Since we are so much longing for warmer days and sunshine we decide to make this gluten-free polenta cake with raspberries, which is such a delicious combination! We really love the texture of the cake, somehow it reminded us a little bit of semolina porridge, just more like cake not pudding of course 🙂 During the photoshooting the sun decided to come out for a few moments, which was so nice! It’s the first time that we’ve been photographing in our prop room actually. Normally we just store our tables, ceramics and all the other props in this room, but when we saw how lovely the light looked, we deciced to photograph the gluten-free polenta cake here and will definitely do that more often now! Hope you guys are enjoying the cake as much as we did and as soon as the garden is in full bloom again we will also give you a proper tour through our countryside place.

Gluten-free Polenta Cake with Raspberries

Ingredients for a 28cm-ø-springform pan

  • 175g polenta/cornmeal
  • 175g rice flour
  • 2 tsp organic baking powder
  • 150ml coconut milk (or almond milk or similar)
  • 3 eggs (size M/L)
  • 100ml maple syrup
  • 125g honey
  • 200g frozen raspberries
  • 1 pinch ground vanilla
  • 1 pinch salt
  • 1 piece ginger, finely grated

Topping

  • 1 tbsp icing sugar
  • freeze dried raspberries
  • fresh raspberries
  • 1-2 tbsp pistacchios

Preheat the oven to 180°C (360°F) top/bottom heat. Line the bottom of your springform pan with baking paper, grease and flour the sides. Separate the eggs, then beat the egg whites stiff and set aside for a moment. Beat the egg yolkes for 1 minute, then beat in the maple syrup and honey. After that beat in the coconut milk and the ground vanilla. Blend the dry ingredients (polenta, baking powder, salt) and stir into the liquid ingredients. In the end stir in the grated ginger. Then fold in gently the beaten egg whites and for a short moment the frozen raspberries. Fill the batter into the springform pan and bake the gluten-free polenta cake for 35-40 minutes. Afterwards dust with icing sugar and ground freeze dried raspberries. At last top with fresh raspberries and roughly chopped pistacchios to the gluten-free polenta cake.

German Translation

Schon seit einer Ewigkeit wollten wir einen glutenfreien Polenta Kuchen backen und letztes Wochenende sind wir endlich dazu gekommen und freuen uns sehr das Rezept heute mit Euch zu teilen! Da wir uns schon so sehr nach wärmeren Tagen und dem Frühling und Sommer sehnen, haben wir den Kuchen mit Himbeeren gebacken – eine köstliche Kombination mit Polenta. Besonders gut hat uns auch die Textur vom Kuchen gefallen – ein bisschen so wie Grießpudding eben nur als Kuchen und nicht als Pudding 🙂 Während des Fotoshootings hat sich sogar die Sonne ein paar mal blicken lassen, was wir so sehr genossen haben! Zum ersten Mal haben wir in unserer Prop-Kammer, in der wir sonst eigentlich nur unsere Tische, Keramik und alle anderen Requisiten beherbergen, fotografiert.  Durch das wunderbare Licht tat es uns fast leid, den Raum bisher nur als Kammer genutzt zu haben und wir wollen den Raum jetzt so gestalten, dass er auch dauerhaft als weiteres Foto-Shooting-Zimmer funktioniert. Wir hoffen Ihr Lieben lasst Euch den Kuchen auch gut schmecken und sobald die Temperaturen draußen endlich steigen und der Garten sich wieder in voller Pracht zeigt, posten wir auch mal eine ausführliche Tour zu unserem kleinen Studio auf dem Land.

Glutenfreier Polenta-Kuchen mit Himbeeren

Zutaten für eine 28cm-ø-Springform

  • 175g Polenta
  • 175g Reismehl
  • 2 TL Weinsteinbackpulver
  • 150ml Kokosmilch (oder Mandelmilch o.ä.)
  • 3 Eier (Gr. M/L)
  • 100ml Ahornsirup
  • 125g Honig
  • 200g TK-Himbeeren
  • 1 Prise Vanille
  • 1 Prise Salz
  • 1 daumengroßes Stück Ingwer, geraspelt

Topping

  • 1 EL Puderzucker
  • gefriergetrocknete Himbeeren
  • frische Himbeeren
  • 1-2 EL Pistazien

Ofen auf 180°C Ober-/Unterhitze vorheizen. Den Boden einer Springform mit Backpapier auslegen, die Seiten buttern und mehlen. Die Eier trennen, das Eiweiß steif schlagen und kurz beiseite stellen. Dann die Eigelbe 1 Minute verschlagen, den Ahornsirup und den Honig unterschlagen. Dann die Kokosmilch und die Vanille unterschlagen. Die trockenen Zutaten mischen (Polenta, Backpulver, Salz) und unterrühren, dann den Ingwer unterrühren. Zum Schluß den Eischnee unterheben und dann ganz kurz die gefrorenen Himbeeren. Den Teig in die Springform füllen und den Polenta-Kuchen für 35-40 Minuten backen. Anschliessend mit Puderzucker und gemahlenen gefriergetrockneten Himbeeren bestreuen. Zum Schluß mit frischen Himbeeren und grob gehackten Pistazien toppen.
