At the moment it feels like spring is full swing, but next week it will get colder and rainy again, so what could be better than to cuddle up at home and have a breakfast in bed. Almost nothing is more delicious for us at the moment for the start of the day than crepes, besides a gluten-free crepe cake of course! We absolutely love gluten-free crepes and have already shared a gluten-free crepe cake recipe last spring with you guys here. We thought it’s about time to create a new one and e voilá here you go for our gluten-free blood orange-ginger-crepe cake. The combination of blood oranges and ginger is pure heaven and you can also use the blood-orange ginger jam for bread, waffles or pancakes, it’s such a lovely breakfast treat in addition to almost everything! For this photo shoot we moved our bed into the dining room and it was such a nice atmosphere as well. Gluten-free Blood Orange-Ginger-Crepe Cake

Gluten-free Crepes (20-22 pieces)

  • 6 eggs (size m/l)
  • 400g white rice flour
  • 700ml milk of your choice (we took 200ml coconut milk and 500ml rice milk)
  • 90g butter (or margarine)
  • 1 pinch of salt
  • coconut oil or butter (for frying)

Blood Orange-Ginger-Jam

  • 400ml blood orange juice, pressed and sieved (we took 8 small blood oranges)
  • 20g finely grated ginger
  • 400g gelling sugar/jam sugar (ratio 1:1)

Filling

  • 350-400g blood orange jam
  • 600g cream cheese (or goat cream cheese)
  • 1 pinch ground vanilla

Topping

  • a few blood orange slices
  • a few strawberries
  • mint leaves
  • 2 tbsp bee pollen (optional)

Prepare the blood orange jam the day before you make the crepe cake, so it has enough time to set. Press the blood oranges, then sieve the juice. Fill the 400ml blood orange juice in a large cooking pot, add the grated ginger and the jam sugar and cook for a few minutes (follow the preparation instruction of your jam sugar) and fill into a jar. The next day start with the crepes: melt the butter slowly, then let it cool down for a moment. Beat the eggs with a hand mixer for 30 seconds. Then beat in the salt and melted butter. Afterwards beat in the milk. Add the rice flour tablespoon by tablespoon to the liquid ingredients and stir in with a whisk. Let the batter rest for 15 minutes. Then heat a non-stick skillet to middle heat and add a bit of coconut oil or butter. Fry the crepes one after the other by pouring the batter with a ladle into the skillet and swirl to completely cover the bottom of the pan. Flip the crepe after 1 minute. Fry all crepes this way. Let them cool down, otherwise the cream cheese and jam might melt. Afterwards start with the filling. First stir the ground vanilla into the cream cheese. Then place the first crepe on a cake stand and spread one little tablespoon cream cheese on top and then a bit blood orange jam. Put the second crepe on another even plate or cutting board, spread cream cheese and jam on top and place the crepe on the first one. Continue with that procedure with all the other crepes. Place the crepe cake in the fridge until 20 minutes before serving. Decorate with blood orange slices, strawberries and mint leaves. In the end sprinkle a few bee pollen on top and serve at room temperature.

Wir freuen uns heute ein neues Rezept mit Euch zu teilen und Fotos von einem gemütlichen Frühstück im Bett. Momentan ist hier schönstes Frühlingswetter, aber nächste Woche scheint es wieder etwas kälter und regnerisch zu werden. Was gibt es also besseres als es sich im Bett mit einem leckeren Frühstück bequem zu machen! Glutenfreie Crêpes lieben wir momentan über alles, das kann nur noch von einer glutenfreien Crêpe-Torte getoppt werden. Letzten Frühling haben wir auch schon ein leckeres glutenfreies Crêpe-Torten-Rezept mit Euch geteilt, schaut mal hier. Es war also höchste Zeit mal wieder ein neues Crêpe-Rezept zu entwickeln und e voilá hier ist unsere glutenfreie Blutenorangen-Ingwer-Crêpe-Torte für Euch! Die Kombination aus Blutorangen und Ingwer ist einfach himmlisch und diese leckere Marmelade könnt Ihr natürlich auch bestens zu Brot, Waffeln oder anderen Leckereien genießen. Für dieses Fotoshooting haben wir unser Bett ins Esszimmer befördert und wollten es fast nicht wieder zurückstellen, ein wirklich sehr charmantes Plätzchen! Glutenfreie Blutorangen-Ingwer-Crêpe-Torte

Glutenfreie Crêpes (20-22 Stück)

  • 6 Eier (Gr. M/L)
  • 400g helles Reismehl
  • 700ml Milch nach Wahl (wir haben 200ml Kokosmilch und 500ml Reismilch gemischt)
  • 90g Butter (oder Margarine)
  • 1 Prise Salz
  • Kokosöl (zum Ausbacken)

Blutorangen-Ingwer-Marmelade

  • 400ml Blutorangensaft, gepresst und gesiebt (wir haben 8 kleine Blutorangen verwendet)
  • 20g fein geraspelter Ingwer
  • 400g Gelierzucker 1:1

Füllung

  • 350-400g Blutorangen-Marmelade
  • 600g Frischkäse (oder Ziegenfrischkäse)
  • 1 Prise gemahlene Vanille

Topping

  • ein paar Blutorangenscheiben
  • 1 handvoll Erdbeeren
  • frische Minze
  • 2 TL Blütenpollen (optional)

Die Blutorangen-Marmelade am Vortag zubereiten, damit sie in Ruhe gelieren kann. Die Blutorangen pressen, den Saft sieben und anschließend in einen großen Kochtopf füllen. Den geraspelten Ingwer und Gelierzucker hinzufügen und für ein paar Minuten sprudelnd aufkochen (die genaue Dauer steht auf dem jeweiligen Gelierzucker). Dann in ein Vorratsglas füllen. Am nächsten Tag die Crepes zubereiten: die Butter langsam schmelzen und kurz abkühlen lassen. Die Eier mit einem Handmixer 30 Sekunden lang verschlagen. Dann das Salz und die abgekühlte geschmolzene Butter unterschlagen. Jetzt die Milch unterschlagen. Das Reismehl esslöffelweise mit einem Quirl unter die flüssigen Zutaten rühren. Danach den Teig 15 Minuten ruhen lassen. Anschließend in einer beschichteten Pfanne etwas Kokosöl erwärmen. Dann bei mittlerer Hitze den glutenfreien Crêpe-Teig portionsweise zu hauchdünnen Crêpes ausbacken – am besten mit einer Hand mit einer Schöpfkelle hineingiessen und die Pfanne mit der anderen Hand halten und schnell schwenken damit der Teig sich gleichmäßig verteilt. Nach 1 Minute den Crêpe wenden. So alle Crêpes ausbacken. Für die Füllung den Frischkäse mit einer guten Prise Vanille verrühren. Dann den ersten Crêpe auf einen Kuchenteller legen und zuerst einen gestrichenen Esslöffel Frischkäse und dann etwas Blutorangen-Marmelade darauf verstreichen. Den zweiten Crêpe auf einem separaten Teller bestreichen und dann auf den ersten Crêpe legen. So mit allen Crêpes verfahren. Die glutenfreie Crêpe-Torte bis 20 Minuten vor dem Servieren in den Kühlschrank stellen. Anschließend mit Blutorangenscheiben, Erdbeeren und Minze dekorieren und ein paar Blütenpollen darauf verteilen.
