This is not an easy recipe but it’s worth every step you have to make! We already posted the recipe for this delicious gluten-free chocolate mousse cake on Instagram last week, but we want to share it here with you as well. Just imagine the rich taste of chocolate combined with fluffy cream layers – do we need to say more? Perfect for a cozy afternoon, especially now where it still feels like summer hasn’t arrived yet. But we already picked the first lovely flowers in the garden and some pretty pink blossoms from our neighbors tree, so summer can’t be to far away 🙂 We hope you guys enjoy the recipe!

Gluten-free Chocolate Mousse Cake with Hazelnut/h3>

Ingredients for a 20cm springform pan

Hazelnut chocolate base

90g cold butter
75g ground hazelnuts
75g gluten-free flour mix from Bauckhof “Universal”
50g sugar
12g raw cocoa
1 pinch of salt

Hazelnut cream

70g hazelnut butter
100g mascarpone
30g sugar
1 pinch of ground vanilla
100g heavy cream
100ml milk or plant milk
2-3g agar-agar * (amount varies depending on the brand)

Chocolate mousse layer

200g dark chocolate
250g heavy cream
2 eggs
100g sugar
100ml milk or plant milk
5g agar-agar * (amount varies depending on the brand)

Chocolate mirror glaze

kitchen thermometer (if you don’t have one, you can simply decorate the cake with cocoa powder and grated chocolate)
1 packet of ground gelatine powder (sufficient for 500ml)
125ml water
170g sugar
150g dark chocolate
20g baking cocoa
60ml heavy cream (room temperature)

Topping

100g chopped hazelnuts
30g whole hazelnuts
1 tbsp grated chocolate

* Of course you can also use gelatine, we just try to avoid it as often as possible 🙂

Hazelnut chocolate base
Cut the cold butter into small cubes and knead with the remaining ingredients. Line the bottom of the springform pan with baking paper, butter the sides and sprinkle with powdered sugar instead of flour. Spread the pastry evenly on the base and press down. Place in the fridge for 1 hour, then bake for 12 minutes at 180°C/360°F, let cool down completely and place in the fridge until the bottom is firm.
Hazelnut cream
Mix the hazelnut butter with the mascarpone, sugar and vanilla. Whip the 100g heavy cream for the hazelnut cream and the 250g heavy cream for the chocolate mousse together, then weigh the amount for the chocolate mousse and place in the refrigerator. Mix milk with agar in a small saucepan, bring to the boil for 1 minute – stir constantly, then pour into a mixing bowl and quickly stir in the mascarpone cream in 2 portions with a whisk, then fold in the whipped cream. Pour the hazelnut cream into the springform pan, smooth it out and put it back in the fridge.
Chocolate mousse layer
Separate the eggs, beat the egg whites until stiff, place in the refrigerator with the whipped cream. Finely chop the chocolate, melt it in a metal bowl over hot water (not a drop of water should get into the chocolate), then take it out of the water bath and let it cool down lukewarm. Beat the egg yolks with the sugar over the water bath until they are frothy and creamy (the metal bowl should not touch the hot water to prevent the egg yolk from curdling). Pour the egg cream into a mixing bowl and fold in the liquid chocolate with a whisk. Mix the milk with the agar in a small saucepan, bring to the boil for 1 minute – stir constantly, then pour into a mixing bowl and quickly stir in the chocolate cream in 2 portions with a whisk, then fold in the whipped cream in 2 portions, finally fold in the egg whites. Pour the chocolate mousse into the springform pan, smooth it out and put it back in the refrigerator for 3-4 hours. Then carefully remove the springform pan and the baking paper and place the cake on a plate in the freezer for a few hours (this is important if you want to apply the mirror gasur).
Chocolate mirror glaze
Take the cake out of the freezer and place it on a small plate or something similar that is a touch smaller than the cake base, then place it on an upturned bowl or something similar, underneath you can put a baking sheet, where the excess chocolate mirror glaze can drip on. Finely chop the chocolate. Heat the water and sugar in a saucepan to exactly 103°C/218°F, warm the mix up slowly and stir constantly so that the sugar dissolves completely. Remove from the heat. Then stir in the chocolate until it has melted, then stir in the heavy cream and the baking cocoa. When the temperature is around 60°C/140°F, stir in the ground gelatin until it has dissolved. Pour the glaze into a high measuring cup, finely puree the glaze again. Then pour through a sieve and wait a moment for the mirror glaze to cool to 32°C/90°F, then spread the glaze over the cake, starting from the middle, until all sides are completely covered. Decorate the gluten-free chocolate mousse cake with chopped and whole hazelnuts and grated chocolate and place in the refrigerator for a few hours so that it thaws gently.

Dieser Schokokuchen ist definitiv etwas aufwändiger, aber jeder Schritt ist es wert!  Wir haben das Rezept schon auf Instagram geteilt, aber für alle, die es noch nicht entdeckt haben, ist es jetzt hier noch mal. Stellt Euch einfach den intensiven Geschmack von bester Schokolade, kombiniert mit fluffigen, cremigen Lagen vor – müssen wir da noch mehr sagen? 🙂 Perfekt für einen gemütlichen Nachmittag, gerade jetzt wo der Sommer noch auf sich warten lässt und wir quasi Dauerregen haben. Auf der andern Seite haben wir die ersten Blumen im Garten gepflückt und uns die schönen Rosinen Blüten vom Baum des Nachbarn gemopst – so weit weg kann der Sommer also nicht sein. Glutenfreier Schoko-Mousse-Torte mit Haselnuss

