Gluten-free Apple-Cinnamon Rolls & an autumn inspired table set-up
Autumn is in full swing and we love it! The air is crisp and clear and all the leaves are colorful.
As we didn’t spend so much time in the countryside this summer, it seems like it’s the opposite this autumn. We could stay there for weeks and only return to Berlin for client work, that has to be done at the studio right now. In between shootings and lots of editing it’s simply wonderful to watch all the trees with their beautiful colored leaves, go out for long walks with the dogs and then cozy up at home with a big hot tea pot and a good book. We also changed some rooms inside and love it even more now, so a new designtales post about some interior changes will be definitely up soon!
Last weekend we decided to get up for sunrise and shoot this little magical autumn table set-up, with the most delicious gluten-free apple-cinnamon rolls, in the garden. Instead of our dslr camera we took our Huawei P10 smartphone with us again, about which we told you already in this and this post. As we had to carry quite a lot of things from the house (table, chairs and food) and it also was early in the morning, we felt so relieved, that we didn’t need to carry a heavy camera on top of that and knew we had a good smartphone camera with us, that we can count on. We’ve been testing the P10 since 3 months now and really love the quality of the pictures, which is simply amazing, because of the Leica dual camera 2.0. For this post our task was to test the portrait modus, so here you go for some rare pictures of us as well 🙂 The 3D facial recognition of the camera detects up to 190 face points and thanks to this facial recognition and embellishment effects the skin looks smooth and the facial outline is sharp. How do you like the outcome guys? We’ve been both really satisfied. And we’ve been also really satisfied with the gluten-free apple-cinnamon rolls. Do you remember our first cinnamon roll blogpost? If you loved them as much as we did, you will go crazy about these apple-cinnamon rolls – they are just SO delicious. As they are baked with yeast we recommend to eat them soon after you baked them (they taste the best when they are still warm) or put them in the oven for a short while again, when you have left overs or want to eat them the next day. We hope you guys are enjoying these lovely autumn days as well.
Gluten-free Apple-Cinnamon Rolls
Ingredients (for 10 Cinnamon Rolls)
Gluten-free yeast dough
- 310ml rice milk (or cow milk)
- 80g butter
- 500g gluten-free flour-mix (we took a flour mix, which consists of corn starch, rice flour, millet flour and guar gum)
- 1 pck active dry yeast (9g)
- 80g fine sugar
- 1 egg (size m/l)
- 1/2 tsp salt
Apple cinnamon fillin
- 250g apple pieces (you need 2-4 apples, depends on the size)
- 50g raisins or sultanas
- 50g butter, soft
- 60g coconut sugar (or cane sugar)
- 2 tsp cinnamon
- 1 pinch of ground cardamom (we used 5 cardamom capsules)
- 1 pinch of ground vanilla (or vanilla extract)
Icing
- 150g icing sugar
- about 3 tbsp milk
- 1 tbsp sliced almonds
Tip: You should bake and eat the cinnamon rolls the same day, because then they are very soft. They taste the best, when they are lukewarm.
Blend gluten-free flour mix, sugar and salt in a large mixing bowl. Heat the rice milk and melt the butter in the rice milk – the rice milk should be warm, but not boiling! Pour butter-rice milk to the dry ingredients and knead for 1 minute (the easiest is to use disposable gloves, because the dough is quite sticky). Then knead in the egg for some minutes (our dough was still sticky in the end, because this gluten-free dough needs some moist to not to dry out while baking). Grease another mixing bowl and leave the dough there for 1 hour at a warm place covered with a tea towel (meanwhile take the butter from the fridge, so it´s soft enough to spread it later). Line a large springform pan with baking paper, grease and butter the sides. Blend coconut sugar, cinnamon, cardamom and ground vanilla (if you are using vanilla extract, try to stir it into the soft butter). A few minutes before the dough is ready start to peel the apples, quarter and dices them into very small pieces. Afterwards roll out the dough on a big piece of baking paper (flour the baking paper and the dough before) to a large rectangle (the longest side should be 40-45cm, which should be as long as the baking paper roll). Spread first the butter on the dough, then sprinkle the cinnamon-coconut-sugar on top (but leave a 2cm edge on the upper longer sides). Then arrange the apple pieces and raisins evenly on top. Now roll from the longer side to the side with the „free-left edge“, it could be helpful to use the baking paper underneath to roll it. Trim the edges and cut the big roll into 10 pieces. You should clean your knife permanently, because the dough is sticky. Then arrange the apple cinnamon rolls in the springform pan – 6 cinnamon rolls on the edge and 3 in the center. Cover the apple cinnamon rolls again with a tea towel and leave on a warm place for another 30minutes, before you bake them for 25-30 minutes in a preheated oven by 180°C (360F) top/bottom heat. Let the gluten-free apple cinnamon rolls cool down for a moment on a cooling rack and prepare the icing by mixing icing sugar and milk. Pour icing over the cinnamon rolls and top with sliced almonds. Eat the cinnamon rolls, when they are still lukewarm.
