By the way, our gluten-free chocolate granola is super crunchy and not only delicious for breakfast. We just had milk or coconut yogurt with it. To make the chocolate granola nice and chocolatey, we added an extra portion of cocoa nibs and a few banana chips for the extra crunch – it tastes really divine! The great thing about the Granola is that it can be prepared quickly and then simply kept in jars for a week or longer. Have a look here if you want to try another delicious granola recipe.

Gluten-free Chocolate Granola with Cashews

Ingredients for around 800g

200g gluten-free thick rolled oats
50g gluten-free puffed oats (our sort was already sweetened)
75g cashews (chop roughly or use cashew halves)
75g sunflower seeds
1 pinch of salt
50g coconut oil
150ml maple syrup
50g raw cocoa powder
1 pinch of ground vanilla
80g banana chips
50g cocoa nibs

Enjoy the gluten-free chocolate granola with cow or vegetable milk or coconut yogurt.
As a topping we ate blueberries and orange slices.

Preheat the oven to 160°C/320°F top and bottom heat. Mix the gluten-free oats, puffed oats, cashews, sunflower seeds and salt in a mixing bowl. Melt the coconut oil in a small saucepan, then add the maple syrup and stir in the cocoa powder and the ground vanilla (sieve cocoa beforehand, if it´s a bit clumpy). Mix the chocolate sauce thoroughly with the dry ingredients. Distribute the gluten-free chocolate granola evenly on a baking sheet with baking paper and roast for 15 minutes, stir the gluten-free chocolate granola with a spatula after 7 minutes so that it roasts evenly from all sides. Then let the gluten-free chocolate granola cool down, before you refine it with whole and crumbled banana chips and cocoa nibs.
