We both love poppy seeds in cakes and I have no idea why we only have a few recipes with poppy seeds on the blog.  These poppy seed pancakes or this poppy seed zucchini cake are two favorites for sure. But here you go for our new favorite: a gluten-free poppy seed cake or tart, how ever you want to call it! I think it tastes even better the next day, cause the filling has even a more rich aroma then. Nora made the filling with coconut milk and corn meal, which was such a good idea and it simply tastes heavenly! When we photographed the cake in our studio, the light was simply stunning and it almost felt like spring already. We realized, that we haven’t been photographing a blogpost in the studio since such a long time. We always have so many productions for freelance jobs in the studio, that we are always looking forward to go the countryside for a little change afterwards. And somehow that’s why a lot of our blogposts are from our little studio in the countryside. But we decided to share more from the studio with you guys from now on and an updated studio-tour will be online soon as well! Gluten-free Poppy-Seed Cake

Ingredients for a 26cm-ø springform pan

Gluten-free short pastry

  • 400g rice flour (we took white rice flour)
  • 225g cold butter
  • 40g cream cheese
  • 3 eggs (size S/M)
  • 4 tbsp sugar
  • 1 pinch salt

Gluten-free Poppy seed filling

  • 250g ground poppy seeds
  • 60g polenta flour/corn meal
  • 500ml coconut milk (or almond milk, whipping cream or similar)
  • 100g peach jam (or similar)
  • 75g sugar
  • 2 eggs (or 1 egg + 1 egg yolk)
  • 1 pinch ground vanilla

Additional

  • 1 egg for the crust
  • (100g powdered sugar – for all, who like it more sweet)

Mix the rice flour, sugar and salt in a large mixing bowl. Cut the cold butter into very small dices and knead them into the dry ingredients for 2 minutes, then add the eggs and cream cheese and knead for a few minutes longer (if it´s easier to knead, just divive the pastry into several portions and mix all together in the end again). Halve the gluten-free short pastry in about 2 portions and shape them to a flat brick, wrap them in clingfilm and leave the short pastry in the fridge for at least one hour. Meanwhile prepare the gluten-free poppy seed filling. Fill all ingredients in a medium sized pot (except the egg and egg yolk), bring to boil and let simmer on low heat for 5-10 minutes while stirring constantly. Then let the poppy seed filling cool down for 20 minutes in a mixing bowl , before you stir in the egg and egg yolk. Now the gluten-free poppy seed filling is prepared. Continue by preheating the oven to 180°C (360°F) top/bottom heat. Line the bottom of your springform pan with baking paper, grease and flour the sides. After that take about two third of the short pastry out of the fridge and knead for 1 minute, so it´s getting a bit more smooth. Place the gluten-free short pastry on a floured piece of baking paper (if you like, you can stick the corners of the baking paper with some sticky tape to your countertop), flour the pastry a bit and roll out thin. The gluten-free short pastry is much more instabil then regular short pastry, so sometimes it´s a bit easier to place a cutting board or silicon mat under the baking paper, put the springform pan upside down on the short pastry and lift the cutting board together with springform pan upside down – remove the baking paper and press down the short pastry to the bottom and side of the springform pan (the pastry should be about 4cm high on the sides). Fill the gasps with some pastry and prick the pastry bottom with a fork several times. Now spread the gluten-free poppy seed filling on the pastry bottom evenly. Then take the remaining short pastry out of the fridge and roll out on a baking paper again to a rectangle – for the pastry stripes. Cut the pastry into thin stripes with a knife or pastry wheel. Arrange the pastry stripes lattice-like on the poppy seed filling, then roll the remaining short pastry to thin long rolls, which you can press at the edge of the cake, so the ends of the pastry stripes are hidden. At least press with the back of a fork into the pastry crust, so you get a decorative pattern. In the end mix the additional egg with a dash of water and brush the pastry crust and stripes with it. Now bake the gluten-free poppy seed cake for 45-50 minutes until the crust is golden brown. If the gluten-free poppy seed cake could be a bit sweeter for you, just pour some icing on top (mix the powdered sugar with a bit milk or water).

Heute wollen wir ein wunderbares neues Rezept mit Euch teilen – einen glutenfreien Mohnkuchen! Wir beide lieben Mohn über alles und fragen uns, weshalb wir nur so wenige Rezept mit Mohn auf dem Blog haben. Diese Mohn-Pancakes oder dieser Mohn-Zucchini-Kuchen sind auf jeden Fall zwei absolute Lieblinge von uns. Aber hier kommt nun unser neuer Favorit: ein glutenfreier Mohnkuchen oder man könnte auch Mohn-Tarte sagen – nennt ihn wie Ihr wollt, der Kuchen ist auf jeden Fall nichts anderes als köstlich! Ich finde er schmeckt am nächsten Tag fast noch besser, wenn die Mohnfüllung richtig schön durchgezogen ist. Die Füllung hat Nora mit Kokosmilch und Maisgrieß gemacht, was einfach himmlisch schmeckt! Als wir den Kuchen im Studio fotografiert haben, war das Licht einfach wunderschön und es hat sich schon fast nach Frühling angefühlt. Uns ist aufgefallen, dass wir schon viel zu lange keinen Blogpost mehr im Studio fotografiert haben, was einfach daran liegt, dass wir so viele Produktionen im Studio haben, dass wir zur Abwechslung danach gern in unser kleines Studio auf dem Land fahren. Glutenfreier Mohnkuchen mit Gitter

