We got inspired to make these gluten-free breaded eggs by Dewar’s Scotch Egg Club, a global event series which takes place on selected street food festivals in Germany for the first time this year. The Scotch Egg Club is inspired by Tommy Dewar, known as the whiskey baron and son of the founder John Dewar. The first event in Germany took place in Hamburg and was followed by a cooperation with Bite Club Berlin, where you can enjoy the next Dewar’s Scotch Egg Club on the 18th of August, starting at 5pm. Delicious Scotch Eggs paired with very good whiskey and a beautiful food truck – sounds pretty great, right?! Each Scotch Egg recipe they serve with certain whiskey: Dewar’s 12 smooth, Craigellachie and Aberfeldy. The german chef Fabio Haebel created three Scotch Egg recipes and of course we got inspired by the vegetarian version (and made our own gluten-free breaded eggs version out of it), which is made with mushrooms, potatoes and beetroot, a very delicious combination.

For our little summer gathering we got the Dewar’s 12 smooth, which is double aged for extra smoothness and has a honey, sultanas, citrus and vanilla flavour profile. It was a very delicious combination with the Scotch eggs and our guests totally enjoyed it. Nora also made a honey-mint-sauce with some of the whiskey (also adapted by the recipe of Fabio Haebel), which was a great addition to the gluten-free breaded eggs! We served the gluten-free breaded eggs with salad, beetroot and roasted corn cobs – it was just the perfect summer meal. We’ve been sitting at the bonfire, which we love to do in the garden and also have shown you in this post already. As this summer has been quite cold and rainy in Berlin so far, we try to make the best out of it – bonfire, breaded eggs and a glass of excellent whiskey have been a wonderful combination for sure! We hope you enjoy the recipe as much as we did – it’s perfect for a garden party or little summer gathering. Vegatarian Gluten-free Breaded Eggs

(Recipe inspired by german chef Fabio Haebel)

Ingredients for 4 Persons

Gluten-free Breaded Eggs

  • 7 eggs
  • 1 egg yolk
  • 3 floury potatoes (medium size; you´ll need 225g mashed potatoes in the end)
  • 125g mushrooms, mixed
  • 1 red onion
  • 1 garlic clove
  • a bit fresh parsley
  • 1 tsp cornstarch
  • about 100g rice flour (or similar)
  • 100g gluten-free breadcrumbs (made of corn)
  • about 300ml vegetable oil (for frying the mushrooms and frying the breaded eggs)
  • salt & pepper

Dewars Honey-Mint-Sauce

  • 10 cl Dewars
  • 3 tbsp honey
  • 3 tbsp creme fraiche
  • 2 tbsp mustard
  • 1 tsp Worcester Sauce
  • 2 tbsp finely minced mint
  • salt & pepper

Simple Plum-Arugula-Salad

  • 2-3 handful arugula
  • 4 small beetroots (or 1 large)
  • 8 radishes
  • 8 small green plums (or another variety)
  • 1 handful red currants
  • fresh herbs (e.g. chives, parsley…)
  • olive oil
  • salt & pepper

Roasted Corn Cobs

  • 4 corn cobs
  • butter
  • seasalt

Breaded Eggs

Cook the potatoes unpeeled until done, then mash them thoroughly with a fork. While the potatoes are cooking you can clean the mushrooms and cut them into very small dices. Then fry them together with a finely chopped red onion in a pan together with a bit vegetable oil and 1 pressed garlic clove. Afterwards mix the mushrooms with the mashed potatoes and freshly minced parsley. Knead in 1 egg and 1 egg yolk, add salt and pepper and taste. In the end knead in 1 tsp cornstarch. Now boil 4 eggs for 5 minutes, then refresh and peel them carefully. Continue by preparing 3 soup plates – 1 soup plate with rice flour, 1 soup plate with gluten-free breadcrumbs and 1 soup plate with 2 whisked eggs. Fill enough vegetable oil in a pan (the oil layer should be at least 1cm high) and heat slowly. Meanwhile divide the mushroom-potato-mix in 4 parts and coat each egg first carefully from all sides with mushroom-potato-mix, then dust with rice flour from all sides, followed by a layer of whisked egg and in the end dust with gluten-free breadcrumbs. Place into the pan for frying – toss the eggs carefully, so they turn evenly gold-brown from all sides.

