It all started last autumn when our beloved, old and huge walnut tree fell down after a storm. That tree was so dear to us and we were so sad when we arrived from Berlin and saw it lying on the ground. Many lovely summer meals have been celebrated under that tree and no matter which season, it was always a pure joy to watch that powerful tree in the yard. You can have a little impression how the garden looked with the walnuttree in this post from last year. Behind the walnut tree was always this hidden spot, where old stones were lying on top of each other and just weeds were growing all over. It was basically a huge mess! When the tree fell down that area became so visible and important to the whole garden and yard, that of course we wanted to turn it into something beautiful! The plan was to have the terrace ready for summer, but the whole process took so much longer. As all the surrounding grass was gone due to the earthmover that was needed to build the terrace, we had to be patient and wait a little longer until everything was green and in full bloom again. We absolutely love the structure of the walls of the stable buildings that  are surrounding the terrace and are already looking forward to next summer when the hop and the vine will grow even more along these rustic walls. For the terrace furniture we wanted to have something cozy yet beautiful and decided to go for the bamboo furniture from Tine K Home.

We’ve been sitting on the terrace until it got dark and are more than happy about our favorite new spot. Pear-Apple-Berry-Pie

Ingredients for a 24cm-ø-springform pan

Gluten-free Pie Crust

  • 300g glutenfree flour (we mixed 2/3 rice flour with 1/3 buckwheat flour)
  • 200g butter, cold
  • 1 egg (size M/L)
  • 1 tbsp sugar
  • 1 pinch of salt
  • 1/2 tsp cardamom
  • 6-8 tbsp water

Filling

  • 250g thin apple slices
  • 250g thin pear slices
  • 250g frozen berry mix
  • 40ml grape juice (or another juice, e.g. apple juice)
  • 1 tbsp lemon juice, best freshly pressed
  • 1 piece of ginger, thumb size
  • 180g cane sugar
  • 3 tbsp cornstarch
  • 2 tsp Ceylon cinnamon
  • 1/2 tsp ground vanilla
  • 1 pinch ground cloves

Additionally

  • 1 egg white (or 1 egg)
  • 1 tbsp cane sugar

Blend rice flour, buckwheat flour, cardamom and salt in a mixing bowl. Cut the cold butter in small cubes, add to the flour mix and knead in for 1 minute, then knead in the egg. Add tablespoon by tablespoon of cold water to make the pastry more smooth, then flatten the pastry with your hands, wrap it in clingfilm and leave in the fridge for 1 hour (or longer). Line the bottom of the springform pan with baking paper, grease and flour the sides (leave the springform pan in the fridge until you fill it). Meanwhile peel and decore the apples and pears, then cut them in thin wedges and sprinkle fresh lemon juice on them, so they won´t turn brown. Peel and grate the ginger, add to the apples. Blend the cane sugar, cornstarch, cinnamon, clove and vanilla and mix thoroughly with the the fruits. In the end fold in the frozen berries and the grape juice. After the cooling time roll out the pastry: take two thirds of the pastry from the fridge, knead it a bit smoother and roll it thin out on a floured baking paper (flour the top as well). Place the springform pan upside down on the pastry and flip again together with the pastry and baking paper, so the pastry is falling in the springform pan – remove the baking paper and press the pastry on the springform pan – the crust should be 3-4 cm high, cut off the excess parts. Prick the bottom several times with a fork and fill in the fruit filling as evenly as possible. Preheat the oven to 200°C top/bottom heat. Then take the pastry leftovers out of the fridge, knead it and roll out as the other pastry before and cut out the pastry top/lattice stripes and decorate your pie with the pastry. Strengthen your crust at the sides with some leftover pastry, if you want. In the end whisk an egg or egg white and brush the pastry with it. Then sprinkle the 1 tbsp cane sugar on the pastry top. Bake the apple pie for 40-45 minutes until the pastry turned golden brown (if the pastry is getting burned too quickly, just place a piece of tinfoil on top). Let the gluten-free apple pie rest for 30 minutes before you cut it.

