While we finished our last shooting we recognized that there was a lot of ice-cream and caramel left…So what could be better than serving it with coffee we thought! And we where right..it just tasted so good, you really have to try it guys!

ingredients (for 2 portions)

2 bananas
1/2 pk vanilla sugar
1 can sweetened condensed milk
whipping cream
coffee (preferably a bit cooled)
ice cubes

banana-ice-cream:cut bananas into thin slices and leave for 2hours in the freezer (place the slices on baking paper and side by side, so they cannot stick to each other). purée frozen bananas together with the vanilla sugar with an immersion blender (or blender) and leave the ice-cream for 1-2hours in the freezer.

make caramel:place a kitchen towel or a few layers of baking paper in a large pot, place the closed condensed milk can inside and add enough water, so the can is totally covered. bring the water to boil and leave simmer for 3hours with a lid on top (the kitchen towel avoids that the can rattles). take care that the can is always covered with water during the 3 hours, otherwise it might explode. when time is finished, take out the can and leave cool down for at least 1hour. open the can and put some caramel (as much as you like) into a small pot, add a bit water or coffee (gives a nice coffee-note) and heat up a bit. stir the caramel for 1-2min with a whisk until the the caramel turns into a caramel-sauce.

serving: whip some cream with a bit sugar, fill glasses with a couple of ice cubes and coffee, add some whipped cream and warm caramel-sauce on top. if you like place some banana chips on the cream.