Zutaten für eine 20cm Springform

Haselnuss-Schoko-Boden

90g kalte Butter
75g gemahlene Haselnüsse
75g glutenfreie Mehlmischung von Bauckhof „Universal)
50g Zucker
12g Rohkakao
1 Prise Salz

Haselnuss-Creme

70g Haselnussmus
100g Mascarpone
30g Zucker
1 Prise gemahlene Vanille
100g Schlagsahne
100ml Milch oder Pflanzenmilch
2-3g Agar-Agar* (Menge variiert je nach Anbieter))

Schokoladen-Mousse-Schicht

200g Zartbitterschokolade
250g Schlagsahne
2 Eier
100g Zucker
100ml Milch oder Pflanzenmilch
5g Agar-Agar* (Menge variiert je nach Anbieter)

Schokoladen-Spiegelglasur

Küchentermometer (wer keins besitzt, kann die Torte auch einfach mit Kakaopulver und Schokoraspeln dekorieren)
1 Pck. Gelatine, gemahlen (ausreichend für 500ml)
125ml Wasser
170g Zucker
150g Zartbitterschokolade
20g Backkakao
60ml Schlagsahne (zimmerwarm)

Topping

100g gehackte Haselnüsse
30g Haselnusskerne
1 EL Schoko-Raspeln

*natürlich kann man auch Gelatine verwenden, wir versuchen nur weitesgehend darauf zu verzichten, wenn möglich

Haselnuss-Schoko-Boden
Kalte Butter in kleine Würfel schneiden und mit den restlichen Zutaten verkneten. Den Boden der Springform mit Backpapier auslegen, die Seiten buttern und mit Puderzucker anstelle von Mehl bestreuen. Den Teig gleichmäßig auf dem Boden verteilen und andrücken. Für 1 Stunde in den Kühlschrank stellen, dann für 12 Minuten bei 180°C backen, komplett abkühlen lassen und in den Kühlschrank stellen, bis der Boden fest ist.
Haselnuss-Creme
Haselnussmus mit Mascarpone, Zucker und Vanille verrühren. Die 100g Schlagsahne für die Haselnuss-Creme und die 250g Schlagsahne für das Schoko-Mousse zusammen aufschlagen, dann die Menge für das Mousse abwiegen und in den Kühlschrank stellen. Milch mit Agar in einem kleinen Topf verrühren, 1 Minute aufkochen – dabei ständig rühren, dann in eine Rührschüssel füllen und die Mascarpone-Creme in 2 Portionen zügig mit einem Schneebesen unterrühren, dann die Schlagsahne unterheben. Haselnuss-Creme in die Springform füllen, glatt streichen und zurück in den Kühlschrank stellen.
Schokoladen-Mousse-Schicht
Eier trennen, Eiweiß steif schlagen, zur Schlagsahne in den Kühlschrank stellen. Schokolade fein hacken, in einer Metallschüssel über einem Wasser schmelzen (dabei darf kein Tropfen Wasser in die Schokolade gelangen), danach aus dem Wasserbad nehmen und lauwarm abkühlen lassen. Über dem Wasserbad das Eigelb mit dem Zucker schaumig-cremig schlagen (dabei sollte die Metallschale nicht das Wasser nicht berühren, sodass ein Stocken des Eigelbs verhindert wird). Eier-Creme in eine Rührschüssel füllen und Schokoladen mit einem Quirl unterheben. Milch mit Agar in einem kleinen Topf verrühren, 1 Minute aufkochen – dabei ständig rühren, dann in eine Rührschüssel füllen und die Schoko-Creme in 2 Portionen zügig mit einem Schneebesen unterrühren, dann die Schlagsahne in 2 Portionen unterheben, zum Schluss den Eischnee. Schoko-Mousse in die Springform füllen, glatt streichen und zurück in den Kühlschrank stellen für 3-4 Stunden. Anschliessend vorsichtig die Springform und das Backpapier entfernen und den Kuchen auf einem Teller für ein paar Stunden in den Gefrierschrank stellen (das ist wichtig, wenn man die Spiegelgasur aufbringen möchte).
Schoko-Spiegelglasur
Den Kuchen aus dem Gefrierschrank holen und auf einen kleinen Teller o.ä. setzen, der einen Hauch kleiner als der Tortenboden ist, diesen wiederum auf eine umgedrehte Schüssel o.ä. stellen, darunter auf ein teifes Backblech, damit die überschüssige Schokoladen-Spiegelglasur gut ablaufen kann.
Schokolade fein hacken. Wasser und Zucker in einem Topf auf exakt 103°C erhitzen, dabei langsam erwärmen und ständig rühren, damit der Zucker sich komplett auflöst. Dann die Schokolade unterrühren, bis sie geschmolzen ist, anschliessend die zimmerwarme Schlagsahne und den Backkakao unterrühren. Wenn die Temperatur der Masse bei ca. 60°C ist, die gemahlene Gelatine unterrühren, bis sie sich aufgelöst hat. Glasur in ein hohes Gefäß mit Aussguss füllen, nochmals die Glasur fein pürieren. Dann durch ein Sieb giessen und kurz abwarten, bis die Spiegelglasur auf 32°C abgekühlt ist, dann die Glasur von der Mitte angefangen über der Torte verteilen, bis alle Seiten komplett bedeckt sind. Die glutenfreie Schokoladen-Mousse-Torte mit gehackten und ganzen Haselnusskernen und Schokoraspeln dekorieren und für ein paar Stunden in den Kühlschrank stellen, damit er schonend auftaut.