German Translation

Wir freuen uns sehr heute endlich unsere neu gebaute Terasse mit Euch zu teilen! Es fing alles damit an, dass letzten Herbst unser geliebter, riesiger Walnussbaum bei einem starken Sturm umfiel. Der Baum lag uns sehr am Herzen und wir waren sehr betrübt, als wir den schönen, alten Baum im Hof liegen sahen. Viele wunderbare Sommerdinner wurden unter dem Baum genossen und egal zu welcher Jahreszeit, es war immer wunderbar diesen kraftvollen Walnussbaum im Garten zu sehen. In diesem Post vom letzten Jahr könnt Ihr ein bisschen sehen wie der Hof mit dem Baum aussah. Hinter dem Walnussbaum war immer ein etwas versteckter Spot, der zugeschüttet mit alten Steinen und überwuchert mit Unkraut war. Eigentlich einfach nur ein riesiges Chaos! Nachdem der Baum umgefallen war, wurde diese Ecke natürlich sichtbar und ein wichtiger Teil des Gartens  – und den wollten wir schön gestalten. Der Plan war, die Terasse bis zum Sommer fertig zu haben, aber alles hat viel länger gedauert. Da das ganze Grass im Umfeld durch einen Bagger, quasi nicht mehr existent war, mussten wir uns etwas gedulden bis alles wieder in voller Blühte war. Wir freuen uns jetzt schon auf den nächsten Sommer und genießen es sehr, dass das Herbstwetter sich gerade von seiner besten Seite zeigt. Was uns besonders gefällt ist das schöne Mauerwerk der umliegenden Stallgebäude, dass jetzt so schön sichtbar geworden ist. Bei den Terassenmöbeln haben wir etwas gesucht, das gemütlich ist und trotzdem schön und zurückhaltend aussieht und sind bei Tine K Home fündig geworden.

Wir haben dort gemeinsam gesessen bis es dunkel wurde und uns alle so über diesen neuen Ort gefreut! Birnen-Apfel-Beeren-Pie

Zutaten für eine 24cm-ø-Springform

Glutenfreier Mürbeteig

  • 300g glutenfreies Mehl (wir haben 2/3 Reismehl mit 1/3 Buchweizenmehl gemischt)
  • 200g Butter, kalt
  • 1 Eier (Gr. M/L)
  • 1,5 EL Zucker
  • 1 Prise Salz
  • 1/2 TL gemahlener Kardamom
  • 6-8 EL Wasser

Füllung

  • 250g Apfelspalten
  • 250g Birnenspalten
  • 250g TK-Beeren-Mischung
  • 40ml Traubensaft (oder ein anderer Saft, z.B. Apfelsaft)
  • 1 EL Zitronensaft (am besten frisch gepresst)
  • 1 Stück Ingwer, daumengroß
  • 180g Rohrzucker
  • 3 EL Maisstärke
  • 2 TL Ceylon-Zimt
  • 1/2 TL gemahlene Vanille
  • 1 Prise Nelkengewürz

Zusätzlich

  • 1 Eiweiß (oder 1 Ei)
  • 1 EL Rohrzucker

Reismehl, Buchweizenmehl, Zucker, Kardamom und Salz in einer Rührschüssel vermischen. Die kalte Butter in kleine Würfel schneiden, hinzufügen und 1 Minute zügig unterkneten, dann das Ei unterkneten. Esslöffelweise Wasser hinzufügen, bis der Teig geschmeidiger ist, dann den Teig flach drücken und in Frischhaltefolie verpackt für 1 Stunde (oder länger) in den Kühlschrank legen. Den Boden der Springform mit Backpapier auslegen, die Seiten buttern und mehlen (Springform in den Kühlschrank stellen bis der Teig ausgerollt ist). Währenddessen die Äpfel und Birnen schälen, in feine Spalten schneiden und mit Zitronensaft beträufeln, damit sie nicht braun werden. Dann den Ingwer schälen, fein reiben und untermischen. Nun den Zucker mit der Maisstärke, dem Zimt, dem Nelkengewürz und der Vanille mischen und gründlich untermischen. Zum Schluß die TK-Beeren und den Traubensaft unterheben. Nach der Kühlzeit zwei Drittel des Teigs aus dem Kühlschrank nehmen, geschmeidig kneten, auf ein bemehltes Stück Backpapier legen, etwas mit Mehl bestreuen und dünn ausrollen. Die Springform verkehrt herum darauf legen und zusammen mit dem Teig und dem Backpapier vorsichtig umdrehen, sodass der glutenfreie Mürbeteig in die Springform fällt. Den Teig andrücken. Der Rand sollte etwa 3-4cm hoch sein, den überschüssigen Rand wegschneiden. Den Boden mit einer Gabel mehrmals einstechen. Auf dem Boden die Fruchtfüllung verteilen, so gleichmäßig wie möglich. Ofen auf 200°C Ober-/Unterhitze vorheizen. Jetzt den restlichen Teig aus dem Kühlschrank nehmen, dünn ausrollen und zusätzliche Verzierungen für den Kuchendecke zurechtschneiden und auf der Füllung anordnen und den Rand mit etwas übrigem Teig verstärken. Zum Schluß ein Ei (oder Eiweiß) verquirlen und die Oberseite des Teigs damit bestreichen und mit dem 1 EL Rohrzucker bestreuen. Den glutenfeien Apfel-Birnen-Beeren-Pie für 40-45 Minuten backen bis die Kruste schön braun wird (falls die Kruste zu schnell braun wird, die Oberseite mit einem Stück Alufolie bedecken). Den glutenfreien Apple Pie 30 Minuten abkühlen lassen vor dem Anschneiden.
