We are so greatful for this exciting and eventful year. there were so many jobs and projects, that a weekend without work was exceptional. so 2015 can continue like that please – but maybe with some free weekends included.
we want to thank everyone of YOU – all your support was amazing and made us SO happy!! we wish you a merry christmas, with a lot of good food, happy moments with your loved ones and some nice presents. if you still have time to bake, you should try these delicous glutenfree christmas cookies. if you can tolerate vanilla and cinnamon due to a histamine intolerance the cookies are even low on histamine. the cinnamon star recipe is very basic (we found it here and changed it a little bit) but still very delicous and the “linzer-augen” cookies we baked with earth almond flour and rice flour and they are filled with homemade cranberry-marmelade. since a very long time i´m into earth almonds now. as they grow under the earth it´s not a nut, but still they have a very nutty flavour. so if you can´t tolerate nuts you should definetly give them a try. on top of that they are fiber-rich, good for your bowel, which is at least for me quite imporantat these days, after i had to take an antibiotic and everything seems to be a bit confused in my body. if you feel the same way go for earth almonds, it´s my new magical little helper.

Christmas Cookies

cinnamon stars
ingredients (for ca. 2-3 baking sheets)
3 egg whites
250g icing sugar
375g ground almonds
1/2 vanilla pod
1 tsp ceylon cinnamon
0,5 tsp speculoos spice
1 dash of salt

whisk the egg whites till stiff. sieve the icing sugar and add portion by portion (each portion is about 2tbsp) to the beaten egg white with a tablespoon. put some of the glaze (4 tbsp) in a small bowl and leave in the fridge for later. mix in a separate bowl the ground almonds, the vanilla bean pulp, cinnamon, speculoos-spice and salt and stir this into the beaten egg white-sugar-mix – use the mixer (with the dough hooks) for 1minute. take a large cuting board (which fits into your fridge) and cover it with clear film. knead the dough for a minute and put it on the clear film, put a second layer of clear film on top and roll the pastry. leave the pastry in the fridge for 2 hours.

line a baking sheet with parchment paper. take the pastry out off the fridge and cut out the biscuits (if some pastry remains on the biscuit cutter after a while, put some icing sugar on a small plate and dip the cutter into it). preheat oven to 125degrees celcius top/bottom heat. knead the remaining pastry and roll it again between the clear film. (leave it in the fridge until the first sheet of cookies are baked.)
fill the glaze into a a pastry tube (or airtight bag) and place a small amount of glaze on each cookie. spread the glaze with a small spoon or knife (you gonna need patience for it). bake the cookies for 15min at 125degrees, then turn the heat down to 100degrees celsius and bake for another 8-10min.
when you take them off the oven maybe you have to separate them from the paprchment paper, if they are sticked a bit to it. then prepare the next baking sheet. the cookies will taste even better after a few days (keep them in an airtight box).

“linzer augen”-cookies & cranberry-jam
ingredients for ca. 2-3 baking sheets)
pastry
200g rice flour
100g earth almond flour
100g icing sugar
1 dash of salt
1/2 tsp ceylon cinnamon
1 dash of ground cloves
2 egg yolks
200g butter (cold; chopped into small cubes)
cranberry-jam
150g cranberries
150ml water
75g sugar
1 small piece fresh ginger
1/2 vanilla pod
topping
1 tbsp icing sugar

mix all ingredients in the mixer (dough hooks) for about 3min. take a large cuting board (which fits into your fridge) and cover it with clear film. knead the dough for a minute and put it on the clear film, put a second layer of clear film on top and roll the pastry. leave the pastry in the fridge for 2 hours.

prepare the cranberrie-jam:
bring all ingredients in a pot to boil (scratch the pulp out off the vanilla pod and add the pod as well to the pot). let simmer the mix for 10min and strain the jam through a food mill or strainer. fill jam into a glas and let it cool off.

bake the cookies:
preheat oven to 180degrees celsius top/bottom heat.
line a baking sheet with parchment paper. take the pastry out off the fridge and cut out the biscuits (we used an apple corer for the “eyes”). bake the cookies for 10min. knead the remaining pastry and roll it again between the clear film. (leave it in the fridge until a bit more solid again.) when the cookies are baked spread immediately icing sugar on the upsides and put a bit jam on the undersides and assemble them.

Weihnachten steht kurz vor der tür…dieses jahr ist so unglaublich schnell vergangen, ich hab das gefühl, dass sagen wir die ganze zeit. geht euch das genau so?
wir sind unglaublich dankbar und glücklich über dieses ereignisreiche und spannende jahr, in dem freie wochenenden eine ausnahme waren.
viele jobs und tolle projekte haben auf uns gewartet, so kann uns 2015 auch sehr gern beglücken, vielleicht allerdings mit ein paar freien wochenden mehr zwischendurch.

aber in erster linie wollen wir EUCH allen danken – eure unterstützung, die ganzen lieben kommentare und mails, hier, auf instagram und facebook…ihr seid der wahnsinn und eure unterstützung macht uns sehr glücklich!!

