So many of you guys asked us for the recipe of this turmeric chai spiced pumpkin latte on Instagram, so of course we want to share it on the blog with you today! It’s really a wonderful winter drink, perfect to cuddle up inside and listen to the rain outside or even better watching the snowfall. This christmas will be both our first christmas since a lot of years that we don’t spend in Germany and we really hope for a white christmas 🙂 We love to spend the christmas days very calm and cozy and will definitely make this delicious turmeric chai spiced pumpkin latte again. Turmeric Chai Spiced Pumpkin Latte with Salted Caramel & Cinnamon Cream

Ingredients for 1200ml

Turmeric Chai Spiced Pumpkin Latte

  • 300g backed Hokkaido pumpkin (Hokkaido washed, quartered and seeds removed – baked at 200°C/400°F top and bottom heat for approximately 30minutes until soft)
  • 100g marzipan
  • 800ml Almond-Coconut-Drink
  • 2 tsp ground turmeric
  • 1 pinch black pepper
  • 1 pinch ground vanilla
  • 2 Chai tea bags
  • 50ml maple syrup

Topping

  • salted caramel (recipe below)
  • 500ml heavy cream
  • 2 tbsp sugar
  • 1 tsp Ceylon cinnamon
  • 1 handful hazelnuts

Salted Caramel

  • 200ml heavy cream
  • 200g fine sugar
  • 70g butter
  • 1 pinch sea salt

For the salted caramel caramelize the sugar in a non-stick frying pan, stir continuously and add slowly the heavy cream. Add the butter in little cubes and season with a pinch of sea salt. Let boil for a few minutes, then let cool down (you can prepare the caramel also the day before and heat it a little to soften it again). Roast the hazelnuts in a pan without oil, then chop in smaller pieces.
Fill the baked Hokkaido pumpkin into a high speed blender, then cut the Chai tea bags and fill the Chai tea powder to the pumpkin. Blend all ingredients for the Turmeric Chai Spiced Pumpkin Latte in the high speed blender until creamy. Fill into a pot and heat, the pumpkin latte should be thicker then coffee, but not as thick as a cream soup – if needed, add more almond coconut drink. Taste the Turmeric Chai Spiced Pumpkin Latte and add more turmeric or maple syrup, if needed.
Take some smoothie glasses or whatever you like, then fill some soft salted caramel in the bottom and flip the glass, so the caramel is running a bit down – and dip the edge of the glass first into the salted caramel, then into the chopped hazelnuts. Then beat the heavy cream together with the sugar. Fill the whipped cream into an icing bag with a star icing tip. Heat the Turmeric Chai Spiced Pumpkin Latte and fill into the glasses, top with whipped cream and dust with cinnamon.

Viele von Euch haben uns auf Instagram nach dem Rezept für diesen köstlichen Kurkuma-Kürbis-Latte mit Chai-Gewürz gefragt, hier ist es also heute für Euch! Kurkuma-Kürbis-Chai-Latte mit Salz-Karamell und Zimt-Schlagsahne

Zutaten für 1200ml

Kurkuma-Kürbis-Chai-Latte

  • 300g gebackener Hokkaido-Kürbis (Hokkaido waschen, vierteln und Kerne entfernen – Kürbisviertel bei 200°C Ober-und Unterhitze für etwa 30 Minuten backen, bis der Kürbis weich ist)
  • 100g Marzipan
  • 800ml Mandel-Kokos-Drink
  • 2 TL gemahlener Kurkuma
  • 1 Prise schwarzer Pfeffer
  • 1 Prise gemahlene Vanille
  • 2 Chai-Teebeutel
  • 50ml Ahornsirup

Topping

  • Salzkaramell (siehe Rezept unten)
  • 500ml Schlagsahne
  • 2 EL Zucker
  • 1 TL Ceylon-Zimt
  • 1 Handvoll Haselnüsse

Salzkaramell

  • 200ml Schlagsahne
  • 200g feiner Zucker
  • 70g Butter
  • 1 Prise Meersalz

Für das Salzkaramell den Zucker in einer beschichteten Pfanne karamellisieren, dann während des Rührens ganz langsam die Schlagsahne unterrühren. Die Butter in kleinen Würfeln unterrühren und mit Meersalz verfeinern. Das Salzkaramell für ein paar Minuten kochen, dann abkühlen lassen (das Salzkaramell kann man auch wunderbar am Vortag zubereiten und einfach noch einmal etwas erwärmen). Die Haselnüsse in einer Pfanne ohne Öl rösten, dann grob hacken.
Den gebackenen Hokkaido-Kürbis in einen Hochleistungsmixer geben, dann die Chai-Teebeutel aufschneiden und den Inhalt hinzufügen. Alle Zutaten für den Kurkuma-Kürbis-Chai-Latte in den Mixer füllen und cremig pürieren. Dann in einen Topf füllen, kurz erwärmen – der Kurkuma-Kürbis-Chai-Latte sollte dickflüssiger als Kaffee sein, aber nicht so dickflüssig wie eine Cremesuppe – wenn nötig, noch etwas Mandel-Kokos-Drink unterühren. Den Kurkuma-Kürbis-Chai-Latte abschmecken und nach Geschmack noch mehr Kurkuma und Ahornsirup unterrühren. Ein paar Smoothie-Gläser o.ä. verwenden, etwas weich bis flüssiges Karamell am unteren Rand verteilen und das Glas umdrehen, sodaß dass Salzkaramell ein bisschen herunterläuft, dann den oberen Rand zuerst in Salzkaramell tunken, dann in die gehackten Haselnüsse. Nun die Schlagsahne zusammen mit dem Zucker aufschlagen und in eine Spritztüte mit Sterntülle füllen. Den Kurkuma-Kürbis-Chai-Latte erwärmen, dann in die Gläser füllen, mit Schlagsahne toppen und mit Zimt bestreuen.
