If you are vegan just leave the caramel, it will still taste good and chrunchy because of the banana-chips. of course it´s not low on histamine (unless you can tolerate bananas) but of course it´s also glutenfree again! so here you go for the recipe:

4-5 bananas
1 can sweetened condensed milk
100g bananen chips (e.g. from seeberger)
2-3 tbsp grated coconut

make caramel: place a kitchen towel or a few layers of baking paper in a large pot, place the closed condensed milk can inside and add enough water, so the can is totally covered with it. bring the water to boil and leave simmer for 3hours with a lid on top (the kitchen towel avoids that the can rattles in the pot). take care that the can is always covered with water during the 3 hours, otherwise it might explode. when time is finished, take out the can and leave cool down for at least 1hour.

banana-ice-cream: cut bananas into thin slices and leave for 2hours in the freezer (place the slices on baking paper and side by side, so they cannot stick to each other).

meanwhile put 80g of the banana chips into an airtight bag and smash with a hammer carefully into smaller pieces. purée frozen bananas portion by portion with an immersion blender (or blender). add 2/3 of the smashed banana-chips to the banana-ice-cream, stir in and leave the ice-cream for 5min in the freezer. liquefy a bit the caramel (it should be a bit solid after cooling down.) open the can and put 1/3 of the caramel into a small pot, add a bit water or coffee – gives a nice coffee-note – and heat up a bit. stir the caramel for 1-2min with a whisk until the the caramel gets a nice smoothy consistence. now get the ice-cream out of the freezer, fill a loaf pan or tupperware with ¼ of the ice-cream, then spead strip-type some caramel on top, now add ice-cream again, then caramel, then ice-cream, then caramel and at least ice-cream with the rest of the smashed banana-pieces. leave the ice-cream for 2hours in the freezer. Use some roasted grated coconut and banana-chips for garnishing (if you like it sweet, you can add some more liquid caramel for topping).

Es war wirklich an der zeit mal ein bananen-eis zu probieren. schon auf so vielen tollen blogs – food banditsvegans save the world – haben wir davon gelesen, so dass wir endlich unsere eigene version kreieren wollten! wenn ihr euch vegan ernährt, lasst einfach das karamell weg (oder als vegane variante zubereiten), das eis schmeckt trotzdem noch sehr gut und ist durch die bananen-chips vor allem schön chrunchy. histaminarm ist das eis leider nicht (es sei denn ihr vertragt trotz HIT bananen) aber natürlich wie gewohnt glutenfrei. und eins ist es besonders: sehr lecker!

zutaten (für 4 portionen)
4-5 bananen
1 dose gezuckerte kondensmilch
100g bananenchips (z.b. von seeberger)
2-3 el kokosraspeln

karamell herstellen: einen großen topf mit einem geschirrtuch oder mehreren blättern butterbrotpapier auslegen, die kondensmilch verschlossen hineinlegen und den topf soviel mit wasser befüllen, dass die dose komplett bedeckt ist. wasser zum kochen bringen und bei geschlossenem deckel für 3stunden köcheln lassen (das geschirrtuch vermeidet, dass die dose zu laut klappert). während der 3stunden darauf achten, dass die dose immer mit wasser bedeckt ist, sonst könnte sie explodieren. nach den 3stunden aus dem topf nehmen und min. 1stunde auskühlen lassen.

bananeneis: bananen in schmale scheiben schneiden und im tiefkühlfach für wenigstens 2stunden einfrieren (dabei die scheiben auf backpapier legen – immer nebeneinander, nicht übereinander, sodass sie nicht festkleben). 80g bananenchips in einen frischhaltebeutel füllen und mit einem hammer o.ä. vorsichtig in kleine stücke schlagen. gefrorene bananen mit einem pürierstab (oder standmixer) in mehreren portionen pürieren, in einem gefäß eiscreme mit 2/3 der kleingestampften chips vermengen und für 5min ins eisfach stellen. nun karamelldose öffnen und zügig das karamell etwas verflüssigen (wenn das karamell ausgekühlt ist, ist es etwas fest.) etwa 1/3 der menge in einem kleinen topf erwärmen mit etwas wasser oder kaffee – gibt ein schöne kaffeenote – und für 1-2min mit einem schneebesen zu einer glatten creme verrühren. eis aus dem eisfach holen, eine längliche kastenform oder tupperware mit ¼ der eiscreme befüllen, dann etwas von dem karamell streifenförmig darauf verteilen, wieder eine schicht eiscreme, dann wieder karamell, wieder eiscreme, dann karamell und zuletzt eiscreme mit den restlichen kleingestampften bananastücken on top. für wenigstens 1-2stunden nochmal einfrieren. zum servieren ein paar kokosraspeln rösten und mit bananenchips dekorieren. (süsse können gerne noch etwas warmes karamell darüber geben).
