The past weeks have been more busy than ever. Next to a lot of work we decided to renovate our studio kitchen in the countryside and we kind of forgot how much work such a renovation is. As we removed a wall to make the space bigger everything is a complete chaos right now, but by end of next week the kitchen should be almost done and we can start to work on the fun part of rearranging and decorating 🙂 We will definitely share more with you guys soon – so exciting!
While we were absorbed with renovation work and lot’s of client work we suddenly reached 1 million followers on Instagram and also got a feature on the Instagram page and Instagram TV. We still can’t believe it and can’t express in words how grateful we are for your daily support!! You guys are seriously the best, what a wonderful surprise that was!! We just love to be part of such a great and creative community and are so thankful for all the inspiring people we met through Instagram already, that we luckily can call friends now. And of course we wanted to make something special for you guys, so we decided to create a new  delicious gluten-free cake recipe for you! As there are so many elderberries and apples in the garden right now, it was pretty clear it had to be a gluten-free apple-elderberry cake. We used the elderberries to color the cake and just love how intense their color is! Because of the apples, the cake batter has a wonderful moist consistency and the coconut blossom sugar gives it a lovely caramel flavor. Perfect for those early autumn days! We hope you guys enjoy the recipe and are ready for many more cozy autumn pictures soon.

Gluten-Free Apple Elderberry Cake

Ingredients for a 18cm springform pan

Gluten-Free Apple Batter with Coconut Sugar

  • 200g roughly grated apples (2-3 apples)
  • 250g gluten-free flour mix (or rice flour)
  • 2 tsp organic baking powder
  • 200ml rape seed oil
  • 100ml rice-coconut-drink (or milk or another plant drink)
  • 200g coconut blossom sugar (or 180g regular sugar)
  • 4 eggs (size M)
  • 2 tsp Ceylon cinnamon
  • 1 pinch ground vanilla
  • 1 pinch salt

Buttercream and Filling

  • 300g butter, soft/room temperature
  • 500g powdered sugar
  • 75g goat cream cheese (or cream cheese)
  • about 200ml elderberry juice

Preheat oven to 180°C top/bottom heat. Grease and flour your springform pan. Separate eggs, beat the egg whites stiff and set aside for a moment. Beat the egg yolkes together with the salt, ground vanilla and rape seed oil for a moment, then beat in the coconut blossom sugar. Blend the gluten-free flour mix with the baking powder and cinnamon, then stir into the batter – using a spatula. Now peel and grate the apples quickly and fold into the batter. In the end fold in the egg whites in 3 portions. Fill the gluten-free cake batter into the springform pan and bake the cake for 55 minutes, then switch off the oven, leave a wooden cooking spoon in the door of the oven and let the cake cool down slowly in the oven that way for circa 30 minutes. Afterwards leave the cake on a cooling rack until completely cooled down, remove the springform pan. Cut the cake into 4 layers using a long bread knife. Start preparing the buttercream. Beat the soft butter for a moment, then add the powdered sugar portion by portion (sieve the powdered sugar before, if necessary). Weigh half of the buttercream and place it in the fridge. Stir the goat creme cheese into the other half and spread a layer on one of the cake bases (put the cake bottom aside, this is going to be the top layer of your cake in the end – upside down). For the other layers add tablespoon by tablespoon of elderberry juice to the filling until you have a nice color – just take care, that the filling is not getting to liquid. Spread filling on the other two cake bases and place all 3 cake bases into the fridge for one hour, before you stack the bases on top of each other. Meanwhile color the buttercream. Use a bit more than one third for the brightest color, then halve the remaining buttercream for the other two tones. Color the buttercream with different amounts of elderberry juice – again take care, that you start little by little with the juice, so the buttercream is not getting to runny. Fill the 3 buttercreams into icing bags with a 1cm-ø icing tip or cut a hole of 1cm-ø. When you´ve put together the cake, start by filling the gaps, then use a cake spatula to spread the sides evenly, so you have a first coating. Then start applying the 3 different tones buttercream from bottom up, apply 2-3 „rings“ of each buttercream, in the end add some bright buttercream to the top as well. Now move carefully the cake spatula vertically around the cake, so the buttercream will smooth down – clean the spatula a couple of times in between with kitchen paper, so the different tones won´t mix up that much. At last decorate your gluten-free apple elderberry cake with grapes or other fruits and place in the fridge, if necessary.

