But first of all: Happy New Year to you all!! We can’t thank you enough for all your support and are so much looking forward to share many more recipes and food stories with you this year! We spent New Year’s Eve in our favorite city in the world: Copenhagen. After a very exciting, intense and busy year it was so relaxing to slow down a bit and just enjoy the vibe of Copenhagen, meet friends, drive to the beach with the dogs, read books, visit our favorite design shops and enjoy good food. And after some calm days we were so happy to start the new year with this magical shooting! Together with our dearest friend and talented photographer Signe Bay, we drove from Copenhagen to Heatherhill – a very special place close to the ocean, where you have a fantastic view and a wonderful atmosphere! It was a rather cold day, but the light was simply divine. We’ve already made a gluten-free apple peanut butter cake in Denmark some time ago (have a look here) but this time Nora also turned it into a vegan recipe. The cake has a wonderful texture and is just so delicious. We made the vegan apple peanut butter cake already twice this year and also had it for New Years Eve and for our family Christmas Dinner as a dessert – you can see it’s a new favorite of ours and we are sure you will love it as well!

Gluten-free and Vegan Apple Peanut Butter Cake

Ingredients for a 26cm-ø springform pan

  • 250g peanut butter, unsweetened – creamy and salted
  • 150g ripe banana (about 1 large banana)
  • 150g maple syrup
  • 50-100ml coconut milk (or almond milk or similar)
  • 120g rice flour
  • 2 tsp organic baking powder
  • 1,5 tsp cinnamon
  • 1 pinch ground vanilla
  • 3 apples
  • 1 lemon

Preheat the oven to 180°C (320°F) top/bottom-heat. Line the bottom of the springform pan with baking paper, grease and flour the sides. Wash the apples, cut two apples into very thin slices and mix them with the juice of half a lemon. Peel the third apple and cut it into very small cubes and mix with the juice of the other lemon half. Purée the banana, stir in the maple syrup and ground vanilla with a spatula or cooking spoon. Then stir in the coconut milk – depending on the firmness add 50ml or 100ml coconut milk (add 50ml, if the peanut butter is very creamy and liquid; add 100ml, if it´s more firm). Blend the dry ingredients (rice flour, baking powder, cinnamon). Fill the peanut butter into a mixing bowl and stir it for a moment, then stir in the banana-mix and afterwards the flour mix (use a silicon spatula or cooking spoon – just stir as long as everything is mixed well). Now fold in the apple cubes (sieve the lemon juice before, but keep it for later) and fill the batter into the springform pan. Press the apple slices lightly into the batter and bake the vegan apple peanut butter cake for 45-55 minutes – in between brush the apple slices with the remaining lemon juice. Afterwards let the apple peanut butter cake cool down on a cooling rack and brush the apple slices and top with a bit maple syrup.

Wir freuen sehr heute den ersten Blogpost im neuen Jahr – von einem wundervollen Shooting in Dänemark – mit Euch zu teilen! Aber als erstes: Euch allen ein fantastisches neues Jahr!! Wir danken Euch so sehr für Eure liebevolle Unterstützung und freuen uns viele weitere Rezepte und “Food Stories” mit Euch in diesem Jahr zu teilen. Wir haben Silvester und die erste Woche im neuen Jahr in unserer absoluten Lieblingsstadt verbracht: Kopenhagen. Nach einem aufregenden, intensiven und beschäftigten Jahr hat es so gut getan ein paar entspannte Tage zu verbingen, den Vibe von Kopenhagen zu genießen, Freunde zu treffen, mit den Hunden zum Strand zu fahren, Bücher zu lesen, unsere liebsten Design Shops zu besuchen und sich mit gutem Essen zu verwöhnen. Und nach ein paar ruhigen Tagen waren wir voller Tatendrang und so glücklich das neue Jahr mit diesem magischen Shooting zu beginnen! Zusammen mit unserer guten Freundin und talentierten Fotografin Signe Bay, sind wir von Kopenhagen nach Heatherhill gefahren – ein ganz besonderer Ort am Meer, wo man eine wunderschöne Aussicht hat und eine einzigartige Stimmung spüren kann. Es war zwar ein eher kühler Tag, aber das Licht war einfach himmlisch! Wir haben schon einmal einen glutenfreien Apfel-Erdnussbutter-Kuchen in Dänemark gebacken (schaut mal hier), aber dieses Mal hat Nora eine vegane Variante gebacken. Der Kuchen hat eine wundervolle Textur und schmeckt einfach köstlich! Wir haben ihn dieses Jahr schon zwei Mal gebacken und es gab ihn an Silvester und Weihnachten als Dessert – wie Ihr seht, ein neuer Lieblingskuchen und wir sind uns sicher Ihr werdet ihn auch lieben!

Veganer und glutenfeier Apfel-Erdnussbutter-Kuchen

Zutaten für eine 26cm-ø Springform

  • 250g Erdnussbutter, ungesüßt – fein, gesalzen
  • 150g reife Banane (etwa 1 große Banane)
  • 150g Ahornsirup
  • 50-100ml Kokosmilch (oder Mandelmilch o.ä.)
  • 120g Vollkornreismehl
  • 2 TL Weinsteinbackpulver
  • 1,5 TL Zimt
  • 1 Prise gemahlene Vanille
  • 3 Äpfel
  • 1 Zitrone

Den Ofen auf 180°C Ober-/Unterhitze vorheizen. Den Boden der Springform mit Backpapier auslegen, die Seiten einfetten und mehlen. Die Äpfel waschen, 2 Äpfel in hauchdünne Spalten schneiden, in eine Schüssel legen, mit dem Saft eine halben Zitrone beträufeln und darin wenden. Den dritten Apfel schälen und in sehr kleine Würfel schneiden, ebenfalls mit Zitronensaft vermengen. Die Banane pürieren, den Ahornsirup und die Vanille mit einem Quirl oder Löffel unterrühren, dann die Kokosmilch unterrühren (je nach Festigkeit der Erdnussbutter 50ml oder 100ml hinzufügen – bei relativ flüssiger Erdnussbutter nur 50ml und bei eher cremig-fester 100ml hinzufügen). Trockene Zutaten mischen (Mehl, Zimt und Backpulver). Die Erdnußbutter in einer Rührschüssel verrühren, dann die Bananen-Mischung unterrühren, danach die trockenen Zutaten unterrühren (am besten mit einem Spatel oder Kochlöffel – wichtig: nur solange verrühren, bis alles miteinander vermischt ist). Nun die Apfelstückchen (den Zitronensaft vorher absieben, aber noch beiseite stellen für später) unterheben und den Teig in die Springform füllen. In die Oberseite des Teigs die Apfelspalten leicht hineindrücken. Den veganen Apfel-Erdnußbutter-Kuchen für 45-55 Minuten backen – zwischendurch die Apfelspalten mit dem restlichen Zitronensaft bestreichen (mit einem Silikonpinsel). Anschließend den Apfel-Erdnußbutter-Kuchen auf einem Kuchengitter abkühlen lassen und die Apfelspalten bzw. die Oberseite des Kuchens mit etwas Ahornsirup bestreichen.
