The sun was shining, we had 30°C and were collecting tons of  currants in the garden. With all those currants Nora made this delicious summer-dessert. Here you go for the recipe:

Coconut Panna-Cotta with Currant Jelly and White Chocolate Flakes

Ingredients (for 6 glasses)

Coconut-panna-cotta

  • 400ml coconut milk
  • 200ml heavy cream
  • 60g sugar
  • 1/2 vanilla bean
  • 1 pk agar-agar

Currant jelly

  • 500g white or red currants
  • 125ml water
  • 3tbsp sugar
  • 1/2 pck agar-agar

Decoration

  • 1 handful fresh currants
  • 1 handful white chocolate flakes (scrape flakes off with a large knife from a white chocolate bar)

Bring coconut milk, 100ml heavy cream, sugar and vanilla pulp in a small pot to boil let simmer for a few minutes. Use a small bowl to mix the agar-agar with the remaining heavy cream, add to the mixture in the pot and stir in. Let the coconut-milk-cream simmer for 2min, remove from the stove and fill into glasses. Leave the panna cotta in the glasses cool down for 30min and put the glasses afterwards for 2-3hours in the fridge. After time is over prepare the jelly: use a fork to take off the currants from their stem, wash the currants, bring them plus the sugar and water to boil and let simmer for 3-5min. Sieve the juice from the mix, stir in the agar-agar, bring the juice-agar-agar-mix to boil again, let simmer for 2min and fill on top of the panna cotta. Leave the jelly cool down for 15min before you place it in the fridge for at 2hours (cover the glasses). Garnish with fresh currants and chocolate flakes.

German Translation

Eine ganze Woche lang haben wir jetzt Familie auf dem Land besucht und würden am liebsten nie wieder zurück kehren, so idyllisch ist es hier. Bei bestem Sommerwetter haben wir im Garten tonnenweise Johannisbeeren gepfückt, aus denen Nora dann dieses wunderbar sommerliche Dessert zubereitet hat (was man bei den Temperaturen eigentlich morgens mittags und abends essen könnte). Also nichts wie los zum Rezept:

Kokos Panna-Cotta mit Johannisbeeren Gelee und weißer Schokolade

Zutaten (für 6 Gläser)

Kokos-Panna-Cotta

  • 400ml Kokosmilch
  • 200ml Schlagsahne
  • 60g Zucker
  • 1/2 Vanilleschote
  • 1 Pckch. Agaranta

Johannisbeer-Gelee

  • 500g weiße o. rote Johannisbeeren
  • 125ml Wasser
  • 3EL Zucker
  • 1/2 Pck Agaranta

Deko

  • 1 handvoll frische Johannisbeeren
  • 1 handvoll weiße Schokoraspeln (von einer Schokotafel mit einem großen Messer abkratzen)

Kokosmilch, 100ml Schlagsahne, Zucker und Vanillemark in einem kleinen Topf aufkochen und ein paar Minuten köcheln lassen. In einer kleinen Schüssel die restliche Schlagsahne mit dem Agaranta verquirlen und in den Topf geben und unterrühren. Alles für 2min köcheln lassen, vom Herd nehmen und in Gläser füllen. Gläser für 30min stehen lassen und anschliessend im Kühlschrank für 2-3 Stunden kühlen. Danach Gelee zubereiten: die Johannisbeeren mit einer Gabel von den Stielen befreien, waschen und in einem Topf mit dem Wasser und Zucker aufkochen und für 3-5min köcheln lassen. Alles durch ein Sieb geben. In den abgesiebten Johannisbeersaft agaranta einrühren, nochmals aufkochen für 2min und die Flüssigkeit in die Gläser füllen. 15min abkühlen lassen und für 2 Stunden leicht abgedeckt in den Kühlschrank stellen. Mit frischen Beeren und Schokoraspeln servieren.
