The weather in Berlin is finally getting better and spring is in the air! The apple trees in the garden are in full bloom and we bought delicious green asparagus in the organic supermarket. We teamed up with Pomi for this post and used their organic strained tomatoes for this tasty spring pasta recipe. We always love to eat gluten-free pasta a few times a week and this spring pasta recipe is a new favorite for sure! Thanks to the strained tomatoes from Pomi, it’s quite a light meal and all the vegetables like peas, green asparagus and fava beans give you all the extra spring feelings. We also added buffalo mozarella, which is the perfect addition when you like to eat cheese. We grilled it in the oven, so it got nicely melted on top, so fabulous! Gluten-Free Pasta with Tomato Sauce, Green Asparagus and Mozarella

Ingredients for 1 baking dish or 4 persons

  • 400g penne pasta
  • 500g Pomi Organic Strained Tomatoes
  • 125g mozarella
  • 500g green asparagus (about 2 bunches)
  • 200g frozen peas
  • 150g fava beans or similar (if you use fresh ones you need to peel and shell them)
  • 1 handful cherry tomatoes
  • 1 large red onion
  • 3-4 pressed garlic cloves
  • 2-3 stems fresh basil
  • 1 pinch Cayenne pepper
  • 1 pinch cumin
  • 1-2 tbsp honey
  • olive oil
  • salt
  • pepper

Peel the fava beans and blanch in boiling water, then refresh, shell the skin and cook the fava beans again for about 10 minutes in salted water. Cook the peas and penne pasta as well in salted water until firm bite. Cut off the stringy ends of the green asparagus, then cut in smaller bites and fry in olive oil for 5 minutes. Chop the onion, fry in olive oil for a moment, then stir in the pressed garlic and tomato sauce. Afterwards season with cayenne pepper, cumin, honey, salt and pepper. Switch on the grill function of your oven. Fill about one third of the tomato sauce on the bottom of the baking dish, then spread one layer of penne pasta, fava beans, peas and green asparagus. Continue with a second layer of penne pasta, fava beans, peas and asparagus, then spread the remaining tomato sauce on the penne pasta and top with mozarella pieces. Cut the cherry tomatoes in halves and arrange on top. Grill the penne pasta dish for around 12 minutes or until the mozarella has melted. In the end decorate with fresh basil.

Das Wetter in Berlin wird endlich wieder besser und der Frühling liegt in der Luft! Im Garten waren gerade die Äpfelbäume in voller Blühte und wir haben in schöner Frühlingslaune köstlichen grünen Spargel gekauft. Für diesen Post haben wir uns mit  Pomi zusammengetan und haben Ihre Bio-Tomaten-Sauce für diese leckere Frühlingspasta verwendet! Wir essen momentan besonders gerne Pasta und dieses Rezept ist unser absoluter Liebling momentan! Dank der Bio-Tomaten-Sauce von Pomi, ist es eine schöne leichte Pasta geworden und all das wunderbare Gemüse, wie Erbsen, Spargel und grüne Bohnen machen es zu einem köstlichen Frühjahrsgericht. Wir haben außedem noch Büffelmozarella hinzugegeben und das ganze im Ofen gegrillt- einfach super lecker! Wir hoffen Ihr genießt dieses bunte Frühlingsrezept genauso sehr wie wir! Glutenfreier Nudel-Aulauf mit Tomatensauce, grünem Spargel und Mozarella

Zutaten für 1 Auflaufform bzw. für 4 Personen

  • 400g Penne
  • 500g Pomi-Bio-Tomatensauce
  • 125g Mozarella
  • 500g grüner Spargel (etwa 2 Bund)
  • 200g TK-Erbsen
  • 150g dicke Bohnen o.ä. (geschält und gepult)
  • 1 handvoll Kirschtomaten
  • 1 große rote Zwiebel
  • 3-4 Knoblauchzehen, gepresst
  • 2-3 Stengel frischer Basilikum
  • 1 Prise Cayenne-Pfeffer
  • 1 Prise Kreuzkümmel
  • 1-2 EL Honig
  • Olivenöl
  • Salz
  • Pfeffer

Die Bohnen schälen und kurz in kochendem Wasser blanchieren, eiskalt abschrecken, dann die zweite Haut abpulen und die Bohnen nochmals in Salzwasser etwa 10 Minuten bissfest garen. Die Erbsen und die Penne ebenfalls in Salzwasser bissfest garen. Die holzigen Enden des grünen Spargels wegschneiden und den Spargel in kleinere Stücke schneiden und in etwas Olivenöl für 5 Minuten anbraten. Für die Soße die Zwiebel fein hacken und in einer Pfanne in Olivenöl anschwitzen, dann den Knoblauch und die Tomatensauce hinzufügen. Anschließend die Sauce mit Cayennepfeffer, Kreuzkümmel, Honig, Salz und Pfeffer abschmecken. Den Ofen auf Grillfunktion vorheizen. Etwas von der Tomatensauce in die Auflaufform füllen, dann mit einer Schicht Penne, Bohnen, Erbsen und Spargel toppen. Anschließend wieder mit Penne, Bohnen, Erbsen und Spargel belegen, jetzt die restliche Tomatensauce darauf verteilen und mit Mozarella belegen. Die Kirschtomaten halbieren und auf dem Auflauf verteilen. Den glutenfreien Nudel-Auflauf für etwa 12 Minuten im Ofen überbacken lassen bis der Käse schön geschmolzen ist. Zum Schluß mit frischem Basilikum servieren.
