One of the complicated things when you have to eat glutenfree (at least in berlin) is eating in a restaurant or in a café.

if you are histamine-intolerante as well it´s even harder, but luckily i can tolerate more and more things again which are not low on histamine (like avocado and some nuts, even mushrooms like in this recipe). i really hope it continues like that and that one day this whole histamine-thing won´t be an issue for me anymore. but anyways, i was really craving for a piece of quiche since some weeks now. you can get a piece of quiche in almost every café in berlin but i never saw a glutenfree one yet.  yesterday we finally had the time to make a glutenfree one by ourselves. when nora and i went shopping for groceries we got inspired by this perfectly looking kale and these delicious looking king oyster mushrooms. and a was a very good choice because they really do taste great together, especially in combination with the coconut milk. give it a try guys!

ingredients for a 28cm-ø quiche-pan

pastry:
250g rice flour
125g butter cold
1 dash salt (or you take salted butter)
1 large egg
filling:
200ml coconut milk
4 eggs
50g feta
200g kale
150g king oyster mushroom
1 red onion
2 garlic cloves
2-3 tbsp olive oil
1 tl vegetable broth
1 dash of nutmeg
salt

pastry:
combine roghly the rice flour, salt and smaller butter cubes by hand in a bowl. add the egg and knead for 2min. if the dough looks still to crumbly add a bit icecold water (by tablespoons). flour your countertop and shape the dough on it to a flat brick. cover with clingfilm and put for 1 hour into the fridge. butter and flour the quiche-pan. roll the dough between 2 layers of clingfilm (dust with flour). the pastryy should be about 5mm thick. overturn the pastry upside down on the quiche-pan. press on the pastry and cut off remaining parts at the sides. patch remainig holes with the pastry leftovers.
allow the pastry to rest for 1hour before it get baked.

prepare the filling meanwhile:
wash and destalk the kale and chop into smaller pieces. clean the king oyster mushrooms with kitchen paper and chop into 1cm-sized-cubes.
chop onion and garlic into cubes and fry for 1minute. add the mushrooms for 2-3min, then add the kale and cook with lid on top on low heat. prepare some broth (ca. 200-300ml) and add to the vegetables. season with salt & nutmeg. cook for another 5-10min until the kale ist just before doneness and the broth has boiled away. preheat oven to 180degrees celcius (top/bottom-heat).

spread the vegetables on the pastry. mix the eggs and coconut milk, add a dash of salt and pour the mix on the quiche. cut feta into cubes and scatter on top. bake quiche at 180degrees celcuis for 30-35min until the egg-mixture is set ( when a knife inserted near center comes out clean). leave the quiche to cool down for 10min on a cooling rack until you serve the pieces (the best with a small salad).

Eine der wirklich anstrengenden sachen, wenn man sich glutenfrei ernährt, ist es im café oder im restaurant zu essen (jedenfalls in berlin). es gibt zwar thai oder auch ein paleo restaurants aber die regel ist es noch lange nicht, dass man eine glutenfreie alternative auf der speisekarte findet, schon gar nicht im café. wenn man dann auch noch eine histaminintoleranz hat, wirds doppelt schwer. zum glück, wird es bei mir hinsichtlich der histaminintoleranz immer besser und nach 2 jahren komplettem verzicht kann ich in letzter zeit immer mehr nahrungsmittel wieder integrieren (z.B. avocado, ein paar nüsse oder auch pilze, wie in diesem rezept hier). ich hoffe sehr, dass es sich so weiter entwickelt und mich die histaminintoleranz irgendwann komplett loslässt. wie auch immer, jedenfalls hatte ich in den letzten wochen total appetit auf ein stück quiche. die bekommt man in so gut wie jedem café in berlin, aber natürlich nicht als glutenfreie variante. gestern hatten wir endlich die zeit uns selber an einer glutenfreien quiche zu probieren und freuen uns euch heute schon das ergebnis zeigen zu können.
beim einkaufen haben wir uns von diesem perfekt aussehendem grünkohl und den köstlichen kräuterseitlingen inspirieren lassen.

das war auf jeden fall beides eine gute wahl, die kombination schmeckt fantastisch, gerade in verbindung mit der kokosmilch.

also probiert es undbedingt aus!

glutenfreie grünkohl-quiche mit kräuter-seitlingen & kokosmilch

zutaten für eine quiche-form 28cm ø
mürbe-teig:
250g reismehl
125g kalte butter
1 prise salz (oder gesalzene butter verwenden)
1 ei
füllung:
200ml kokosmilch
4 eier
50g feta
200g grünkohl
150g kräuter-seitlinge
1 rote zwiebel
2 knoblauchzehen
2-3 el olivenöl
1 tl gemüsebrühe
etwas muskat
salz

mehl, salz und kleine butterwürfel in einer schüssel mit den händen kurz vermengen. das ei kurz unterkneten und falls der teig noch etwas zu brösilg ist, etwas kaltes (esslöffelweise) dazugeben und unterkneten. teig auf einer bemehlten Arbeitsplatte zu einem flachen ziegel formen und für 1h in den kühlschrank stellen. eine quicheform buttern und mehlen. teig zwischen zwei (mit mehl bestäubten) lagen frischhaltefolie dünn ausrollen (etwa 5mm dick) und kopfüber auf die quichform “kippen”. teig andrücken und überstehende ränder abschneiden (da der teig etwas instabil sein kann, einfach die ränder oder löcher mit übrigem teig ausbessern). teig 1h ruhen lassen, dann erst belegen und backen.

während der 1h ruhezeit füllung vorbereiten:
grünkohl entstielen und in kleinere stücke zupfen, waschen. pilze mit küchenkrepp säubern und in ca. 1cm große würfel schneiden.

zwiebel und knoblauch zerkleinern und mit etwas olivenöl in einem großen topf andünsten. pilze für 2-3min dazugeben und anbraten, dann den grünkohl dazugeben und bei kleiner flamme mit geschlossenem deckel kochen lassen. etwas brühe (ca. 200-300ml) vorbereiten und in den topf geben. muskat und salz dazugeben. für weitere 5-10min köcheln lassen, bis der grünkohl bissfest und kurz vor dem garpunkt ist und die brühe so gut wie verkocht. ofen auf 180grad (ober/unterhitze) vorheizen. gemüse gleichmäßig auf der quiche verteilen. eier mit kokosmilch verrühren, etwas salz dazugeben und flüssigkeit auf die quiche gießen. fetawürfel darüberstreuen. quiche bei 180grad 30-35min auf der unteren schiene backen bis das ei gestockt ist (die quiche ist fertig, wenn am messer keine flüssigkeit zurückbleibt, wenn man hineinsticht). quiche für 10min auf einem kuchengitter ruhen lassen, dann lauwarm am besten mit etwas salat servieren.
