Berlin was not greeting them with the best weather, so we’ve done our best to make it as cozy as possible in our studio. Nora made her delicious pumpkin pancakes, Eva made very delicious candied nuts and Christiann cooked a very tasty apple chai compote – it was such a delicious combination and i’m sure you guys will love it as well. As it was already quite late the photos turned out very dark, like almost always during autumn/winter, but who says you can’t have pancakes for dinner, right?! After our little shooting we’ve lit some candels and enjoyed these delicious gluten free pumpkin pancakes – it almost felt like christmas, such a cozy and calm mood. We love to eat our pancakes (no matter if pumpkin, banana or what else) with coconut yoghurt, but of course you can use any yoghurt you like. Also, we still haven’t forgot about the “studio tour post” really hope to find the time for it soon and to show you guys more from our creative space. Pumpkin Pancakes with Apple Compote & Caramelized Rosmary Nuts

Pumpkin batter

(for at least 20 pancakes)

  • 300g hokkaido pumpkin, baked or steamed or 1 smaller pumpkin
  • 2 eggs (size l)
  • 2 cups milk (480ml milk – if you steamed the pumpkin you might need a bit less milk)
  • 2-4 tbsp melted butter
  • 140g buckwheat flour
  • 140g rice flour
  • 2-3 tbsp sugar
  • 3 tsp organic baking powder
  • 2 tsp cinnamon
  • 1 pinch of nutmeg
  • 1 pinch of salt
  • coconut oil (for browning)

Apple compote

(recipe by Christiann)

  • 4 c filtered water
  • 7 bags vanilla chai tea
  • 5 star anise
  • 3 cinnamon sticks
  • 1/2 tsp cinnamon
  • 1/3 c + 2 tbsp pure maple syrup
  • 1/2 tsp vanilla paste or 1 whole vanilla bean
  • 3 large organic apples, peeled and cut into 1/4″ slices

Candied nuts

(recipe by Eva)

  • 1 cup nuts (any kind)
  • 1/4 cup light brown sugar
  • 2 tablespoons unsalted butter
  • 2 teaspoons finely chopped fresh rosemary
  • 1 teaspoon flake sea salt
  • 1/2 teaspoon chili flakes

Topping

  • coconut yoghurt
  • pomegranate seeds
  • figs
  • maple syrup

Start preparing your pumpkin puree

Cut off a bit of the top and bottom of your pumpkin, then quarter the pumpkin and remove the inner parts. Bake quarters at 200degrees celsius top/bottom on a baking sheet until they are tender – about 30-40min (leave oven on, but switch to 100degrees – to keep your pancakes warm until you serve them).

Pumpkin pancake batter

Melt the butter. Blenderize baked/steamed pumpkin (with skin, because the hokkaido skin is edible) and blenderize with ½ cup milk. Seperate eggs and beat egg whites 1min until fluffy, then add the sugar while beating and beat for 2min longer. Beat the egg yolks for 1min until creamy, beat in the melted butter, then the milk and in the end the pumpkin purée until everything is well combined. Blend dry ingredients (flour, salt, baking powder, cinnamon and nutmeg). Stir dry ingredients into pumpkin-egg-milk-mixture just until combined (use a whisk or silicone spatula). In the end fold in gently the beaten egg white in 3 portions. Heat a pan with coconut oil and brown pancakes from both sides (you can use an ice cream scoop – right amount of batter and easy to shape the pancakes), then place in the oven until all pancakes are done. Serve pancakes with coconut yoghurt, apple compote, caramelized rosmary nuts, pomegranate seeds, figs and maple syrup (or whatever you prefer).

Apple compote

In small saucepan, heat water to simmer. Add tea bags and secure strings to side of pan for easy removal at a later time. After tea is allowed to steep for about 3 minutes, add star anise, cinnamon, maple syrup and vanilla. Stir to incorporate and then add apples. Stir again and allow to simmer on low heat with no lid for about 30 minutes, stirring every 10 minutes. Allow to cook until liquid has reduced and mixture is slightly thick. Remove from heat and lift out tea bags. Serve warm and store any leftovers in the fridge in an airtight container for up to 10 days.

Candied nuts

Line a baking sheet with parchment paper and set it aside. Melt the butter over medium high heat in a large frying pan. Add the brown sugar and stir to combine. Continue cooking until the sugar melts, about 3 to 5 minutes, stirring every minute. Add the nuts and cook until they are toasted and very fragrant, about 8 minutes, stirring every minute. If the pan begins smoking, remove it from the heat and stir it until it stops smoking, then place it back over the heat and continue stirring every minute until the nuts are sufficiently toasted. Empty the pan contents onto the parchment paper-lined baking sheet and spread the nuts mixture out evenly using a spatula. Immediately sprinkle with the rosemary, salt, and chili. Allow to cool to room temperature. Once cooled, break apart any large chunks of nuts into individual nuts and serve.

