We love the taste of sunflower seeds and especially with the pears it’s such a nice combination, you really have to try it!

We’ve been shooting this post in our neighbors dining room again – do you remember when we told you that our neighbors were about to renovate their dining room and that we’ve been trying to convince them to leave that one gorgeous wall just like it is? We made it and convinced them! And they are more than happy with it. After we’ve been shooting this delicious pear-sunflower seed cake we enjoyed it with our dear friend and neighbor Rahel and talked the whole afternoon away about a new project that we are planning together and will start with this spring. For now all I can say is, that it has to do something with the book you can see in some of the pictures but the rest is a suprise. So let’s just enjoy this wonderful cake for now.

Gluten-free Pear-Sunflower Seed-Cake

Ingredients (for a 26-28cm-ø springform pan)

  • 250g sunflower seed butter, unsweetened (you can also try with another seed or nut butter)
  • 150g rice flour
  • 3 eggs (size m/l)
  • 150g maple syrup
  • 1 tsp cinnamon
  • 1,5 tsp organic baking powder
  • 1 vanilla bean (or a bit vanilla extract)
  • 1 pinch of salt
  • 3 large and ripe pears (the sweeter and juicier the better)
  • 1 lemon
  • 1-2 tbsp sunflower seeds
  • a bit confectioner´s sugar

Preheat oven to 180°celsius top/bottom heat. Line the bottom of the springform with baking parchment, grease and flour the sides. Squeeze the lemon and wash the pears. Cut generously the sides off from two pears and cut into very thin slices. Peel the third pear and cut into very small cubes – also chop the remaining parts of the other two pears into cubes. Put the pear slices and cubes into different bowls and add the lemon juice, so they don´t turn brown. Mix the sunflower seed butter with the maple syrup and a pinch of salt. Beat the eggs together with the vanilla pulp for a minute, then stir the eggs into the the sunflower seed butter mixture by using a whisk. Blend the rice flour, cinnamon and organic baking powder and stir into the batter. Fold in the pear dices (sieve the remaining lemon juice before), then fill batter into the springform pan. Arrange the pear slices in a circle and press gently into the batter. sprinkle a few sunflower seeds on top and bake the cake for 22-25minutes (do the toothpick test) – if the cake isn´t browning, turn on the grill function for a minute in the end. Let cake cool down for 15minutes, before you remove the springform pan. Dust cake pieces or whole cake with confectioner´s sugar.

Seit dem wir anfang des Jahres unseren Bananenkuchen mit Nussbutter gebacken haben, sind wir verrückt nach Kuchen mit Nussbutter. Um eine kleine Variation auszuprobieren haben wir diesmal Sonnenblumen-Muß verwendet. Das haben wir im Biomarkt entdeckt und wollten es unbedingt ausprobieren. Wir lieben den Geschmack von Sonnenblumenkernen und die Kombination mit Birne ist wirklich ganz wunderbar!

Die Bilder sind wieder bei unseren Nachbarn entstanden. Erinnert Ihr Euch noch, dass wir Euch erzählt haben, dass unsere Nachbarn gerade Ihr Esszimmer renovieren und wir versucht haben, sie zu überzeugen eine der roughen Wände zu erhalten? Wir haben es tatsächlich geschafft und die Wand bleibt erhalten! Und unsere Nachbarn sind mehr als zufrieden.

Nachdem wir diesen köstlichen Birnen-Sonnenblumenkern Kuchen in Ihrem Esszimmer fotografiert haben, haben wir den Kuchen mit unserer guten Freundin Rahel genossen und den ganzen Nachmittag über ein gemeinsames neues Projekt geplaudert, dass wir im Frühling starten wollen. Mehr dazu ein ander Mal, nur so viel: es hat thematisch etwas mit dem Buch, dass auf einigen Bildern zu sehen ist, zu tun. Aber jetzt lasst uns erstmal diesen köstlichen Kuchen genießen – wir wünschen einen guten Appetit!

Glutenfreier, saftiger Birnen-Sonnenblumenkern-Kuchen

Zutaten (für eine Springform 26-28cm-ø)

  • 250g Sonnenblumenkernmus, ungesüsst
  • 150g Reismehl
  • 3 Eier (gr. m/l)
  • 150g Ahornsirup
  • 1 tl Zimt
  • 1,5 tl Weinsteinbackpulver
  • 1 Vanilleschote
  • 1 Prise Salz
  • 3 große reife Birnen (je süsser und saftiger desto besser)
  • 1 Zitrone
  • 1-2 el Sonnenblumenkerne
  • etwas Puderzucker

Ofen auf 180°C Ober-/Unterhitze vorheizen. Den Boden der Springform mit Backpapier auslegen, die Seiten buttern und mehlen. Die Zitrone auspressen und die Birnen waschen. Von 2 Birnen großzügig die Seiten abschneiden und in hauchdünne Spalten schneiden, die dritte Birne schälen und in sehr kleine Würfel schneiden – das übrige Fruchtfleisch der anderen Birnen ebenfalls in kleine Würfel schneiden. Spalten und Würfel in unterschiedliche Schüsseln geben und mit Zitronensaft vermengen, dass sie nicht braun werden. Das Sonnenblumenkernmus mit 1 prise Salz und dem Ahornsirup verrühren, dann die Eier mit dem dem Vanillemark schaumig aufschlagen und mit einem rührbesen unter das Mus rühren. Reismehl, Zimt und Weinsteinbackpulver mischen, dann unter die flüssige Masse rühren. Zum schluss die eingelegten Birnenwürfel unterheben (restlichen Zitronensaft vorher absieben). Den Teig in die Backform füllen und die Birnenspalten im Kreis herum ganz leicht in den Teig drücken und ein paar Sonnenblumenkerne verstreuen. Kuchen für 22-25min backen (Stäbchenprobe machen) – zum Schluss kurz auf Grillfunktion stellen, damit der Kuchen nochmal schön Farbe bekommt. Kuchen 15min abkühlen lassen, dann die Springform entfernen. Einzelne Kuchenstücke oder den ganzen Kuchen mit Puderzucker bestreuen.