Die letzten Wochen waren sehr ereignisreich und aufregend. Neben viel Arbeit haben wir auch noch unsere Studio-Küche auf dem Land renoviert und irgendwie verdrängt wie aufwändig so eine Renovierung ist. Da auch noch eine Wand rausgerissen wurde, um die Küche zu vergrößeren, ist momentan alles wirklich sehr chaotisch. Aber bis Ende nächster Woche sollte die Küche wirklich fertig sein und dann kann das eigentliche Vergnügen – Einräumen und Dekorieren – beginnen 🙂 Wir halten Euch auf dem Laufenden und werden Euch ganz bestimmt bald mehr zeigen!
Während wir von den Renovierungsarbeiten und Photoshoots für Kunden reichlich abgelenkt waren, haben wir aufeinmal 1 Mio Follower auf Instagram und auch noch ein Feature auf der Instagram Page und dem Instagram Tv Channel gehabt. Wir können es immer noch nicht ganz glauben und können es kaum in Worte fassen wie dankbar wir Euch für Euren täglichen Support sind!! Ihr seid wirklich einfach die Besten und das war eine tolle Überraschung! Wir lieben es so sehr ein Teil dieser wunderbaren und kreativen Community zu sein und sind so dankbar für all die Leute, die wir durch Instagram schon kennengelernt haben und einige glücklicherweise heute sogar unsere Freunde nennen können.
Natürlich wollten wir als Dankeschön etwas ganz Besonders für Euch kreieren und haben uns für ein neues köstliches Tortenrezept entschieden! Da wir momentan so viele Holunderbeeren und Äpfel im Garten haben, war klar, dass diese Köstlichkeiten in die Torte kommen. Die Holunderbeeren haben wir zum Färben benutzt und sind immer wieder begeistert wie intensiv die Färbung ist! Die Äpfel kamen in den Teig, der dadurch so richtig schön saftig geworden ist und dank des Kokosblütenzuckers eine köstliche Karamellnote hat – einfach perfekt bei der frühen Herbststimmung. Wir hoffen Ihr lasst Euch die Torte auch gut schmecken – viel Freude beim Backen!

Glutenfreie Apfel-Holunderbeeren-Torte

Zutaten für eine 18cm Springform

Glutenfreier Apfel-Teig mit Kokosblütenzucker

  • 200g grob geraspelte Äpfel (2-3 Äpfel)
  • 250g glutenfreie Mehl-Mischung (oder Reismehl)
  • 2 TL Weinsteinbackpulver
  • 200ml Rapsöl
  • 100ml Reis-Kokos-Drink (oder Milch oder ein anderer Pflanzendrink)
  • 200g Kokosblütenzucker (oder 180g normaler Zucker)
  • 4 Eier (Gr. M)
  • 2 TL Ceylon-Zimt
  • 1 Prise gemahlene Vanille
  • 1 Prise Salz

Butter-Creme und Füllung

  • 300g Butter, weich/Zimmertemperatur
  • 500g Puderzucker
  • 75g fester Ziegenfrischkäse (oder Frischkäse)
  • etwa 200ml Holunderbeerensaft

Ofen auf 180°C Ober-/Unterhitze vorheizen. Die Springform fetten und mehlen. Eier trennen, Eiweiss steif schlagen, dann kurz beiseite stellen. Eigelbe mit dem Salz, der gemahlenen Vanille, dem Rapsöl und dem Reis-Kokos-Drink verschlagen, dann den Kokosblütenzucker unterschlagen. Glutenfreies Mehl, Backpulver und Zimt mischen und in den Teig rühren – am besten mit einem Silokinspatel. Dann zügig die Äpfel schälen und grob raspeln. Die Raspeln unter den Teig heben und dann den Eischnee in 3 Portionen unterheben. Den Teig in die Springformen füllen und für 55 Minuten backen, dann den Ofen ausschalten und ein Kochlöffel in die Ofentür klemmen und den Kuchen im Ofen langsam für 30 MInuten abkühlen lassen. Anschließend den Kuchen auf einem Kuchengitter komplett abkühlen lassen, bevor man die Springform entfernt. Den Kuchen mit einem langen Brotmesser in 4 gleichdicke Lagen schneiden. Jetzt die Buttercreme zubereiten. Die zimmerwarme Butter kurz aufschlagen, dann nach und nach den Puderzucker unterrühren (vorher den Puderzucker sieben, falls dieser klumpt). Dann die Hälfte abwiegen für die Aussenschicht – in den Kühlschrank stellen. Für die Füllung den Ziegenfrischkäse unter die Buttercreme rühren. Dann einen Tortenboden mit etwas Füllung bestreichen (den untersten Tortenboden beiseite legen und später umgedreht als Tortendeckel verwenden) und für die anderen Schichten esslöffelweise Holunderbeerensaft für eine schöne Farbe unterrühren – nicht zuviel Saft damit die Füllung nicht zu flüssig wird. Jetzt noch die 2 anderen Tortenböden bestreichen, dann alle 3 Böden für etwa 1 Stunde in den Kühlschrank stellen, anschließend erst übereinander stapeln. Währenddessen die gefärbte Buttercreme vorbereiten: ein bisschen mehr als ein Drittel für die hellste Schicht verwenden, die restliche Creme halbieren. Unterschiedlich viel Holunderbeerensaft in die 3 Buttercremes einrühren und in 3 Frischhaltebeutel oder am besten in Spritztüten füllen mit mindestens 1cm-ø rundem Aufsatz. Wenn die Torte zusammengesetzt ist, zuerst die Lücken mit Buttercreme füllen und mit einem Kuchenspatel glatt streichen, sodass man eine „Grundierung“ hat. Dann von unten nach oben hin die 3 verschiedenen Cremes auftragen, etwa 2-3 Buttercreme-Ringe pro Farbe mit der Spritztüte am Rand der Torte auftragen, zum Schluß auch etwas von der helleren Creme obendrauf verteilen. Vorsichtig mit dem Kuchenspachtel parallel kreisrum gehen, sodass die Oberfläche glattgestrichen wird – zwischendurch immer wieder den Spachtel säubern, damit sich die Farbschichten nicht zu sehr vermischen. Zum Schluß die Torte mit Weintrauben oder anderem Obst dekorieren und evt. nocheinmal in den Kühlschrank stellen.