Vor knapp zwei Wochen haben wir einen sehr schönen Nachmittag mit Eva Kosmas Flores und Christiann Koepke in unserem Studio genossen. Wir folgen uns schon seit Ewigkeiten auf Instagram und es war wirklich ein Vergnügen sich nun endlich richtig kennenzulernen!! Wir lieben die Arbeiten der beiden sehr, schaut euch unbedingt ihre Blogs an, falls ihr sie noch nicht kennen solltet. Da Berlin Eva und Christiann nicht gerade mit dem besten Wetter empfangen hat, haben wir unser Bestes gegeben es uns so gemütlich wie möglich im Studio zu machen. Nora hat ihre köstlichen Kürbis-Pancakes zubereitet, Eva sehr leckere kandierte Rosmarin-Nüsse und Christiann ein wundervolles Apfel-Chai-Kompott – so eine himmlische Kombination, ich bin mir sicher ihr werdet es auch lieben!

Da es schon ziemlich spät war als wir alles zubereitet hatten, sind die Fotos etwas dunkel geworden, aber das kennt Ihr ja schon von uns in den Herbst-und Wintermonaten und wieso sollte man Pancakes nicht eigentlich auch zum Abendbrot essen können?! Als wir mit unserem kleinen Shooting fertig waren, haben wir ein paar Kerzen angezündet und uns die köstlichen glutenfreien Kürbis-Pancakes schmecken lassen, es hat sich fast schon weihnachtlich angefühlt, so eine gemütliche und ruhige Stimmung war das! Wir lieben es unsere Pancakes mit Kokosjoghurt zu essen (egal ob Kürbis-, Bananen- oder welche Pancakes auch immer), aber natürlich könnt Ihr jeden beliebigen Joghurt nehmen, der Euch schmeckt. Wir haben übrigens nicht vergessen einen Beitrag über unser Studio zu posten, damit Ihr mal ein paar mehr Eindrücke von unserem kreativen Raum bekommt, mal sehen wann es endlich so weit ist, das kommt ganz sicher bald. Kürbis-Pancakes mit Apfelkompott & karamellisierten Rosmarin-Nüssen

Kürbisteig (für min. 20 Pancakes)

Zutaten für den Teig

  • 300g Hokkaido Kürbis, gebacken oder gedünstet – etwa 1 sehr kleiner kürbis
  • 2 Eier (Gr. m/l)
  • 480ml Milch – falls der Kürbis gedünstet ist, dann evt. etwas weniger
  • 2-4 EL geschmolzene Butter
  • 140g Buchweizenmehl
  • 140g Reismehl
  • 2-3 EL Zucker
  • 3 TL Weinsteinbackpulver
  • 2 TL Zimt
  • 1 Prise Muskat
  • 1 Prise Salz
  • Kokosöl zum Ausbacken

Topping

  • Kokosjoghurt
  • Apfelkompott (im englischen Text findet ihr ein leckeres Rezept von Christiann)
    Karamellisierte Rosmarin-Nüsse (im englischen findet ihr ein tolles Rezept von Eva)
  • Granatapfelkerne
  • Feigen
  • Ahornsirup

Kürbis vorbereiten

Ofen auf 200°C Ober-/Unterhitze vorheizen. Den oberen und unteren Teil des Kürbis abschneiden, den Kürbis vierteln und das innere mit einem Esslöffel entfernen. Kürbisviertel auf ein Backblech mit Backpapier legen und für 30-40min backen bis der Kürbis weich ist (Ofen auf 100°C einstellen – die Pancakes werden später im Ofen warmgehalten bis alle fertig sind).

Kürbis-Pancakes zubereiten

Butter schmelzen. Weichen Kürbis (mit Haut – kann man beim Hokkaido mitessen) mit etwa 120ml Milch pürieren. Eier trennen und Eiweiss 1min aufschlagen, dann den Zucker hinzufügen und 2 weitere Minuten aufschlagen. Nun Eigelb 1min aufschlagen bis es cremig ist, dann die Butter unterschlagen, dann die Milch und zum Schluss das Kürbispürée bis alles gut vermischt ist. Trockene Zutaten mischen (Buchweizenmehl, Reismehl, Weinsteinbackpulver, Zimt und Muskat). Trockene Zutaten kurz in die Kürbismilch rühren bis alles gut vermischt ist  (am besten mit einem Schneebesen oder einem Silikonspatel). Zum Schluss den Eisschnee unterheben – in 3 Portionen. Eine Pfanne mit Kokosöl erwärmen und die Pancakes von beiden Seiten goldbraun ausbacken (wenn man keine Pancake-Pfanne hat, kann man gut einen Eislöffel verwenden um den Teig in die Pfanne zu füllen bzw. die Pancakes zu formen. Fertige Pancakes in den Ofen legen bis alle fertig sind. Pancakes je nach Geschmack toppen – wir haben sie mit Kokosjoghurt, Apfelkompott, karamellisierten Rosmarin-Nüssen, Granatapfelkernen, Feigen und Ahornsirup gegessen.
