We never leave the house without a breakfast and also love to always create different breakfasts through the week. Sometimes savory, sometimes sweet, sometimes it’s just a smoothie – we just love variety.

When we have breakfast with friends, it’s our favorite thing to decorate a big table with lots of different food – cheese, vegetable dips, fruits, bread, eggs and so on. And when the bread is homemade, it’s even more special! I have no idea, why we waited so long before we made our first gluten free bread, as this one turned out so well. It has a lot of seeds, but still it tastes like a bread and not like a cracker.

We used the new Rama with seasalt on top of the fresh baked bread, which was so delicious, but so simple. Rama has a wonderful selection to offer and new different sorts which you can explore here. For this post we enjoyed the one with butter and seasalt, which is my personal favorite as well. So simple and so good!

Our friends Rike and Nico stopped by at our studio in the end of the shooting and we all enjoyed this wonderful little breakfast gathering together. And the bread is officially approved by both as well 🙂

Homemade Vital Gluten-free Bread

Ingredients

  • 100g buckwheat flakes
  • 110g sunflower seeds
  • 110g pumpkin seeds
  • 110g flaxseeds
  • 60g sesame seeds
  • 60g pine nuts
  • 5 eggs (size m/l)
  • 1 1/4 tsp salt
  • 100ml olive oil (or rape seed oil, sunflower seed oil…)
  • 1 tbsp honey

Preheat oven to 160°C (320°F)  top/bottom heat. Butter a loaf pan, then line with baking parchment. Mix all ingredients except the eggs, the olive oil and the honey. stir the eggs thoroughly together with the olive oil and the honey, then stir into the dry ingredients. Fill dough into the loaf pan and bake bread for 60min. Let cool down for 15minutes, before you remove the bread carefully from the loaf pan. Let cool down completely.

Es ist etwas überraschend, dass wir noch nie unser eigenes glutenfreies Brot selbst gebacken haben (außer glutenfreiem Knäckebrot) und das, obwohl wir ja große Frühstücks-fans sind! Wir verlassen nie das Haus ohne ein Frühstück und wir lieben es sehr immer unterschiedliche Frühstücksvarianten über die Woche verteilt zu genießen – manchmal salzig, manchmal süß oder wenn es schnell gehen muss auch mal nur einen Smoothie.

Wenn wir gemeinsam mit Freunden frühstücken, haben wir es besonders gern den Tisch mit vielen Köstlichkeiten zu decken – verschiedene Sorten Käse, Gemüse -D ips, Früchte, Brot, Eier usw. – und wenn das Brot dann auch noch selbstgebacken ist, schmeckt es umso besser. Ich weiß wirklich nicht, weshalb wir so lange damit gewartet haben, denn das Ergebnis war wirklich toll! Es enthält zwar viele Kerne und Samen, schmeckt aber trotzdem wie ein Brot und nicht wie ein Cracker.

Als Aufstrich für das frisch gebackene Brot haben wir die neue Rama mit Meersalz verwendet. Rama hat eine wunderbare Auswahl an Aufstrichen, die ihr euch alle hier ansehen könnt. In diesem Post haben wir die Variante mit Butter und Meersalz genossen, mein persönlicher Favorit. So simpel und so gut!

Unsere Freunde Rike und Nico haben uns zum Ende des Shooting im Studio besucht und so haben wir alle diese schöne Frühstückstafel gemeinsam genossen. Das Brot ist von allen offiziell zugelassen und war ratz-fatz weg!

Glutenfreies vitales Körnerbrot

Zutaten

100g Buchweizenflocken
110g Sonnenblumenkerne
110g Kürbiskerne
110g Leinsamen
60g Sesam
60g Pinienkerne
5 Eier (gr. m/l)
1 1/4 tl Salz
100ml Olivenöl (oder Rapsöl, Sonnenblumenöl…)
1 EL Honig

Ofen auf 160°C Ober-/Unterhitze vorheizen. Eine Kastenform mit etwas Butter einstreichen, dann mit Backpapier auslegen. Alle Zutaten außer den Eiern, dem Olivenöl und dem Honig mischen. Die Eier mit dem Olivenöl und dem Honig gründlich verrühren, dann zu den trockenen Zutaten geben und gut vermischen. Teig in die Kastenform füllen und Brot für 60min backen, dann etwas abkühlen lassen, bevor man das Brot vorsichtig herauslöst. Anschliessend komplett abkühlen lassen.