wir wünschen euch frohe weihnachten, mit viel gutem essen natürlich, einer schönen zeit mit allen, die euch wichtig sind und ein paar schönen geschenken. falls ihr noch zeit findet, probiert unbedingt unsere leckeren glutenfreien plätzchenrezepte aus. wenn ihr trotz histaminintoleranz vanille und zimt vertragt, sind beide rezepte sogar histaminarm. das zimtstern rezept ist sehr einfach (wir haben es bei brigitte gefunden und ein wenig abgeändert) und die “linzer-augen” haben wir aus reismehl und erdmandelmehl gebacken und sie sind mit hausgemachter cranberry-marmelade gefüllt. schon seit langer zeit esse ich jetzt erdmandeln (in form von muß und mehl).

da sie unter der erde wachsen, gelten sie nicht als nüsse, haben aber trotzdem ein sehr nussiges aroma. falls ihr also keine nüsse vertragen solltet, probiert unbedingt mal die erdmandel!

außerdem ist sie auch noch sehr gesund: extrem ballaststoffreich und somit gut für die verdauung und den darm. letzteres ist zu mindest für mich gerade sehr wichtig, da nach einem antibiotikum grad alles etwas durcheinander ist in meinem körper. wenn es euch genauso geht, greift doch auch mal zur erdmandel, mein kleines wunderheilmittel ist auf alle fälle momentan!

Gluten-free Christmas Cookies

zimtsterne
zutaten (für ca. 2-3 bleche)
3 eiweiss (eier grösse m oder l)
250g puderzucker
375g gemahlene mandeln
1/2 vanilleschote
1 tl ceylon zimt
0,5 tl spekulatiusgewürz
1 prise salz

die eiweisse steif schlagen. den puderzucker sieben und portionsweise (2el pro portion) mit einem löffel unter den eischnee rühren. etwas (4 el) von dem guss in eine kleine schüssel umfüllen (für die glasur). in einer separaten schüssel gemahlene mandeln, das mark der vanilleschote, den zimt, das spekulatiusgewürz und das salz vermischen und anschliessend mit dem gezuckerten eischnee mit hilfe eines mixers (knethaken) ganz kurz (1min) verrühren. ein grosses schneidebrett (was in den kühlschrank passt) mit klarsichtfolie bespannen, den teig kurz verkneten und darauflegen und mit einer 2.schicht folie bedecken. den teig ausrollen und für min. 2stunden im kühlschrank festwerden lassen (glasur ebenfalls in den kühlschrank stellen).

ein backblech mit backpapier auslegen, den teig aus dem kühlschrank nehmen, sterne ausstechen (falls nach einer weile teigreste an dem stern haften bleiben, etwas puderzucker auf einen kleinen teller geben und stern kurz hineindrücken). ofen auf 125grad ober/unterhitze vorheizen. restlichen teig kurz verkneten und nochmals zwischen den folien ausrollen (evt. nochmal kurz in den kühlschrank stellen bis die ersten zimtsterne fertiggebacken sind). glasur in eine spritzbeutel oder kleine tüte füllen und kleine klekse auf jeden zimtstern geben. mit einem kleinen löffel oder messer die glasur verstreichen (geduld ist gefragt). sterne bei 125grad 15min backen, dann auf 100grad runterdrehen und nochmal für 8-10min backen. eventuell mit einem messer vom backpapier trennen, falls sie in der mitte etwas haften bleiben. dann zweites blech vorbereiten und backen. die kekse schmecken nach einigen tagen noch besser (luftdicht verpacken).

linzer augen & cranberry-marmelade
zutaten (für 2-3 bleche – 20-30 stück)

keksteig

200g reismehl
100g erdmandelmehl
100g puderzucker
1 prise salz
1/2 tl zimt
1 prise nelkengewürz
2 eigelb
200g butter (kalt und in kleine würfel geschnitten)
cranberry-marmelade
150g cranberries
150ml wasser
75g zucker
ein kleines stück ingwer
1/2 vanilleschote
topping
1 el puderzucker

alle zutaten mit dem mixer (knethaken) für etwa 3min vermengen. ein grosses schneidebrett (was in den kühlschrank passt) mit klarsichtfolie bespannen, den teig kurz verkneten und darauflegen und mit einer 2.schicht folie bedecken. den teig ausrollen und für min. 2stunden im kühlschrank festwerden lassen. marmelade herstellen:
alles in einem topf zusammen aufkochen (vanillemark aus der schote kratzen und leere schote ebenfalls dazu tun). für 10min köcheln lassen bis die marmelade schön eingedickt ist, dann mit einem passiergerät oder feinen sieb passieren. in ein glas abfüllen und abkühlen lassen.

kekse backen:
ofen auf 180grad ober/unterhitze vorheizen.
ein backblech mit backpapier auslegen, den teig aus dem kühlschrank nehmen, kekse ausstechen (für die löcher haben wir einen apfelausstecher genommen) und aufs backpapier legen. kekse für 10min auf mittlerer schiene backen. restlichen teig kurz verkneten und nochmals zwischen den folien ausrollen und nochmals in den kühlschrank stellen bis er wieder etwas fester geworden ist. nachdem die kekse gebacken sind sofort die oberseiten mit puderzucker bestreuen und die unterseiten mit marmelade bestreichen und zusammenfügen.
