When we went food shopping, we got the first blood oranges this year and as we both love them, of course, we had to include them in the recipe (though i have to be very careful to eat only a little bit of them, as citrus unfortunately is still difficult for me). We made a simple blood orange juice, which we served with ice cubes and rosmary and it’s not only tasting very good, also that wonderful color always makes me so happy! For the cake we used grated coconut and poppy seeds in the batter and Nora made a very delicious crust with coconut flakes and coconut blossom sugar, which just tasted SO delicious!

We served the cake with coconut yoghurt and slices of blood oranges, which is a perfect combintation with the sweet cake, that tastes a little bit like caramel, because of the coconut blossom sugar.

Gluten-free Coconut-Poppy-seed Cake

Ingredients (for a 18cm-ø springform pan)

Batter

  • 150g rice flour
  • 180g butter, soft
  • 150g coconut blossom sugar (or regular sugar, but then a bit less)
  • 50g liquid honey (e.g. acacia honey)
  • 3 eggs (size m/l)
  • 2 tsp organic baking powder
  • 50g grated coconut
  • 50g ground poppy seeds (you can also use whole poppy seeds, but ground ones taste more intense)
  • 1 vanilla bean
  • 1 pinch of salt

Coconut caramel topping

  • 60g coconut flakes (probably you could also just use grated coconut, if you don´t won´t to buy both)
  • 40g butter
  • 2 tbsp coconut blossom sugar (or regular sugar)
  • 1,5 tbsp liquid honey (e.g. acacia honey)
  • 2 tbsp milk
  • 1 pinch of salt

Additionally (not a must, but a good combination)

  • Coconut yoghurt (or another creamy yoghurt, or whipped cream)
  • a few slices of blood orange

Preheat Oven to 180° Celsius (360°F) top/bottom heat. Grease and flour a springform pan ( I always leave it then in the fridge until the batter is finished). Beat the soft butter together with the coconut blossom sugar, vanilla pulp and salt for at least 5minutes, then beat in the liquid honey and afterwards the eggs one after the other (each about 30seconds). Blend rice flour and baking powder and stir in the butter-egg-mixture. In the end stir in the poppy seeds and then the grated coconut. Fill batter into the springform pan and bake the coconut-poppy-seed-cake for 40minutes (you might need to cover the cake after 30min with kitchenfoil, otherwise it could turn a bit dark). After 30minutes of baking time you should start to prepare the coconut topping. Heat butter, coconut blossom sugar, honey and salt together in a saucepan until sugar dissolved. Stir in the 2tbsp milk and bring to boil for a moment. Then fold in the coconut flakes. Try to spread the caramel-coconut-flakes evently on the cake (after the 40minutes of baking), then bake the cake for another 5minutes or until the batter is done (make the toothpick test). Turn on the grill function and roast the coconut-caramel-topping 2-3minutes for a nice gold brown color. Let the cake cool down 15min before you remove the springform pan. Wait at least 1hour before you serve it. We served it with a bit coconut yoghurt (also whipped cream works perfectly) and some slices of blood orange, which made a nice sour contrast to the sweet coconut.

Die ganze letzte Woche hatte ich so Appetit auf einen leckeren Kokos-Kuchen, aber da wir neben viel Arbeit auch noch unsere Küche renoviert haben (und dabei fast im Chaos versunken sind, aber dazu ein ander Mal mehr), musste ich mich gedulden.
Dieses Wochenende haben wir ein paar ruhige Tage auf dem Land verbracht und es war endlich Zeit einen Kuchen zu backen, von dem ich die ganze Woche geträumt habe.

Beim Einkaufen haben wir die ersten Blutorangen dieses Jahr entdeckt und da wir sie beide sehr gern essen, mussten sie natürlich gleich ins Rezept miteinbezogen werden. Leider muss ich mit Zitrus nach wie vor etwas vorsichtig sein, aber die Menge macht’s und in kleinen Mengen ist es zum Glück gar kein Problem.