Glutenfreie Apfel-Zimt-Rollen mit Rosinen
Zutaten (für etwa 10 Stück)
Glutenfreier Hefeteig
- 310ml Reismilch (oder Kuhmilch)
- 80g Butter
- 500g glutenfreier Mehlmix (wir haben einen fertigen Mehlmix verwendet, der aus Maisstärke, Reisvollkornmehl, Hirsemehl und Guarkernmehl besteht)
- 1 Päckchen Trockenhefe
- 80g feiner Zucker
- 1 Ei (Gr. M/L)
- 1/2 TL Salz
Apfel-Zimt-Füllung
- 250g Apfelstückchen (etwa 3-4 Äpfel, je nach Größe)
- 50g Rosinen oder Sultaninen
- 50g Butter, weich
- 60g Kokosblütenzucker (oder ein anderer Zucker)
- 2 TL Zimt
- 1 Prise Kardamom (wir haben 5 Kardamomkapseln verwendet)
- 1 Prise gemahlene Vanille
Zuckerguss
- 150g Puderzucker
- etwa 3 EL Milch
- 1 EL Mandelblättchen
Tipp: Die Apfel-Zimt-Rollen sollten am besten am gleichen Tag gebacken und gegessen werden, da sie dann am saftigsten sind – am leckersten sind sie noch leicht lauwarm.
Mehl, Trockenhefe, Zucker und Salz in einer grossen Rührschüssel gut vermengen. Reismilch erwärmen, Butter darin schmelzen lassen – die Reismilch sollte warm sein, aber nicht kochen! Reismilch-Butter-Mischung zu den trockenen Zutaten hinzugiessen und grob verkneten (am besten mit Einweghandschuhen arbeiten, da der Teig sehr klebt), dann das Ei hinzufügen. Den Teig ein paar Minuten kneten (unser Teig war zum Schluss immer noch etwas klebrig, da er genügend Feuchtigkeit braucht, damit er später beim Backen nicht zu sehr austrocknet). Eine neue Rührschüssel mit etwas Pflanzenöl ausstreichen und den Teig dort für 1h an einem warmen Ort und mit einem Küchentuch bedeckt, gehen lassen (währenddessen die 50g Butter aus dem Kühlschrank nehmen damit sie weich genug zum Streichen wird). Den Boden einer großen Springform mit Backpapier auslegen, die Seiten fetten und mehlen. Den Kokosblütenzucker mit Zimt, Kardamom und Vanille mischen. Kurz bevor der Teig fertig aufgegangen ist, Äpfel schälen, vierteln und in sehr kleine Stücke schneiden. Nach einer Stunde den Teig auf einem großen Stück bemehlten Backpapier (auf den Teig auch etwas Mehl streuen damit er an der Teigrolle nicht anklebt) zu einem großen Rechteck ausrollen (die längste Seite sollte etwa 40-45cm lang sein, so breit wie die Backpapierrolle). Auf dem Teig zuerst die weiche Butter verstreichen, dann die Zucker-Zimt-Mischung verteilen (am längeren oberen Rand 2cm frei lassen). Zum Schluß die Apfelstückchen und Rosinen gleichmäßig verteilen. Dann den Teig von der langen Seite hin aufrollen, sodass das Ende der freie Rand ist (es kann hilfreich sein, dass Backpapier etwas mitzurollen). Die Enden abschneiden und die Rolle in etwa 9-10 Stücke zerteilen (das Messer immer schön abwischen, sonst klebt der Teig daran). Die glutenfreien Apfel-Zimt-Rollen in die Springform setzen (am besten 6 Stück am Rand und 3 in die Mitte). Dann die Apfel-Zimt-Rollen abgedeckt nochmals für 30min an einem warmen Ort gehen lassen, dann im vorgeheizten Ofen bei 180°C Ober-/Unterhitze für 25-30min backen. Die Apfel-Zimt-Rollen auf einem Kuchengitter etwas abkühlen lassen. Puderzucker und Milch für die Glasur verrühren und auf den glutenfreien Apfel-Zimt-Rollen verteilen. Dann noch ein paar Mandelblättchen darüber streuen.
