We love to celebrate the arrival of spring with a little gathering in the garden each year. No matter if it’s a breakfast, lunch or cake and tea – it’s always a magical moment to have the first meal outside again after a long winter.  Have a look at our spring posts from the last years here and here – it’s always the same spot and so interesting how different it looks from year to year. This time we decided to bake a gluten-free Matcha Bundt Cake, since we both really been craving matcha lately. I absolutely love how the inside of the cake turned out and we already baked it a second time, as it was so delicious. The matcha flavor is not too strong, just the right amount! In addition Nora also made Mini-Matcha-Lemon Curd-Macarons which looked super cute on top of the cake and were of course very tasty as well. We hope you guys will enjoy our gluten-free Matcha Bundt Cake too – maybe the perfect easter treat?

Gluten-free Matcha-Bundt Cake with Matcha-Lemon Curd- Macarons

Ingredients for 40 Mini-Matcha-Lemon Curd-Macarons

  • 103g egg white (3 eggs size Medium – separate the eggs and let the egg whites rest for 1 hour at room temperature)
  • 100g blanched ground almonds
  • 200g icing sugar
  • 60g superfine sugar
  • 2 TL matcha powder
  • 1 pinch ground vanilla
  • 500g Lemon Curd

Ingredients for a small Matcha-Bundt Cake
(our bund cake pan had a total volume of 1200ml/6 cups)

  • 200g soft butter
  • 300g rice flour
  • 200g sugar
  • 3 eggs (size M or L)
  • 125ml plant or cow milk (we took coconut milk)
  • 2 tsp organic baking powder
  • 1 pinch ground vanilla
  • 3 tsp matcha powder
  • 100g white couverture chocolate

Tip: if you like to add lemon flavor to your bundt cake, you can stir 1 tbsp lemon juice and lemon zest of half a lemon to your vanilla batter.

Mini-Matcha-Lemon Curd-Macarons

If you don´t have macarons baking sheets you can easily make your own by taking 2 baking sheets, grease them with butter, so the baking paper sticks well to the baking sheet. Then take a coin and draw circles – with a bit distance to each other – with a pencil on the baking paper. Now mix the ground almonds and icing sugar, ground even finer in a blender and sift through a sieve, so the grainy pieces keep out. Then beat the egg white 4-5 minutes, start adding gradually the superfine sugar after 1 minute. Afterwards fold in the almond-icing sugar mix with a silicone spatula and fill half of the batter into another mixing bowl. Stir the ground vanilla into one batter and the matcha powder into the other half – take care that you don´t „over stir“ the batter, it should be a thick, but not too runny paste. Fill both batters into icing bags, trimm the edges (the diameter should be 7-9mm) and apply little circles on the prepared baking papers – the batter should be applied within the circles, because the batter will expand a little more. Now let the batter rest for 30 minutes – meanwhile preheat the oven to 140°C/280°F top and bottom heat. Then bake the macarons shells for 12 minutes, let them cool down completely afterwards, before removing from the baking paper and fill carefully with lemon curd (which you fill into an icing bag before).

Gluten-free Matcha-Bundt Cake

Preheat the oven to 180°C/360°F top-and bottom heat. Grease and flour your bundt pan thoroughly. Beat the soft butter together with the sugar, salt and ground vanilla for 5 minutes, then beat in egg after egg thoroughly, in the end beat in the plant milk. Blend the rice flour with the baking powder and stir the mix into the liquid ingredients. Now fill a bit more than half of the batter into another mixing bowl and stir in the matcha powder. Fill a few tablespoons of the matcha batter into the bundt pan, continue with a few tablespoons of the vanilla batter, followed by another thin layer of matcha batter, the rest of the vanilla batter and the last matcha batter. Use a butter knife or similar to create swirls into the batter – shape eights and go up and down a few times with the butter knife. Bake the matcha cake for 35-40 minutes (use a toothpick to test the doneness). Afterwards let the cake cool down for 10 minutes before you remove it carefully from the bundt pan. Now chop the white couverture chocolate finely, melt it in a warm water bath (the water shouldn´t be too hot), then spread it on the gluten-free Matcha- Bundt Cake and press the Mini-Matcha-Lemon Curd-Macarons into the couverture (if they do not stick well to the couverture, use some toothpicks). In the end place the Matcha-Bundt Cake in the freezer for 5 minutes until the couverture has hardened and the Matcha-Lemon Curd-Macarons stick completely to the couverture.

German Translation

Vor einer Woche hat sich der Frühling von seiner schönsten Seite mit diesen prächtigen, blühenden Pflaumenbäumen gezeigt.  Wir lieben es jedes Jahr, den Beginn des Frühlings mit einem kleinen Picknick im Garten zu zelebrieren – egal ob mit einem Frühstück, Lunch oder Kaffee und Kuchen – es ist immer ein magischer Moment nach einem langen Winter, endlich wieder die erste Mahlzeit draußen genießen zu können.  Hier und hier könnt Ihr übrigens unsere Frühlingsposts aus den letzten Jahren sehen. Es ist immer der gleiche Ort im Garten und so interessant zu sehen, wie anders und ganz zauberhaft auf seine eigene Art uns Weise, die Blütenpracht jedes Jahr wirkt.  Dieses Jahr haben wir uns entschieden einen glutenfreien Matcha-Gugelhupf zu backen, da wir beide schon seit Wochen Appetit auf Matcha haben. Und das war definitiv eine gute Idee, denn der Kuchen ist wirklich köstlich geworden. Das Matcha-Aroma ist genau richtig, nicht zu viel und nicht zu wenig. Besonders gut hat mir das Innere des Kuchens gefallen, so eine schöne Überraschung für Gäste! On top gab es noch selbstgemachte Matcha-Lemon Curd-Macarons, einfach köstlich!  Wir hoffen Ihr Lieben lasst Euch den Kuchen auch gut schmecken – vielleicht sogar auf der Ostertafel? Guten Appetit!

