When we published a photo of this delicious blood orange-berry pavlova on our  Instagram, we didn’t had the plan to publish the recipe on the blog. Not because it’s not good (this blood orange pavlova with berry sauce tastes simply divine!), but we just thought the recipe is so easy, that there is no need to share it. But I guess the simple things sometimes really are the best and as many of you guys requested it, here you go! Enjoy it as long as the blood oranges are still in season (here you can still get them on the market in weekends). Easy and delicious Blood Orange-Berry Pavlova

Ingredients

  • 6 eggs (size M/L)
  • 300g superfine sugar
  • 500g heavy cream
  • 1 pinch ground vanilla
  • 1 pck blueberries
  • 1 pck raspberries
  • 2-3 blood oranges
  • 400g frozen berries (berry mix)
  • 3-4 tbsp sugar
  • (maybe 1 tbsp cornstarch)

Preheat the oven to 120°C top/bottom heat. Grease a baking sheet a bit with butter, so a piece of baking paper can better stick to it. Draw a circle of circa 22cm diameter (use a plate or similar) on the baking paper. Then separate the eggs and beat the egg whites semi stiff, then add 1-2 tbsp sugar and continue beating. Add gradually the sugar until the meringue is thick and glossy and you can´t feel anymore the sugar, when you rub a bit meringue between your fingers – the beating will take about 5-10 minutes. Now fill the meringue into a pastry bag with a star shaped icing tip and then shape a pavlova on your circle. Start by doing the bottom, then „raise“ the sides, so in the middle will be space to fill in the whipped cream. Then bake the pavlova for about 90 minutes (it varies from oven to oven), important is only, that the pavlova is still a little soft in the inner center and crunchy on the outside. After baking leave the pavlova in the oven with a slightly opened oven door (put a cooking spoon in the door) until it is cooled down. While baking you can prepare the berry sauce. For that just bring the frozen berries and 300ml water to boil and let simmer until the berries are soft. Then purée the berries and strain the sauce. Fill the berry sauce in a small saucepan, add the sugar and let simmer until the sauce is thick enough. If the berry sauce isn´t thick enough after 15 minutes, thicken it with the cornstarch (mix the cornstarch with 3-4 tbsp water and add it slowly to the simmering berry sauce until it´s thicker). In the end taste the berry sauce, if it´s sweet enough. When the pavlova isn´t warm anymore, whip the heavy cream together with the ground vanilla and fill it into the pavlova. Top the pavlova with fresh berries and blood orange slices. At last pour some berry sauce over the pavlova. Serve the remaining berry sauce together with the single blood orange-berry pavlova pieces.

Da viele von Euch sich das Rezept für diese Blutorangen-Beeren Pavlova gewünscht haben, teilen wir es heute endlich auf dem Blog mit Euch! Als wir auf unserem  Instagram Account ein Foto von der Pavlova gepostet haben, hatten wir eigentlich gar nicht vor auch das Rezept zu teilen – nicht weil es nicht gut genug wäre (ganz im Gegenteil, diese Blutorangen-Beeren Pavlova schmeckt einfach himmlisch!) aber wir dachten das Rezept sei so einfach, dass man es gar nicht aufschreiben müsse. Aber die einfachen Dinge sind wohl manchmal wirklich die besten, also hier nun doch das Rezept für Euch! Genießt es solange die Blutorangen noch zu bekommen sind (bei uns momentan auf dem Wochenmarkt gar kein Problem, aber bald ist die Saison wohl wirklich vorbei). Einfache und leckere Pavlova mit Blutorangen und Beeren

Zutaten

  • 6 Eier (Gr. M/L)
  • 300g feinster Zucker
  • 500g Konditorsahne
  • 1 Prise Vanille
  • 1 Pck. Blaubeeren
  • 1 Pck. Himbeeren
  • 2-3 Blutorangen
  • 400g TK-Beeren, gemischt
  • 3-4 EL Zucker
  • (evt. 1 EL Maisstärke)

Den Ofen auf 120°C Ober-/Unterhitze vorheizen. Den Boden eines Backblechs an mehreren Stellen mit etwas Butter einfetten, sodaß ein Stück Backpapier darauf haften bleibt. Mit Hilfe eines Tellers einen Kreis auf das Backblech zeichnen – etwa 22cm Durchmesser. Dann die Eier trennen, die Eiweiße halbsteif schlagen, dann 1-2 EL Zucker dazugeben und weiterschlagen. Nach und nach den Zucker esslöffelweise hinzufügen und den Eischnee solange schlagen bis er fester und glänzend ist und man den Zucker nicht mehr spürt, wenn man etwas Eischnee zwischen den Fingern verreibt – das kann zwischen 5-10 Minuten dauern. Die Baisermasse in eine Spritztüte mit Sterntülle füllen und damit eine Pavlova auf den vorgezeichneten Kreis formen. Am besten zuerst komplett den Boden bedecken und dann die Seiten „hochziehen“, damit man in der Mitte Platz für die Schlagsahne hat. Die Baisermasse für etwa 90 Minuten backen (das ist von Ofen zu Ofen unterschiedlich), wichtig ist nur, daß die Pavlova im Kern noch etwas weich und außen schön fest ist. Nach der Backzeit den Ofen ausschalten, die Pavlova im Ofen lassen und die Ofentür leicht öffnen (einfach einen Kochlöffel in die Tür klemmen). Während der Backzeit die Soße vorbereiten. Dafür die TK-Beeren mit 300ml Wasser erwärmen bis sie weich sind, dann pürieren und anschliessend durch ein Sieb passieren. Die Beerensoße in einen Topf füllen, den Zucker hinzufügen und köcheln lassen, bis sie etwas angedickt ist. Falls sie nach 15 Minuten immer noch zu flüssig ist, einfach mit etwas Maisstärke andicken (Maisstärke mit 3-4 EL Wasser mischen und nach und nach unter die köchelnde Beerensoße rühren). Jetzt die Soße abschmecken und abkühlen lassen. Wenn die Pavlova abgekühlt ist, die Schlagsahne mit der Vanille aufschlagen (wer es süß mag, kann die Schlagsahne natürlich noch etwas süßen) und in die Pavlova füllen. Mit Beeren und Bluorangenscheiben dekorieren und etwas Beerensoße darüber gießen. Die restliche Beerensoße einfach zu den einzelnen Stücken dazureichen.