Zum Kuchen haben wir einen ganz einfachen Blutorangen-saft mit Eiswürfeln und ein wenig Rosmarin serviert. Sehr zu empfehlen, denn er schmeckt nicht nur köstlich und so schön frisch, sondern allein die Farbe lässt schon die Laune steigen. In den Kuchenteig kommen neben Reismehl und Butter Kokosraspeln und Mohn. Als Topping hat Nora eine unglaublich leckere Kruste aus Kokosraspeln und Kokosblütenzucker kreiert. Den Kuchen haben wir mit Kokosjoghurt und Blutorangenscheiben serviert, was in Kombination zum süßen Kuchen, der durch den Kokosblütenzucker eine leicht karamellige Note hat, einfach köstlich ist!

Glutenfreier Kokos-Mohn-Kuchen

Zutaten (für eine 18cm-ø Springform)

Kuchenteig

  • 150g Reismehl
  • 180g Butter, weich
  • 150g Kokosblütenzucker (oder normalen Zucker, dann aber etwas weniger)
  • 50g flüssiger Honig (z.b. Akazienhonig)
  • 3 Eier (Gr. m/l)
  • 2 tl Weinsteinbackpulver
  • 50g Kokosraspeln
  • 50g gemahlenen Mohn (gemahlener Mohn schmeckt intensiver als ungemahlener)
  • 1 Vanilleschote
  • 1 Prise Salz

Kokos-Karamell- Topping

  • 60g Kokos-flakes (Kokosraspeln funktionieren sicherlich genauso gut, wenn man nicht beides kaufen will)
  • 40g Butter
  • 2 EL Kokosblütenzucker (oder normaler Zucker)
  • 1,5 EL flüssiger Honig (z.b. Akazienhonig)
  • 2 EL Milch
  • 1 Prise Salz

Zusätzlich (nicht ein Muss, aber passt sehr gut dazu)

  • Kokosjoghurt (oder ein anderer cremiger Joghurt, oder etwas Schlagsahne)
  • ein paar Blutorangen-filets

Ofen auf 180°C Ober-/Unterhitze vorheizen. Eine Springform buttern und mehlen (ich lasse die Springform dann immer im Kühlschrank bis der Teig fertig angerührt ist). Weiche Butter zusammen mit dem Kokosblütenzucker, Vanillemark und Salz mindestens 5minuten aufschlagen. Dann den Honig unterschlagen und die Eier eins nach dem anderen (jeweils 30 Sekunden). Reismehl und Weinsteinbackpulver mischen, dann unter die Butter-Ei-Masse rühren. Anschliessend den gemahlenen Mohn und zum Schluss die Kokosraspeln unterheben. Teig in die Springform füllen und Kokos-Mohn-Kuchen für 40min backen (nach etwa 30 Minuten den Kuchen mit etwas Alufolie abdecken, da er sonst zu dunkel werden könnte). Nach 30 Minuten Backzeit das Kokos-Karamell-Topping vorbereiten. Butter zusammen mit Kokosblütenzucker, Honig und Salz in einem Topf erhitzen bis der Zucker sich gelöst hat. Dann die 2 EL Milch unterrühren, kurz aufkochen und jetzt die Kokos-Flakes unterheben. Das Kokos-Karamell-Topping möglichst gleichmäßig auf dem Kuchen verteilen (nach den 40min Backzeit), dann den Kuchen noch für weitere 5min backen bis er fertig ist (den Zahnstocher-Test machen). Ganz zum Schluss den Ofen 2 Minuten auf Grillfunktion stellen bis die Kokos-Flakes schön golden-braun aussehen. Den Kokos-Mohn-Kuchen für 15 Minuten abkühlen lassen, bevor man die Springform entfernt. Wenigstens 1 Stunde warten bevor man ihn serviert. Wir haben ihn mit Kokosjoghurt und Blutorangen-Filets gegessen, was eine sehr leckere Kombination war, gerade weil die Blutorangen einen schönen säuerlichen Kontrast zum süßen Kokos-Kuchen bilden.