Glutenfreie Matcha-Macarons-Gugelhupf

Zutaten für 40 Mini-Matcha-Lemon Curd-Macarons

  • 103g Eiweiß (3 Eier Gr. M – Eier trennen und Eiweiß etwa 1 Stunde bei Raumtemperatur stehen lassen)
  • 100g blanchierte gemahlene Mandeln
  • 200g Puderzucker
  • 60g feiner Zucker
  • 2 TL Matcha-Pulver
  • 1 Prise gemahlene Vanille
  • 500g Lemon Curd

Zutaten für den kleineren Matcha-Gugelhupf (unsere Form hat insgesamt 1200ml Volumen)

  • 200g weiche Butter
  • 300g Reismehl
  • 200g feiner Zucker
  • 3 Eier (Gr. M oder L)
  • 125ml Pflanzen-oder Kuhmilch (wir haben Kokosmilch verwendet)
  • 2 TL Weinsteinbackpulver
  • 1 Prise Salz
  • 1 Prise gemahlene Vanille
  • 3 TL Matcha-Pulver
  • 100g weiße Kuvertüre

Tipp: wer den Kuchen zitronig mag, kann 1 EL Zitronensaft und den Abrieb 1/2 Bio-Zitrone zum Schluß in den hellen Teig einrühren.

Mini-Matcha-Lemon Curd-Macarons

Für eine einheitliche Größe der Macarons entweder mit zwei Silikon-Macarons-Backmatten oder 2 Stück Backpapier mit vorgezeichneten Bleistift-Kreisen arbeiten (2 Backbleche großflächig mit einem Stück Butter einreiben und das Backpapier darauflegen, damit es besser haftet; dann mithilfe einer 2Euro-Münze Kreise mit einem Bleistift vorzeichnen – immer etwas Abstand lassen, 2 Backbleche vorbereiten). Jetzt die gemahlenen Mandeln mit dem Puderzucker mischen und im Standmixer o.ä. noch feiner mahlen und anschließend durch ein feines Sieb sieben (die kernigen Reste weglassen). Danach das Eiweiss 4-5 Minuten steif schlagen, dabei nach etwa 1 Minute den feinen Zucker wärend des Schlagens einrieseln lassen. Dann die Mandel-Puderzucker-Mischung mit einem Teigspatel unterheben und die Hälfte des Teigs in eine zweite Rührschüssel füllen. Die gemahlene Vanille langsam unter die eine Teigmasse einrühren und das Matcha-Pulver unter die andere. Dabei die Masse nur solange mit dem Teigspatel rühren bis der Teig breiig und dickflüssig vom Spatel läuft. Den Matcha-Teig in eine Spritztüte füllen und den Vanilleteig in eine zweite Spritztüte. Die Spitzen abschneiden (der Durchmesser sollte 7-9mm sein¸) und den Teig auf die vorbereiteten Backpapiere spritzen, dabei sollte der Teig innerhalb der 2Euro-Kreise bleiben, da er anschließend noch etwas breiter verläuft. Die Backbleche für 30 Minuten ruhen lassen, bis sich eine Haut auf den Macarons gebildet hat – währenddessen den Backofen auf 140°C Ober-und Unterhitze vorheizen. Dann ein Blech nach dem anderen für 12 Minuten backen. Die Macarons-Schalen komplett abkühlen lassen bevor man sie vom Backpapier löst und sie vorsichtig mit Lemon Curd (mithilfe einer Spritztülle) befüllt. Die Macarons luftdicht verpackt in den Kühlschrank stellen.

Glutenfreier Matcha-Gugelhupf

Den Ofen auf 180°C Ober-und Unterhitze vorheizen. Die Gugelhupfform gründlich fetten und mehlen. Die weiche Butter zusammen mit dem Zucker, dem Salz und der Vanille 5 Minuten aufschlagen, dann ein Ei nach dem anderen gründlich unterschlagen, zum Schluß die Pflanzenmilch unterschlagen. Das Reismehl mit dem Backpulver mischen und unter die flüssigen Zutaten rühren. Jetzt etwas mehr als die Hälfte des Teigs in eine andere Rührschüssel füllen und das Matcha-Pulver unterrühren. Nun ein paar Esslöffel Matcha-Teig in die Backform füllen, gefolgt von einer dünnen Schicht Vanille-Teig, dann wieder etwas Matcha-Teig, dem Rest Vanille-Teig und dem übrigen Matcha-Teig. Mit einem langen Buttermesser o.ä. Swirls in den Teig ziehen – ungefähr in der Form von Achten, dabei mit dem Messer immer wieder hoch und runter gehen. Den Matcha-Gugelhupf für 35-40 Minuten backen (mit einem Holzspieß den Garpunkt testen). Anschließend den Kuchen für 10 Minuten abkühlen lassen, bevor man ihn vorsichtig aus der Form kippt. Zum Schluß die weiße Kuvertüre fein hacken und in einem warmen Wasserbad schmelzen (das Wasser darf nicht zu heiß sein), dann die Kuvertüre auf dem Gugelhupf verteilen und die Matcha-Lemon Curd-Macarons vorsichtig in die Kuvertüre drücken (falls die Macarons nicht gut halten, kann man Zahnstocher zur Hilfe nehmen. Dann den glutenfreien Matcha-Gugelhupf für 5 Minuten ins Gefrierfach stellen, da die Kuvertüre dort schnell härtet und die Macarons so besser halten.