Zutaten für eine 26cm-ø Springform

Glutenfreier Mürbeteig

  • 400g Reismehl (hell)
  • 225g kalte Butter
  • 40g Frischkäse
  • 3 Eier (Gr. S/M)
  • 4 EL Zucker
  • 1 Prise Salz

Glutenfreie Mohnfüllung

  • 250g gemahlener Mohn
  • 60g Maisgrieß/Polenta
  • 500ml Kokosmilch (oder Mandelmilch, Schlagsahne o.ä.)
  • 100g Pfirsichmarmelade (o.ä.)
  • 75g Zucker
  • 2 Eier (bzw. 1 Ei + 1 Eigelb)
  • 1 Prise gemahlene Vanille

Zusätzlich

  • 1 Ei für die Kruste
  • (100g Puderzucker – für alle, die es besonders süß mögen)

Das Reismehl, den Zucker und das Salz in eine große Rührschüssel geben. Die Butter in kleine Würfel schneiden und 2 Minuten mit den Händen unter die trockenen Zutaten kneten, dann die Eier und den Frischkäse hinzufügen und für ein paar Minuten gut unterkneten (falls es einfacher fällt, den Teig portionsweise kneten und zum Schluß noch einmal alles gut miteinander vermengen). Den Teig etwa halbieren und zu jeweils einem flachen Ziegel geformt und in Frischhaltefolie verpackt für 1 Stunde (oder länger) in den Kühlschrank legen. Währenddessen die Mohnfüllung vorbereiten. Dafür den gemahlenen Mohn, die Kokosmilch, den Maisgrieß, die Marmelade, den Zucker und die Vanille in einem Topf aufkochen und für 5-10 Minuten leicht köcheln lassen – dabei ständig rühren. Die Mohnmasse in eine Schüssel füllen und 20 Minuten abkühlen lassen, dann das Ei und das Eigelb unterrühren. Jetzt ist die glutenfreie Mohnfüllung fertig. Anschliessend den Ofen auf 180°C Ober-/Unterhitze vorheizen. Dann den Boden einer Springform mit Backpapier auslegen und die Seiten buttern und mehlen. Danach etwa 2-3 Drittel des glutenfreien Mürbeteigs aus dem Kühlschrank nehmen und für 1-3 Minuten etwas geschmeidiger kneten. Den Teig auf ein bemehltes Stück Backpapier legen (wer mag, kann es an den Ecken mit etwas Tesa auf der Arbeitsplatte befestigen), die Oberseite einmehlen und den Teig dünn ausrollen. Da der glutenfreie Mürbeteig immer etwas instabil ist, einfach ein großes Schneidebrett o.ä. unter das den Teig bzw. das Backpapier legen und die Springform jetzt kopfüber auf den Teig legen. Mit Hilfe des Schneidebretts den Teig mit der Springform zusammen kopfüber drehen und dann das Backpapier abziehen. Den Teig in die Springform drücken – der Teig sollte an den Seiten etwa 4cm hoch gehen – die Lücken mit etwas zusätzlichem Teig füllen. Den Teigboden mit einer Gabel mehrmals einstechen, dann die glutenfreie Mohnfüllung gleichmäßig auf dem Boden verteilen. Jetzt den übrigen Teig aus dem Kühlschrank holen und ebenfalls auf einem Stück Backpapier zu einem Rechteck ausrollen, sodaß man lange Streifen mit einem Teigrädchen oder Messer zuschneiden kann. Die Teigstreifen zu einem Gitter über der Mohnfüllung anordnen, dann aus dem restlichen Teig dünne, längliche Stücke rollen und diese am Rand andrücken, sodaß die Streifenenden des Gitters unter dem Rand verschwinden. Zum Schluß den Rand mit der Unterseite einer Gabel durch schräges Eindrücken verzieren. Jetzt noch das zusätzliche Ei mit einem Schuß Wasser verquirlen und die Kruste bzw. das Gitter mit Eigelb bestreichen. Den glutenfreien Mohnkuchen für 45-50 Minuten backen bis die Kruste goldbraun ist. Wem der Mohnkuchen nicht süß genug ist, kann noch einen Zuckerguß (die 100g Puderzucker mit etwas Milch oder Wasser verrühren) über dem Teiggitter verteilen.