Dewars Honey-Mint-Sauce

Mince mint and mix all ingredients together for the sauce. Season.

Simple Plum-Arugula-Salad

Peel the beetroot, then cut into very thin slices. Wash the radishes and cut into very thin slices as well. Rinse plums and cut into small wedges. Mix beetroot, radishes and arugula. Rinse the red currants, destem and add to the salad. Mince some fresh herbs and add as well. Season with olive oil, salt and pepper.

Roasted Corn Cobs

Bend the corn cob leaves carefully to the back, eventually remove some leaves. Then weave the leaves and knot the ends with a smaller leave. Now wash the corn and cook for 20 minutes in a large pot in salted water (the leaves should stay of course out of the water). Afterwards drain the corn cobs, and let them rest for 5 minutes, before you roast them in a large iron pan with a bit butter, coconut oil or similar. Serve with butter and salt.

PS:
In the original recipe is also another layer of mashed beetroot. We´ve tried that version as well with one breaded egg (you can see that one in the pictures as well), because we already had beetroot in the salad.

Heute haben wir ein wunderbares kleines Sommer-Dinner mit Freunden im Garten genossen. Wir haben zum ersten Mal glutenfreie panierte Eier (Scotch Eggs) ausprobiert und sie haben einfach köstlich geschmeckt! Inspiriert dazu wurden wir vom Dewar’s Scotch Egg Club, einer weltweiten Eventserie, die dieses Jahr auch zum ersten Mal in Deutschland, auf einigen Street Food Festivals, stattfindet. Der Scotch Egg Club ist von Tommy Dewar inspiriert, der bekannt ist als der Whiskey Baron und Sohn von Dewar’s Gründer John Dewar. Das erste Event in Deutschland fand in Hamburg statt, gefolgt von einer Kooperation mit dem Bite Club Berlin, wo auch der nächste Dewar’S Scotch Egg Club stattfindet, nämlich am 18 August um 17 Uhr. Köstliche Scotch Eggs mit qualitativ sehr hochwertigem Whiskey werden serviert und zwar aus einem charmanten Food Truck – klingt doch fantastisch, oder?! Zu jedem Scotch Egg Rezept wird ein anderer Whiskey serviert: der Dewar’s 12 smooth, Craigellachie und Aberfeldy. Der deutsche Koch Fabio Haebel hat für die Eventserie drei Scotch Egg Rezepte kreiert und wir haben uns natürlich von der vegetarischen Variante (mit Pilzen, Kartoffeln und roter Beete) inspirieren lassen, die wir in eine glutenfreie Variante verwandelt haben.

Für unser kleines Sommer Dinner haben wir den  Dewar’s 12 smooth  bekommen, der doppelt gereift ist für extra Smoothness und ein Geschmacksprofil von Honig, Sultaninen, Zitrus und Vanille hat. Es war wirklich eine köstliche Kombination mit den Scotch Eggs und unsere Gäste waren begeistert! Nora hat noch eine Honig-Minz-Soße mit einem Schuß des wunderbaren Whiskey´s zubereit (ebenfalls inspiriert von Fabio Haebel) – eine köstlich Ergänzung zu den Eiern. Außerdem haben wir die Eier mit Salat, rote Beete und gerösteten Maiskolben serviert – einfach das perfekte Sommeressen! Wir haben es uns am Lagerfeuer gemütlich gemacht, was wir im Garten besonders gerne machen und Euch auch schon in diesem Post vom letzten Herbst gezeigt haben. Da der Sommer in Berlin bisher ziemlich kalt und verregnet war, geben wir uns alle Mühe das Beste draus zu machen – Lagerfeuer, Scotch Eggs und ein gutes Glas Whiskey waren da definitiv nicht verkehrt! Gluten-freie & Vegetarische Breaded Eggs

(Inspiriert vom Originalrezept von Fabio Haebel)

Zutaten für 4 Personen

Breaded Eggs

  • 7 Eier
  • 1 Eigelb
  • 3 mehlig kochende Kartoffeln (mittelgroß; es sollte 225g gepellte, gekochte Kartoffeln ergeben)
  • 125g gemischte Pilze
  • 1 rote Zwiebel
  • 1 Knoblauchzehe
  • etwas frische Petersilie
  • 1 TL Speisestärke
  • etwa 100g Reismehl (o.ä.)
  • 100g Paniermehl auf Mailbasis
  • Rapsöl (zum Anschwitzen der Pilze und zum Frittieren der Scotch Eggs)
  • Salz & Pfeffer

