When Leerdammer asked us if we want to create a recipe for a “Cheesy X-mas Dinner” we were so excited. We already worked with Leerdammer together and created this amazing burger recipe for you guys last summer and also know the brand almost since our childhood! Creating a christmas recipe with this cheese is so easy, as you can use it for almost everything and it just tastes great! On their Instagram Account Leerdammer proposed 3 different vegetarian recipes, which we created and their followers could decide which one we should make at our Cheesy X-mas Dinner. The mushroom risotto with Leerdammer cheese was the clear winner and seriously guys, it tasted SO good! You can also see a recipe video of it here. We will definitely make this mushroom risotto for christmas eve this year (with red cabbage in addition), when we always have dinner with Laura’s family. For this little christmas gathering we invited our friends Ruby, Olivia and our friend and dear neighbour Rahel to our little home in the countryside. Ruby and Olivia from Mary Lennox helped us with the decoration and made the stunning hanging poinsettia installation above the dinner table and we and Rahel loved it so much!! It was a really cozy evening with the best company and everyone really loved the mushroom risotto. We always cook our risotto with full grain rice (which takes hours :)),  but of course you can also use regular risotto rice. You can really taste the mushroom aroma so well, which I absolutely love about this dish. The combination with the roasted hokkaido pumpkin is my favorite and afterward nothing was left 🙂 What are your favorite vegetarian christmas recipes? Gluten-free Mushroom Risotto with roasted Pumpkin & Leerdammer cheese

Ingredients for 2 persons

Mushroom Risotto

  • 200g risotto rice (you can take whole grain risotto rice as well as we did, it just can take 20-30 minutes longer then with regular risotto rice)
  • 200g mushrooms (champignons)
  • 2 red onions
  • 2 garlic cloves
  • 1 piece fresh ginger
  • 100g Leerdammer cheese
  • 200ml coconut milk
  • about 500ml vegetable broth
  • 1 bay leaf
  • 1 dried chilli pepper (or a pinch of cayenne pepper)
  • 1 pinch nutmeg
  • 2 rosemary sprigs
  • 1 tbsp chopped basil leaves
  • coconut oil (or rapeseed oil)
  • salt & pepper

Roasted Pumpkin

  • 1/2 small or medium sized hokkaido pumpkin
  • 2-3 tbsp rapeseed oil (or another vegetable oil)
  • 1 pinch cayenne pepper
  • 1 tsp curry spice
  • a bit seasalt

Additionally

  • 1 lemon or lime
  • 1 tbsp sesame seeds
  • a few sprigs fresh dill (or oregano, thyme…)

Start preparing the roasted pumpkin: peel the hokkaido pumpkin, remove the seeds with a tablespoon and cut the pumpkin in about 1,5cm thick wedges. Mix a marinade with rapeseed oil, cayenne pepper and curry spice, then toss the pumpkin wedges thoroughly in the marinade until all sides a a bit covered. Now arrange the hokkaio pumpkin wedges on a baking sheet covered with baking paper – put the pumpkin just 15 minutes before the risotto is done in the oven.
Preheat the oven to 225°C (450°F) top/bottom heat. The next step is to clean the champignons and to cut them into small dices. Chop the onions, cut the garlic into thin slices, peel and grate the ginger finely and cut the chilli pepper in tiny pieces. Heat a bit coconut oil in a medium sized pot, then sauté half of the chopped onions for a moment before you add the risotto rice together with the garlic – sauté the risotto rice 2-3 minutes until it looks a bit translucent (meanwhile boil water for the vegetable broth). Then add the grated ginger and dried chilli pepper and afterwards the coconut milk and the bay leaf – add vegetable broth frequently and stir as often as possible, so the risotto won´t get burned in the bottom of the pot. Meanwhile the risotto is cooking, sauté the remaining onions in coconut oil in a skillet, the stir-fry the champignons in it together with the two rosemary sprigs at medium to high heat. In the very end add a bit nutmeg and place the skillet aside for a moment. Stir the champignons into the risotto just 5 minutes before it´s done (remove the rosemary sprigs before) and stir in the tablespoon chopped basil as well. Now grate the Leerdammer cheese and when the risotto is done, add about half or two thirds of it. The remaining cheese you can have as a topping. Taste the risotto a last time and spice up if necessary. Serve the risotto on two plates or bowls, take the roasted pumpkin out of the oven, season with sesalt and arrange 2-3 hokkaido wedges on every risotto plate and top with fresh dill and sesame seeds. Cut the lemon in thick slices, halve them and serve one to each plate.

