One can never have to many recipes that involve banana! Especially during the winter time we love to use bananas for our recipes. An all time favorite recipe is this vegan banana granola – a wonderful breakfast that adds a little coziness to a dark winter morning. But let’s speak about today’s gluten-free banana-hazelnut cake: since it’s so grey and rainy this winter, you should definitely treat yourself with a cup of tea and a delicious piece of this gluten-free banana-hazelnut cake! The combination of banana and hazelnut is very tasty and together with our dear neighbours we finished this guten-free banana-hazalnut cake in only two days. Gluten-free and refined sugar-free Banana-Hazelnut Butter-Cake

Ingredients for a 26-ø-springform pan

  • 200g ripe banana (peeled; about 2 bananas)
  • 4 small bananas for topping
  • 200g hazelnut butter
  • 100g rice flour
  • 3 eggs (size m/l)
  • 135ml maple syrup (plus 2 tbsp for topping)
  • 2 tsp baking powder
  • 1,5 tsp cinnamon
  • 1,5 tsp cardamom
  • 1 pinch ground vanilla
  • 1 pinch of salt

Preheat oven to 180°C/360°F. Line the bottom of the springform pan with baking paper, then grease and flour the sides. Stir hazelnut nut butter with maple syrup. Purée the 200g banana and stir into the nut butter-maple syrup mix. Beat eggs together with the ground vanilla and salt for 1 minute until a bit fluffy and fold into the hazelnut butter mix. Last but not least blend rice flour, baking powder, cinnamon and cardamom and stir in the liquid ingredients. Fill the batter into the springform pan. In the end peel and halve the remaining bananas and lay them carefully on top (maybe you need to trim the edges a bit). Bake the gluten-free banana-hazelnut-cake for 25 minutes, then brush the banana halves and cake with the 2 tbsp maple syrup and let the cake cool down on a cooling rack.

Unser erstes neues Rezept in diesem Jahr ist dieser köstliche glutenfreie Bananen-Haselnuss-Kuchen und wir freuen uns sehr es heute mit Euch zu teilen! Man kann nie genug leckere Bananenrezepte haben, oder? Besonders im Winter backen wir sehr gerne mit Bananen. Eins unserer liebsten Rezepte ist dieses  vegane Bananen Granola – ein wunderbares Frühstück, das einen dunklen Wintermorgen sofort gemütlicher macht. Aber zurück zu unserem heutigen Bananen-Haselnuss-Kuchen – gerade bei diesem grauen und regnerischen Winter gehört ein leckeres Stück Kuchen und eine Tasse Tee zu jedem Nachmittagsschmaus dazu! Die Kombination aus Banane und Haselnuss ist wirklich schmackhaft und so haben wir den Kuchen an nur zwei Nachmittagen mit unseren Nachbarn aufgegessen. Glutenfreier Bananen-Haselnuss-Kuchen mit Ahornsirup

Zutaten für eine 26cm-ø-Springform

  • 200g reife Banane (geschält; etwa 2 Bananen)
  • 4 kleine Bananen als Topping
  • 200g Haselnussmus
  • 100g Reismehl
  • 3 Eier (Gr. M/L)
  • 135ml Ahornsirup (plus 2 EL für das Topping)
  • 2 TL Weinsteinbackpulver
  • 1,5 TL Zimt
  • 1,5 TL Kardamom gemahlen
  • 1 Prise gemahlene Vanille
  • 1 Prise Salz

Den Ofen auf 180°C Ober-und Unterhitze vorheizen. Den Boden der Springform mit Backpapier auslegen, die Seiten buttern und mehlen. Das Haselnussmus mit dem Ahornsirup verrühren. Die Bananen für den Teig pürieren und unter das Haselnussmus rühren. Anschließend die Eier zusammen mit dem Vanillemark und Salz 1 Minute lang schaumig aufschlagen, dann unterheben. Zum Schluß das Reismehl, Weinsteinbackpulver, Zimt und Kardamom mischen und unter den Teig rühren. Den Teig in die Springform füllen, die Bananen für das Topping schälen, halbieren und im Kreis vorsichtig auf den Kuchenteig legen (evt. die Enden etwas kürzen). Den glutenfreien Bananen-Haselnuss-Kuchen für 25 Minuten backen, dann aus dem Ofen nehmen und die Bananenhälften sowie den Kuchenteig mit dem übrigen 2 EL Ahornsirup bestreichen.