Dewars Honig-Minz-Sauce

  • 10 cl Dewars
  • 3 EL Honig
  • 3 EL Creme Fraiche
  • 2 EL Senf
  • 1 TL Worcester Sauce
  • 2 EL fein gehackte Minze
  • Salz & Pfeffer

Einfacher Pflaumen-Rucola-Salat

  • 2-3 handvoll Rucola
  • 4 sehr kleine Knollen rote Beete (oder 1 große)
  • 8 Radieschen
  • 8 kleine grüne Pflaumen (oder eine andere Sorte)
  • 1 handvoll Johannisbeeren
  • frische Kräuter (z.B. Schnittlauch, Petersilie…)
  • Olivenöl
  • Salz & Pfeffer

Geröstete Maiskolben

  • 4 Maiskolben
  • Butter
  • Meersalz

Breaded Eggs

Kartoffeln im ganzen kochen, anschliessend schälen und mit einer Gabel fein zerdrücken. Während die Kartoffeln kochen die Pilze putzen und in sehr kleine Würfel schneiden. Nun die Pilze zusammen mit einer fein gehackten roten Zwiebel und einer gepressten oder fein geschnittenen Knoblauchzehe in etwas Öl braten. Danach die Pilze mit den zerdrückten Kartoffeln und frische gehackter Petersilie verkneten. 1 Ei und 1 Eigelb unter die Masse kneten, mit Salz & Pfeffer abschmecken. Zum Schluss 1 TL Speisestärke unterkneten. Nun 4 Eier 5 Minuten lang kochen, abschrecken und vorsichtig pellen. 3 tiefe Teller bereit stellen – 1 Teller mit Reismehl, 1 Teller mit Mais-Paniermehl und 1 Teller mit 2 verquirlten Eiern. Eine Pfanne mit reichlich Rapsöl/Frittieröl füllen (die Öl-Schicht sollte etwa 1cm hoch sein) und langsam erhitzen. Währenddessen die Pilz-Kartoffel-Mischung in 4 gleiche Teile teilen und ein Ei nach dem anderen zunächst vorsichtig mit der Pilz-Kartoffel-Mischung umhüllen, dann mit Mehl von allen Seiten bestreuen, danach mit verquirltem Ei benetzen und zum Schluss mit Mais-Paniermehl bestreuen. Am besten sofort in die Pfanne zum Ausbacken legen – immer wieder vorsichtig mit einem Pfannenwender drehen, sodaß das Breaded Egg von allen Seiten goldbraun wird.

Dewars Honig-Minz-Sauce

Minze fein hacken und dann alle Zutaten für die Sauce verrühren. Abschmecken.

Einfacher Pflaumen-Rucola-Salat

Rote Beete schälen, dann in hauchdünne Scheiben schneiden. Radieschen waschen, ebenfalls in hauchdünne Scheiben schneiden. Pflaumen waschen und in schmale Spalten schneiden. Rote Beete, Radieschen und Pflaumen mit dem Rucola vermengen. Johannisbeeren waschen, mit einer Gabel entrispen und zum Salat geben. Frische Kräuter fein hacken und hinzufügen. Salat mit Olivenöl, Salz und Pfeffer würzen.

Geröstete Maiskolben

Die Blätter der Maiskolben vorsichtig nach hinten biegen, evt. ein paar Blätter abmachen. Die Blätter miteinander verflechten und das Ende mit einem kleinen Blatt zweimal verknoten. Maiskolben waschen und in einem großen Topf mit reichlich Salzwasser etwa 20 Minuten kochen (das Grün bleibt natürlich ausserhalb des Wassers). Anschliessend Maiskolben in einem Sieb kurz ruhen lassen, evt. abtupfen und in einer großen Eisenpfanne in etwas Butter, Kokosöl o.ä. rösten. Mit Butter und Meersalz servieren.

PS:
Im Original-Rezept gibt es noch eine rote-Beete-Schicht zusätzlich, diese haben wir aber nur bei einem Breaded Egg (s. Fotos) ausprobiert, da wir die Beete für den Salat verwenden wollten.
