house was a former schoolhouse the ceilings are quite high in some of the rooms and so are the windows in the dining room, which makes such a special atmosphere and light. Nora cooked a very delicious vegan coconut-milk-peas-risotto for us, I’m sure you guys will love it too! Two months ago you could still get the last asparagus, which is not in season now anymore of course. But you can replace it with any other vegetables, that are sesonal right now or just enjoy this vegan coconut-milk-peas-risotto with the roasted fennel – that’s simply delicious as well and there is not necessarily extra vegetables needed. We hope you enjoy it!

Vegan Coconut-Milk-Peas-Risotto with green Asparagus and roasted Fennel

Ingredients for 4 Persons

  • 250-300g risotto rice
  • 200ml coconut milk
  • 1 bunch green aspargus
  • 1-2 fennel
  • 200-400g frozen peas
  • about 750ml vegetable broth
  • 1 onion
  • 1 piece ginger
  • 2-3 garlic cloves
  • 1 pinch nutmeg
  • 1 pinch bell pepper powder
  • 1 pinch chilli powder
  • fresh thyme/oregano
  • sesame seeds
  • 1 lemon
  • 1-2 tsp liquid honey
  • rapeseed oil and olive oil (or coconut oil)
  • seasalt

Peel and chop onion, cut garlic in thin slices and grate ginger finely. Sauté onions for 1 minute in a bit rapeseed oil, then add the risotto rice, followed by the garlic and ginger. Meanwhile prepare the vegetable broth and stir the coconut milk into it. When the risotto rice is translucent, add a bit of the coconut-milk-vegetable-broth. Constantly add broth from time to time and stir. After half of the cooking time add the frozen peas. Preheat oven to 200°C (400°F), rinse the fennel and cut into pieces. Then arrange the fennel on a baking sheet covered with baking paper and sprinkle a pinch of bell pepper powder, chilli powder and olive oil on the fennel pieces. Bake fennel for about 20 minutes and drizzle some liquid honey on top in the very end. Wash green asparagus and cut in long pieces. Then fry green asparagus in rapeseed oil for 10-12 minutes from all sides until soft, but still firm to bite. In the end season with chilli powder and nutmeg. Afterwards when the vegan coconut-milk-peas-risotto is done, season it, if necessary. Serve the vegan coconut-milk-peas-risotto with honey-fennel, green asparagus, a bit sesame seeds and thyme/oregano. Finally sprinkle some seasalt and lemon juice on top of the green asparagus and honey-fennel.

Schon fast zwei Monate ist es jetzt her, dass wir in Schweden waren und ich kann kaum glauben, wie viele Bilder wir noch von der Reise haben, die wir mit Euch teilen möchten. Die Zeit in Schweden haben wir besonders genossen und obwohl wir nun schön öfter in Schweden waren, haben wir uns diesmal noch ein Stückchen mehr ins Land, die wunderbare Natur und die besondere Stimmung verliebt. Lupinen waren an jeder Ecke in voller Blüte, das Licht war so fein und klar, egal ob die Sonne schien oder es regnete und die Natur in der Umgebung war einfach atemberaubend schön! Mit einem Blick über den See, der vor uns lag und den magischen Wäldern hinter dem Haus hatten wir einfach eine fantastische Lage. An unserem zweiten Tag hat Frida (die Inhaberin des Hauses, talentierte Fotografin und nun Freundin von uns) uns und unserer guten Freundin Marieke mit dem Wald vertraut gemacht und uns die schönsten Plätze gezeigt. Man konnte die Schönheit der Umgebung gar nicht einfangen, so wundervoll und besonders war sie! Überall gab es kleine Wasserfälle, die man hören und sehen konnte. Der Wald war voller Kraft und Leben und strahlte gleichzeitig eine so wohltuende Ruhe aus – wir waren alle beeindruckt und energetisiert von dieser Aura! Die ganzen Spaziergänge dort, waren eine Unternehmungen mit allen Sinnen und wir haben es so genossen.

Nach langen Spaziergängen bekommt man natürlich Appetit und Hunger. Neben all den Bildern vom Wald und der Natur, möchten wir heute natürlich auch ein Rezept mit Euch teilen und zwar unser wunderbares Kokosmilch-Erbsen-Risotto-Rezept, das wir in Frida’s wundervollem Esszimmer, in dem wir viele unserer Mahlzeiten hatten, verspeist haben. Wir haben Euch ja schon in diesem Post von Frida’s Haus vorgeschwärmt und Euch Fotos von der charmanten Küche gezeigt. Da das Haus ein ehemaliges Schulhaus ist, sind die Decken und Fenster in einigen Zimmern besonders hoch, was die Atmosphäre und das Licht einfach einzigartig macht. Nora hat uns an dem Abend ein köstliches veganes Risotto gekocht und ich bin mir sicher Ihr werdet es lieben! Vor zwei Monaten haben wir noch den letzten grünen Spargel bekommen, die Spargelzeit ist jetzt natürlich vorbei. Ihr könnt den Spargel aber mit anderem saisonalem Gemüse ersetzen oder Ihr lasst Ihn ganz weg – das Erbsen-Risotto mit geröstetem Fenchel schmeckt auch ohne weitere Zugabe fantastisch! Veganes Kokosmilch-Erbsen-Risotto mit grünem Spargel und geröstetem Fenchel

Zutaten für 4 Personen

  • 250-300g Risottoreis
  • 200ml Kokosmilch
  • 1 Bund grüner Spargel
  • 1-2 Fenchelknollen (je nach Größe)
  • 200-400g TK-Erbsen
  • etwa 750ml Gemüsebrühe
  • 1 Zwiebel
  • 1 Stück Ingwer
  • 2-3 Knoblauchzehen
  • 1 Prise Muskat
  • 1 Prise Chillipulver
  • 1 Prise Paprikapulver edelsüß
  • frische Kräuter (z.B. Thymian, Oregano)
  • Sesam
  • Zitrone
  • etwas flüssiger Honig
  • Rapsöl und Olivenöl (oder auch Kokosöl)
  • Meersalz

Zwiebel schälen und fein hacken, Knoblauch in feine Scheiben schneiden und Ingwer fein raspeln. Zwiebel 1 Minute in Rapsöl anschwitzen und dann den Risottoreis hinzufügen – Knoblauch und Ingwer ebenfalls hinzufügen. Währenddessen Brühe vorbereiten und die Kokosmilch unterrühren. Wenn der Reis glasig ist, mit etwas Kokosmilch-Gemüsebrühe ablöschen. Immer wieder etwas Brühe nachgiessen und rühren. Nach etwa der Hälfte der Garzeit die TK-Erbsen dazugeben. Währenddessen Ofen auf 200°C vorheizen, Fenchel waschen und in Stücke schneiden. Auf einem Backblech mit Backpapier legen, mit etwas Paprikapulver und Chilipulver bestreuen und Rapsöl darüber tröpfeln. Fenchel für etwa 20 Minuten rösten. Ganz zum Schluss etwas flüssigen Honig über den Fenchel geben. Grünen Spargel waschen und in lange Stücke schneiden. Dann in etwas Rapsöl 10-12 Minuten von allen Seiten braten bis er weich, aber noch bissfest ist. Mit Chillipulver und etwas Muskat würzen. Zum Schluss Kokosmilch-Erbsen-Risotto abschmecken, dann mit geröstetem Fenchel, grünem Spargel, etwas Sesam und Thymian/Oregano toppen. Spargel und Fenchel mit Meersalz bestreuen und mit Zitronensaft beträufeln.