Vor ein paar Wochen haben wir ein vegetarisches Weihnachtsessen mit Freunden genossen und heute heute möchten wir ein paar Eindrücke mit Euch teilen. Als Leerdammer uns gefragt hat, ob wir ein Rezept für ein “Cheesy X-mas Dinner” kreieren wollen, hatten wir gleich mehrere Ideen! Schon im Sommer haben wir mit Leerdammer zusammengearbeitet und dieses köstliche Burger Rezept für Euch zubereitet und wir kennen die Marke fast schon seit unserer Kindheit! Ein Weihnachtsrezept mit dem Käse zu kreieren ist einfach, da man ihn für fast alles benutzen kann und es immer köstlich schmeckt! Auf Ihrem Instagram Account hat Leerdammer 3  verschiedene Rezepte vorgeschlagen, die wir wir entwickelt haben und ihre Follower konnten dann abstimmen welches wir bei unserem Cheesy X-mas Dinner kochen sollen. Klar gewonnen hat das Pilz-Risotto mit geröstetem Kürbis und mit Leerdammer Käse und es schmeckt wirklich SO gut! Ein Rezeptvideo zum Risotto könnt ihr übrigens hier sehen. Wir sind uns jetzt schon sicher, dass wir das Pilzrisotto (mit Rotkohl als weitere Beilage) am Weihnachtsabend kochen werden, wenn wir immer gemeinsam mit Laura’s Familie essen. Für dieses kleine Weihnachts-Dinner haben wir unsere Freunde Ruby und Olivia und unsere Freundin und Nachbarin Rahel eingeladen. Ruby and Olivia von Mary Lennox haben uns mit der hängenden Dekoration über dem Tisch geholfen und uns und Rahel hat es so gut gefallen! Es war wirklich ein wunderbarer und gemütlicher Abend und alle haben das Pilzrisotto geliebt! Wir kochen unser Risotto immer mit Risotto-Vollkornreis (was eine halbe Ewigkeit dauert :)), aber natürlich könnt Ihr auch ganz normalen Risotto-Reis verwenden. Was ich an dem Risotto besonders liebe ist, dass das Pilzaroma wirklich fantastisch zur Geltung kommt und die Kombination mit dem geröstetem Kürbis ist einfach himmlisch! Glutenfreies Pilzrisotto mit gerösteteten Kürbisspalten & Leerdammer

Zutaten für 2 Personen

Pilzrisotto

  • 200g Risottoreis (man kann – wie wir – sehr gut auch Vollkorn-Risotto-Reis verwenden, der dauert allerdings 20-30 Minuten länger als normaler Risottoreis)
  • 200g Champingons
  • 2 rote Zwiebeln
  • 2 Knoblauchzehen
  • 1 Stück frischer Ingwer
  • 100g Leerdammer
  • 200ml Kokosmilch
  • etwa 500ml Gemüsebrühe
  • 1 Lorbeerblatt
  • 1 getrockente Chillischote (oder eine Prise Cayenne-Pfeffer)
  • 1 Prise Muskat
  • 2 Rosmarinzweige
  • 1 EL kleingeschnittenes Basilikum
  • Kokosöl (oder Rapsöl)
  • Salz & Pfeffer

Geröstete Kürbisspalten

  • 1/2 kleiner bis mittelgroßer Hokkaido
  • 2-3 EL Rapsöl (oder ein anderes Pflanzenöl)
  • 1 Prise Cayennepfeffer
  • 1 TL Curry-Gewürz
  • etwas Meersalz

Zusätzlich

  • 1 Zitrone oder Limette
  • 1 EL Sesam
  • etwas frischer Dill (oder Oregano, Thymian…)

Zunächst den Kürbis vorbereiten: dafür den Kürbis schälen, mit einem Esslöffel entkernen und den Hokkaido in Spalten schneiden. Eine Marinade aus Rapsöl, Cayennepfeffer und Currygewürz verrühren, dann die Spalten darin schwenken, bis alle Seiten damit bedeckt sind. Nun die Hokkaido-Spalten auf eine Backblech mit Backpapier legen und die Spalten erst 15 MInuten bevor das Risotto fertig ist in den Ofen schieben.
Den Ofen auf 225°C Ober-Unterhitze vorheizen.Als nächstes die Pilze putzen und in kleine Würfel schneiden. Beide Zwiebeln kleinschneiden, Knoblauch kleinschneiden, den Ingwer schälen und fein raspeln und die getrocknete Chillischote sehr klein schneiden. Etwas Kokosöl in einem mittelgroßen Topf erwärmen, dann die Hälfte der Zwiebeln kurz darin anschwitzen, dann den Risottoreis und Knoblauch hinzufügen – kurz anschwitzen lassen, bis der Reis glasig ist (währenddessen Wasser für die Brühe aufkochen). Anschliessend den geraspelten Ingwer und die getrocknete Chillischote dazugeben, dann die Kokosmilch und das Lorbeerblatt – nach und nach immer wieder mit Brühe auffüllen und so oft wie möglich umrühren, sodaß der Reis nicht anbrennt. Währenddessen das Risotto kocht, die restlichen  Zwiebeln in einer Pfanne in Kokosöl anschwitzen, dann bei mittlerer bis hoher Hitze die kleingeschnittenen Champignons für 3-5 Minuten anbraten zusammen mit 2 Zweigen Rosmarin. Ganz zum Schluss mit einer guten Prise Muskat würzen und beiseite stellen. Die Champignons 5 Minuten bevor das Risotto fertig ist, in das Risotto unterrühren (ohne den Rosmarin) zusammen mit den kleingeschnitte Kräutern. Leerdammer-Käse raspeln und wenn das Risotto gar ist, etwa die Hälfte bis zwei Drittel des Käses unterrühren. Den Rest kann man zum Toppen verwenden. Risotto abschmecken und bei Bedarf nachwürzen. Risotto auf zwei Tellern oder Schalen anrichten, die Hokkaido-Spalten aus dem Ofen nehmen und mit Meersalz würzen und dann 2-3 Spalten pro Person dazulegen und mit frischem Dill und etwas Sesam toppen. Die Zitrone in Spalten oder dicke Scheiben-Hälften schneiden und dazureichen.
