In our last post we shared a very delicious homemade plum jam with you, which we also used for this recipe! Polenta porridge is a nice variety and the texture is a little bit like semolina porridge. We absolutely loved the combination with the plum jam and if you don’t want to make that yourself of course you can also buy one. We also added walnuts, coconut yoghurt and figs – é voila here you go for the perfect autumn treat! The polenta porridge is very easy and quick to make and another version you have to try is with berries and peanut butter. We always buy frozen berries during autumn and winter and then quickly heat them up. Super delicious and such a nice color palette during grey and rainy autumn mornings. For the photoshooting we went to our favorite spot, close to our countryside studio, were a lot of lovel grasses are growing. It was such a dreamy atmosphere and even if we both love summer, there is nothing more fun than capturing these lovely autumn scenes. As we already told you we have a lot of apples, pears and quinces this year, so you can also see a quince juice in the pictures. Will definitely share the recipe soon as well, but now let’s have some breakfast first. Bon appétit!

Vegan Polenta Porridge with Plum Jam, Figs and Walnuts

Ingredients for 2 Persons

  • 120g polenta
  • 500ml plant milk of your choice (we took a rice-coconut-milk)
  • 1 pinch ground vanilla
  • 4 tbsp plum jam (find our recipe for a very easy plum jam here)
  • 4 tbsp coconut yogurt (or similar)
  • 2 figs
  • 1 handful walnuts

Combine the plant milk together with the polenta and ground vanilla in a small pot and bring to boil – let simmer for a few minutes until the polenta is done – stir constantly and add more water or plant milk, if the consistency is getting too thick. Fill the polenta in jars or bowls, then top with 2 tbsp plum jam, followed by some roughly chopped walnuts and coconut yogurt. Rinse and cut the figs and arrange them together with 1-2 walnuts on top.

Wir sind gerade ganz verrückt nach Polenta Porridge und freuen uns heute ein neues Frühstücksrezept mit Euch zu teilen.
In unserem letzten Post gab es ein  hausgemachtes Pflaumenmuß , das wir auch für dieses Rezept verwendet haben. Polenta Porridge ist wirklich eine schöne Variation und schmeckt von der Textur etwas nach Grießbrei. Wir lieben die Kombination mit Pflauemmuß total und wenn Ihr das nicht selbst machen möchtet, könnt Ihr natürlich gerne welches kaufen. Neben dem Pflauenmuß gab es zum Polenta Porridge noch Walnüsse, Kokosjoghurt und Feigen dazu – é voila hier habt Ihr ein wunderbares herbstliches Frühstück! Polenta Porridge ist wirklich ganz schnell und einfach zuzubereiten und eine weitere Version, die Ihr auch unbedingt probieren müsst, ist mit Beeren und Erdnussbutter. Wir haben im Herbst und Winter immer gefrorene Beeren im Tiefkühlfach, die wir dann ganz schnell erwärmen – einfach köstlich und vorallem auch so schön farbintersiv – da steigt an grauen und verregneten Herbsttagen gleich die Laune am Frühstückstisch! Für unser Fotoshooting sind wir zu einem unserer Lieblingspots in der Nähe von unserem Studio auf dem Land gefahren, wo gerade ganz viele wunderschöne Gräser wachsen.
Es war eine ganz zauberhafte Herbststimmung und auch wenn wir beide den Sommer lieben, ist es ein solches Vergnügen diese schöne Herbststimmung zu fotografieren. Wir haben Euch ja schon erzählt, dass wir in diesem Jahr unglaubliche Mengen an Äpfeln, Birnen und Quitten haben – in den Fotos könnt Ihr einen leckeren Quittensaft sehen. Das Rezept teilen wir natürlich auch bald mit Euch aber jetzt lasst uns erstmal frühstücken. Bon appétit!

Veganer Polenta-Porridge mit Pflaumenmus, Feigen und Walnüssen

Zutaten für 2 Personen

  • 120g Polenta/Maisgrieß
  • 500ml Pflanzenmilch nach Wahl (wir haben Kokos-Reis-Milch verwendet)
  • 1 Prise gemahlene Vanille
  • 4 EL Pflaumenmus (hier geht´s zu unserem super-einfachen Pflaumenmus-Rezept)
  • 4 EL Kokosjoghurt (o.ä.)
  • 2 Feigen
  • 1 handvoll Walnüsse

Die Pflanzenmilch zusammen mit der Polenta und der gemahlenen Vanille aufkochen und ein paar Minuten köcheln lassen und dabei am besten ständig umrühren, bis der Grieß gar ist – wenn der Brei zu dickflüssig wird, einfach Wasser oder mehr Pflanzenmilch hinzufügen. Den warmen Polenta-Porridge in Gläser oder Schüsseln füllen, mit jeweils 2 EL Pflaumenmus toppen, gefolgt von grob gehackten Walnüssen und Kokosjoghurt. Die Feigen waschen, in Spalten schneiden und zusammen mit 1-2 Walnüssen auf dem Kokosjoghurt legen.
